I woke up this morning, looked outside, and lo and behold, there's snow on the ground! I guess our rainstorm took a turn for the worst late last night. With that in mind, dinner will be something warm and comforting. I'm looking over a recipe right now for a creamy ham and egg casserole. Sounds like something my kids would eat!

Alan is working from home today, so it's nice to see his face as I work around the house. Hopefully he won't get in the way too much. Too bad we have to babysit a niece, or else I can think of a better way to spend our morning. Oh well.

Thanks for all your comments about yesterday. It's amazing how much better I feel after talking to all of you! I really appreciate it!

For those with younger children, I wanted to tell you about a cool thing my neighborhood is doing this year for Halloween. It is called The Phantom. One house starts it and leaves a bag of Halloween surprises on two doorsteps starting a couple weeks before Halloween or earlier, depending on the size of the neighborhood. The bags can be filled with anything -- the one we were left tonight had candy, a light-up plastic jack-o-lantern and some Halloween bubbles -- and it includes a sign that has a picture of a ghost on it and says The Phantom, and a page of instructions on how to keep the fun going. You hang the Phantom sign on your door to let everyone know you've already been visited, and then you prepare two bags of goodies and ring on two other houses with children. Eventually, all the children in the neighborhood get their surprise bag, if everyone participates. Liam and especially Caili were so impressed and delighted. Whoever delivered the bag was pretty fast too because we didn't see anyone and we answered the door shortly after the doorbell rang.

For dinner, I had the fish chowder I didn't eat last night (the kids wanted pasta) and the kids had what we like to call a Silly Supper -- assorted cheeses, sliced apple, carrot and raisin salad, and a buttered roll.

Our neighborhood has done something similar to this. We call it being "spooked." It's really fun! Gives the kids something to look forward to.
 
Kathy- I cannot imagine how your poor son feels :hug:. When I was a youngster my neighbor lost a baby girl to SIDS. I was so young but I can still remember how sad she was.

Glynis- so you are going to think twice before you agree to babysit????? :lmao:\

We had a boiled ham, potatoes, carrots turnip and green beans. Also a crusty bread.

I have boneless country ribs marinating for tomorrow but I don't think anyone will be around for dinner. I'll cross that bridge when I can crawl over the laundry to get there.
 
Lauren, the chicken was a hit tonight. It was fast, easy, and low in fat. Kenny even liked it and I've told you how he feels about chicken. He is taking the leftovers for his lunch tomorrow. :faint: Anyway, here it is:

Chicken Dianne (Almost)

3 - 4 boneless skinless chicken breasts
3 tablespoons butter, divided
1 small onion, chopped
1 cup sliced fresh mushrooms (optional)
½ cup chopped fresh parsley
½ cup sherry
½ cup A-1 steak sauce
3 tablespoons Worcestershire sauce
3 tablespoons Dijon mustard

Preheat large skillet to medium-high. Melt 2 tablespoons butter and swirl to coat. Add chicken breasts and brown each side but don’t fully cook. Remove chicken to platter.

Add remaining butter if necessary and saute onions, mushrooms and parsley until tender. Mix sherry, steak sauce, Worcestershire sauce, and mustard and add to skillet, stirring to blend together.

Add chicken back to skillet, spooning sauce on top. Reduce heat to low. Simmer, covered, until chicken is cooked through.

What a cute idea! I would love to do something like this, but there aren't very many families with children in our neighborhood. This year, we are taking our kids to a church festival. They have a jump castle, hayride, and have trick or treat booths. This is wonderful for my DD especially as she doesn't have the stamina to walk from house to house so this will be the first Halloween since I was able to pull her in a wagon where she will be able to participate.
 
Augh. What a day. I finally left the office at 7pm with piles to bring home with me. My granddad has a mini-stroke this morning and my uncle had surgery this afternoon so I took a break in the afternoon and rushed to the hospital and the surgery center to check on them both.

I drove through Mickey D's on my way home. Shameful, I know, but I was hungry tired and Ugly Betty had already come on.

When DH gets home at 930, I am going to head out to Walmart and buy all the stuff for my retreat this weekend. I was going to do that this afternoon but you know...

