Just wanted to say hi and introduce myself...Regina here, SAHM of a 13 yr old DD and a 10 yr old DS. I was thrilled to stumble upon this tread, and have been kind of lurking around for a couple of weeks. I am domestically challenged to say the least and usually don't enjoy the day-in, day-out routine of trying to come up with dinner ideas for a family...but I do want them to eat decent.

I am hoping following this thread will help me get "inspired":rotfl:

I posted on Sat, Sun and Monday we ate out, last night was kind of a whatever you can find night. Tonight I have got to get with the program and come up with something easy but tasty...don't know what yet.

Welcome, Gina!!! I'm moreless new to the thread, too, but it's been a great group of ladies to chat with!!! I'm glad you're here =)

Tonights dinner will me chicken fried rice. That shrimp fried rice was such a hit, and SO easy, that I decided to throw another batch together tonight.

Should I cook the chicken by itself in the wok beforehand? Should I season it?
 
Chorizo Hash Browns

2 Tbsp. EVOO
1/2 lb chorizo, chopped
1 small onion
2-3 sprigs fresh thyme
4-5 c. frozen shredded hash browns(1/2 of a 26 oz. bag)

Heat EVOO in a skillet over medium heat and add chorizo. While chorizo is rendering and browning, peel onion and slice thinly. Add potatoes and onions to chorizo, season with salt, pepper and thyme. Once the potatoes are lightly browned, 7-8 minutes, flip them and press them down with a spatula to crisp them, cook 7-8 minutes more.

Welcome to our group, Regina! This thread is addicting, so beware!! I have found so many wonderful recipes here! My husband is thrilled with everything I have tried.
 
Got an update from Kris today on Wendie, here are his comments:

We got a lot of answers today, the dr. is very confident that once she has healed her wrist problems will be over with. He said that he could not repair the tear in her tfcc due to its location, it was to close to the radius, and there is not a decent blood supply to heal it, if the tear had been near the ulna side he could have fixed it. He did clean it up, as it was frayed etc. He doesn't feel that this tear was the real issue anyway. He said that her whole wrist was full of scar tissue to the point that he couldn't even see around in it with the camera. By clearing that all out he took pressure off of the nerves that caused her to lose feeling in her fingers, and this will stop her wrist from locking up.
He said she has a ways to go with healing. Her whole hand is swollen about 3x normal and is black. Dr.Thaller said this was normal due to the amount of time the surgery took and how much he had to do in it etc. She will see him again on Nov. 13th...totally time to be healed is 6 months.
She had to go and get fitted for a new brace today, and she also is starting next week with P/T with just range of motion, and to get the swelling down to start with.
He put her on some new pain meds, and some different ones for the swelling as well. It will be nice to see her be able to rest some, she has not been sleeping more then an hour here, and there.

She sends her love to all, and misses everyone, and hopes to be up to typing in the next week or so.
 
Hi, everyone! Sorry I haven't posted sooner. I've been in a blue funk today. The funeral last night really got to me! I just can't get the image of that tiny pink casket out of my mind. Anyway, we got to visit with some of Alan's cousins and that was nice.

Dinner tonight will be some kind of spicy chicken. It sounds good to me, and that's what counts right now! My kids can eat it or just chow down on peanut butter sandwiches. Hopefully I'll feel more "the thing" tomorrow!

Kathy If you happen to talk to Kris again send many hugs to Wendie. I hope once the swelling goes down she will start to feel better.

Ok I'm back to the old grind. I'm behind in my part time stuff do to vacation.

We will be having sloppy joes and tatter tots and salad. Not really healthy stuff but good.

Glynis, I feel your pain. About 18 months ago Johnny's son (my stepson) lost his infant boy to SIDS. I'll never forget seeing that two month old baby boy in that tiny casket. I'll keep you in my prayers, my friend.:hug:

Oh, Kathy! That is such a horrible thing! Another cousin of Alan's had the same thing happen about 9 years ago. She had the baby in a Snugli while she was shopping in the mall for an outfit for his blessing in the church. She'd been shopping for about 30 minutes and realized that Alexander hadn't moved in a while. She sat down in a fitting room and took him out of the Snugli and realized he was dead. SIDS is a terrible thing! I am so sorry for your your stepson! No one should have to deal with the loss of a child. It goes against the natural order of things.

This was horrible - John(Johnny's son) had made a habit of taking the baby out of the crib and laying him down in the bed with him when he got in from work(he worked nights). His girlfriend was at work and John fell asleep and when he woke up the baby was blue. Of course to this day he thinks he suffocated the baby but the autopsy proved it was not, it was SIDS. They have since had another beautiful baby boy.

Kathy, thank you for the updated on Wendie. I had no idea it would be as painful for her as it has been...luckily they were able to clean out the scar tissue and this will eliminate some of the pain she was having.

We're going to be going to church and sitting quietly in the pews. Hands crossed in our laps. Drinking only communion wine and eating only wafers. Contemplating and praying for the heathens at Epcot swilling wine and booze and gorging themselves to excess.:angel:

Got an update from Kris today on Wendie

Thanks for keeping us posted. I hate that her condition was worse than they thought and her recovery is more painful and lenghthy than predicted. Please tell her I am thinking of her and praying for her.
 
Burying babies and children are some of the hardest parts of my job. It tears me apart. I'm so sorry for your cousin.
 
Tonight I am making black bean chili and cornbread. More comfort food!

ETA: Dinner with my dad last night went great, as I knew it would. Hee hee, he ended up taking half of the lopsided cake home with him he liked it so much!! I was thrilled he liked it so much.

If anyone wants that recipe (vanilla chip cake) I will post it.
