We are having baked ziti, salads, and garlic bread. Only one more week of school...YEAH!! I'll have to work next T-W-Th, but at least the kiddies will be gone.
 
I decided on Glynis's pot roast. It wasn't until I looked at her recipe, I've been making that same pot roast for a while now.

Hope this coming week is better for everyone. :thumbsup2 Sounds like just about everyone has had a trying week.
 
Hi guys! I just returned from a week of eating in New Orleans. Looks like I have a lot of catching up to do on this thread!
 
After taking the girls to the zoo and shopping today I am too tired to do dinner so I am tossing shrimp poppers and clam strips in the oven LOL. They'll be lucky to get cocktail sauce...
 

What an exciting job your DH has! I remember watching the Jazz play down here when I was younger with my Dad!:cloud9:

We are really proud of our Jazz!!! Not only are they a good team, but they are really wonderful community members! They volunteer in schools, they lead exercise programs, etc. Derek Fisher came to my kids school a few weeks ago, to do a reading program. He spent the entire school day going from class to class, reading out loud, and talking about how important reading is! Pretty cool!!!

By the way, I'd enjoy DH's job a little more, if I got to go with him on some of these trips! Maybe some day!

Dare I confess that I've never had lobster? It always looks good, but I'm afraid to order it in case I won't like it. Guess I just need to get over myself, huh?
 
I'm frustrated with myself - I accidently thawed chicken instead of pork but I'm determined to make this recipe work anyways!

We're having Hoisin-Honey Glazed Pork Tenderloin (now b/s chicken) with grilled pineapple It's from the latest Good Housekeeping. I love using the grill - saves on clean up!

Hoisin-Honey Glazed Pork Tenderloin with grilled pineapple

¼ C hoisin sauce
1 tablespoon honey
1 tablespoon grated ginger
1 teaspoon Asian sesame oil
1 whole pork tenderloin (1 & ¼ lb)
½ medium pineapple
2 tablespoon brown sugar

1. Prepare outdoor grill for covered direct grilling over medium heat. In small bowl, combine hoisin, honey, ginger and oil.
2. Place pork on hot grill rack. Cover and cook pork 18-20 minutes, turning occasionally.
3. With serrated knife, cut pineapple half into 4 wedges. Rub cut sides with brown sugar.
4. Grill pineapple 10 minutes or until browned on both sides, turning once. While it’s grilling, brush pork with the hoisin-honey glaze and turn frequently until the temperature reaches 155 degrees. Transfer pork to cutting board, let stand 10 minutes. Transfer pineapple to platter.
5. Thinly slice pork and serve with pineapple

I bet that will be really good with chicken. Let us know!

Yes, and they apologized profusely and will be sending the burgers, knives and cutting board this week. They were very nice.

We just had the filet mignon, au gratin potatoes and a side of broccoli. It was very good and we enjoyed the potatoes...not sure why people don't like them...talk about easy. :) :thumbsup2 I just lightly seasoned the filets and grilled them...very good.

Well, it's official. I HATE baking. I mean hate.

ETA: *sigh* It is a very sad time in our house right now. Our sweet PJ, our hamster, died yesterday. We got adopted him in 2004, so he was a bit elderly. We are really going to miss him. :sad1::sad1::sad1:

Anyway, like I said above dinner was great. I am loving this Omaha steak special I posted...Tomorrow we are going to try the burgers and dogs. Everyone seems to say good things about those...the dogs are really big. Hope their yummy!

The more WFD friends the merrier a time we will have!!! One native lobster feed, a trip to Ben and Bill's chocolate emporium, a few (or 5) bottles of rosa regale, and a perfect couple of rocks off the shore path to watch the waves crash in.......Utopia

Glynis- You better get yourself some Maine lobstah, it is mmmmmmmm mmmmmmmm! (just make sure it is true maine lobstah, and not that rock lobster)

ETA: DS said the eggplant sticks rock - I need to make a double batch next time!
 
Dinner tonight was really good. Turkey teriyaki burgers with grilled pineapple, beef burgers and a pasta salad, yummy!