Thankfully, tomorrow I will be working from home until I need to leave for the campsite to meet the kids! =)

Vanilla Rich Chip Cake

[FONT=&quot]1 pkg. (18 ¼ oz) yellow cake mix[/FONT]
[FONT=&quot]1 pkg. (3 ½ oz.) instant vanilla pudding mix[/FONT]
[FONT=&quot]1 cup sour cream[/FONT]
[FONT=&quot]½ cup vegetable oil[/FONT]
[FONT=&quot]½ cup water[/FONT]
[FONT=&quot]4 eggs[/FONT]
[FONT=&quot]1 tbs. vanilla extract[/FONT]
[FONT=&quot]1 cup mini-chocolate chips[/FONT]

Good Morning. Quickly checking in. We wound up having pizza last night and tonight we are going to my brothers house for my neice's bday, which mean bro will probably be cooking. SIL does not really cook...:confused3 OK, now I could go on rambling now but I won't...this is the SIL that missed my entire wedding ceremony because of an accident on the interstate...that happened at 2:35...my wedding started at 2:30...go figure. :mad:
 
DS does not have pneumonia but his asthma has been aggravated to the nth degree. I was afraid they were going to admit him yesterday but they gave us a new inhaler and some instructions.... his cough is still nasty nasty nasty. I have missed 4 days of work (without pay) this week. Luckily my dh has picked up a little overtime this week.

Tonight is leftover night- there's chicken, cheeseburger macaroni, and french dip roast (which I think I did wrong because it wasn't very good). Everyone can take their pick or have cereal. My new rule for the kids.... eat what I make or cereal it is. I'm tired of have 2 complete meals going. :mad:

Well, no cooking for me this weekend. DH and I are headed to a marriage retreat at a fancy hotel in Hot Springs this weekend. Me thinks that we'll be getting the "conference food" but maybe we'll be pleasantly surprised. Then 3 days next week and then we head to WDW! For those who have been to F&W this year, any recs on what can't be missed????

I'm so happy - Our local mall is re-opening today!!!! During the aftermath of Katrina the looters went in and burned some stores down which caused major damage to the entire mall. It's re-opening just in time for me to do some pre-trip shopping.;)
 
The company beef casserole I made last night was really good! Thanks Tigercat. Tonight I am going to make chicken enchiladas. This one always goes over well with everyone!

Chicken Enchiladas

1 can cream of ck soup
2 cups sour cream
2 Tbs Butter
1/2 cup onions
2 cups shreadded chicken
1 Tsp chili Powder
1 can 4 oz chopped green chili's
Tortilla shells
2 cups Jack cheese

I usually just toss frozen chicken breasts in my slow cooker for a few hours for the shredded chicken.
-mix together the soup and sour cream and set aside.(I usually double the recipe amount because I like lots of sauce.)
-In a sauce pan Saute the onions in the butter and chili powder.
-add the chicken, chili's and I think about 1/4 cup or so of the soup mixture to the onions.
-spread some of the soup mixture in the bottom of a baking pan.
-roll chicken mixture into tortillas, put in baking pan
-spread the remaining soup mixture over the top
-sprinkle the jack chees over the top of that. (again, I usually use more cheese then the recipe calls for)
-Bake in a 350 degree oven about 25 minutes or until heated through and cheese is bubbly.
ENJOY!

Gina, I think they are great, especially when time is short and I have to get dinner on the table for the kiddos PRONTO. I even served the roasted chicken with veggies (Rice & Sides) to my MiL and StepFiL when they happened to arrive at dinnertime. I always have plenty because as most southern girls know, I was taught to cook for "the man on the road", but obviously I would have planned something a little nicer if I had known they were coming.

Anyway, a couple days later my MiL called and specifically asked for the rice recipe. :scared1: Apparently, FiL kept telling her how good it was and wanted her to make him some. :rotfl2: When I fessed up, it was dead silence on her end for about 2-3 seconds and then she laughed so hard she started coughing. I told her not to tell FiL and he would think she had slaved over it. :rotfl:

Tonight's dinner is up in the air. The visitation for my boss's mother is tonight at the funeral home (1 1/2 hours from my house). So I'm not sure what time I will get to the house. The kids are going off with one of the therapists, so Kenny is home alone. I thought he would pick up something for himself, but he said he would rather wait on me to get home.

I do have a recipe I've been wanting to try that is supposed to be quick. It's honey - ginger pork chops so I may try those with some steamed veggies (love those in the bag).

I had Taco Bueno yesterday when I was hauling stuff out there but it was so tasty, I might just drive through there again. I love me some Taco Bueno.
