Glynis, I hope your kids get over the flu quickly!

Kathy, :confused: I have another question about the Outback Sauce! I know this shouldn't be that difficult, I guess I'm having an off day! I found the au jus mix but couldn't find any lamb seasoning. Will salt, pepper, rosemary & mint work just as well? I could add some poultry seasoning, if you think it needs it.

I usually use greek seasoning which to me is garlic powder, oregano, salt & pepper, rosemary & Mint.

Tonight was another skating night, so I just made pasta with a quick, fresh tomato sauce, a salad and bread.

Leslie is feeling much better, now! She's eating dry Cheerios and asking for more food. So far, none of the other 3 kids have shown any signs, so I'm keeping my fingers crossed!

WEll, dinner tonight was yummo! I'll post the recipe--it's from Cooking Light this month--and is a great vegetarian entree

Black Bean, Corn, and Zucchini Enchiladas
1 tsp canola oil
2 cups diced zucchini
1 (10ounce) package frozen whole kernel corn
1 (15ounce) can black beans, rinsed and drained
3 cups Enchilada Sauce (recipe to follow)
Cooking Spray
8 (8-inch) whole wheat tortillas
2 cups shredded reduced fat cheddar cheese divided (I used regular fat cheese)

Preheat oven to 350

Heat oil in a large non-stick skilletover med-high heat. Add 2 cups zucchini and corn; saute for 5min or until veggies are tender. Remove from heat and stir in beans

Spread 1 cup enchilada sauce in the bottom of a 13X9 baking dish coated with cooking spray. Spoon about 1/2 cup veggie mix down the center of tortilla; sprinkle with 2 tbsp of cheese, and roll up. Place seam side down in baking dish--repeat with other tortillas. Spread remaining 2 cups enchilada sauce over enchiladas

Cover with foil; bake at 350 forn 30 minutes. Uncover, top with remaining cheese. Bake, uncovered, for 10 minutes or until cheese is melted

Enchilada Sauce
May be prepared in advance--store in refrigerator

1 tsp canola oil
1/2 cup diced red onion
1 tsp minced garlic
1/2 cup veggie broth
1 tbsp chili powder
1 tbsp honey
1 tsp ground cumin
1/2 tsp salt
1 (28ounce) can crushed tomatoes, undrained

Heat oil in large saucepan over med heat. Add onion and garlic; saute 5 min or until onion is tender. Stir in broth and remaining ingredients. Reduce heat, and simmer for 30 minutes.
 

Glynis-hope they are feeling better and if it goes through your family you are all done with it by the time you leave for WDW!!! You will appreciate it all the more, I bet!!! This seems like a crazy time to get the flu, huh?? Or is this normal for you all up there??

Tonight we are having grilled pork chops and probably a salad...maybe the boys favorite...broccoli with cheese sauce.

Tonight we will be eating broiled chicken breasts with catalina dressing on them, glazed carrots and stuffing. Right now it is 37 degrees out so I think some comfort food will be good tonight.

Last nights kielbasa soup was a hit even with dh who only likes cabbage in coleslaw.
It is super super easy!!


Kielbasa soup

1 package of kielbasa (cut into bite size pieces)
1 package of coleslaw mix
1 granny smith apple(cut into chunks)
2 carrots(cut up)
1 onion (chopped)
1 container of chicken broth/stock

salt/pepper and a bit of chicken bouillion(I know I spelled it wrong, and I am to tired to care lol)
half stick of butter

melt butter in cooking pot and add the coleslaw mix, apples, carrots, onions, and kielbasa along with salt/pepper and bouillion and let it cook until the carrots are tender, stirring often. once carrots are tender, add the chicken stock and let simmer for 30 min or until you are ready to eat.

we had it with some nice corn muffins



I also made banana bread, and the recipe that glynis posted for peanut butter/bananna scones for dessert.

Thanks, Lori! Well, I guess this is normal for us lately! It seems like the last 3 years my kids have had some kind of illness right before school lets out for the summer. My poor oldest daughter was so desperate to go to school on the last day, that she didn't tell me she didn't feel good. Her teacher called me 1/2 hour into school to tell me that Katie had thrown up! Poor thing! Seems like there's a bug travelling through our neighborhood, so I'm just battening down the hatches, and making lots of soup for the sickies to come! If they don't get sick, hooray! But if they do, I'll be ready for them!

Lindsay, I'm sorry this has you depressed. You sound like such a tremendous cook, that I can understand why a business like this would appeal to you. Maybe you could start smaller than you originally planned. Something like homemade bread, or cookies, or rolls or something like that.

There ought to be a way to get your foot in the business and do what you love to do. Other people do it, and I'm betting that you can too. You just have to look for ways to accomplish your goal! Look at Paula Deen. She started just making sandwiches and having her boys sell them to local businesses at lunchtime. She said that at first no one bought, but she (and her boys) were persistent and look how it paid off!

We believe in you!

Dinner tonight will be Lemon Pork chops. The recipe calls to do them in the crockpot, but I'll be doing them in the oven instead. I'll make some brown rice and some kind of veggie on the side. Haven't narrowed the veggie down yet, have to see what I have on hand.

Lindsay, I totally agree with Glynis! It sounds like a GREAT idea & I think it's something that would sell! :idea: Would your friends be willing to pay you or at least cover the food costs, so that you could TEST the idea on a smaller scale before sinking a lot of money into it? That way you could see if the idea works & whether or not it would be profitable. Just a thought.

Kathy that sauce is yummy!!! I really thought I had screwed it up too! I had a Shiraz open & used that, it was coming out with too strong of a wine taste, so I added another pack of the au jus sauce. Then, I didn't see your post about the greek seasoning until after I fixed it. I had added poultry seasoning instead, and fresh rosemary & mint. I went back & added oregano to it, after I read your post. You know when you keep tasting something & you just can't tell anymore if it's right or not. Well, I'm working on it & Alexis says Nana I want to taste your dinner. I tried to explain it was just a gravy & not the whole dinner, but she tasted it and said "Ooh, that's good! I want a bowl of that soup!":rotfl: Of course with all that wine in there, I couldn't give it to her as soup! I gave her a piece of bread with some sauce on it & she ate it up!!!

So, last night's dinner was Lamb Chops with Kathy's Outback Sauce, Roasted Sweet & Idaho Potatoes, and Roasted Eggplant & Baby Bella Mushrooms. DH loved it too.

That sauce was so good, I'm thinking of trying out a new mix with it. Pan-seared Pork Medallions over Cheese Grits or Polenta with that sauce on top! and Spinach Sauteed with garlic & butter. Oh yeah, that sounds good! That's WFD tonight.
