I have some chicken leftover from Saturday's dinner, so tonight I am making a sald with mixed greens, sweet vidalia onions, the leftover chicken, sliced up, some cucumbers, tomatoes, and olives. Plus some crusty bread. This way I won't have to turn the oven on--it got up to 86 degrees today, and my house is all closed up. I am sure I am going to come home to a very hot and stuffy house.
 
I am making a really yummy jambalaya my friend gave me the recipe to. Easy and yummy-my 2 favorite things!-ha!:rotfl:
I am from New Orleans and know how it should taste-and this is GOOD and not from a box(even though the boxed kind are pretty good too-maybe too spicy sometimes(Tony's and Zatarans and good ones).
I am making it with chicken and andouille sausage.

Glynis- I hope that you are out of pain soon. I make that cranberry chicken also, and it is very good. My family prefers the apricot jam instead of the cranberries now that they have had both, but I don't always give them a choice.

Kathy- I don't know why, but the cranberry sauce doesn't taste like cranberries. My family won't touch whole berry cranberry sauce but likes this dish. I call it Polynesian Chicken and they don't know the difference.

I thought that recipe was similar to the Polynesian Chicken. I used the Italian salad dressing and really, you couldn't tell it was cranberry sauce. My picky kids ate it up! I'd like to try it with the French dressing as well.

Tonight I'm going to have a light dinner of grilled vegetables. YUM! I season them with extra virgin olive oil, oregano, lemon juice, salt, pepper and then grill them. So good!

Glad he liked the pot roast! It's definitely a winner!

alrighty-and by the way-it is ready to eat!-...

Chris Daigle's Jambalaya (don't know who Chris Daigle is, but I like the recipe!)

1# smoked sausage
1-2# shrimp or chicken(or whatever)
2 cups uncooked Uncle Bens converted rice
1 can beef broth
1 can french onion soup
1 stick of butter(or margarine or whatever you use, I used Smartbalance)
1 small can tomato sauce
1 bunch of shallots/green onions
1 large onion
1/2 cup celery
(for the above 3 ingredients, I used the mixed seasoning in the veggie section, about 1 and 1/2 cups of it)
thyme, salt and pepper (however much you like!)

Put all ingredients in a large pan
bake at 350 for an hour and 15 minutes.
Stir every 15-30 minutes.
Serves 6-8

That is IT!

I made shrimp stir fry with Asian vegetable in a sesame-soy-spring onion sauce with rice noodles.

I also tried to make some Southern sweet tea with splenda. It never comes out as great as in a real Southern home/restaurant.
 
Ed had Burger King as he is trying to put on some weight..The rest of us had turkey and swiss sandwiches and a Klondike bar for dessert
 
Sandy- We had the aloha pizza tonight and it was given a 9 out of 10 by ds!! I gave it a 10! Dh will eat it when he gets home tonight he is working late, but he is looking forward to it, as I told him what it was when he called.
It was super yummy and EASY!!! Actually ds made most of it by himself, I just helped with the cutting of the green onion and chicken, and putting it in the oven. He loves to cook so any recipe that is kid cooking friendly is a big plus in my book. (and it used of the leftover chicken from the other night!!)

We are taking our niece with us. She is 7 and has never been. When I told her we were having breakfast at Chef Mickey's and gave her the list of the characters there, she told me "Aunt Gretchen, I've waited my whole life to meet those guys in person." :goodvibes We can't wait to show her WDW.

She must have made your heart sing with her statement :cloud9:. You are going to have a great time with her! We have more fun watching Kady interact with the characters than we do on any of the attractions. There is something magical about the place, isn't there?

I know that the next few days are going to be busy so let me tell you now that I hope your trip is a safe and happy one.
 
Tonight will be leftover Glynis pot roast with carrots and smashed potatoes. My challenge for the day will be not to go raid little bites of it cold :)

Tonight we're having asian marinated pork chops, Glynis' fruited rice pilaf and not sure of a veggie yet.

Morning all- Tonights supper is one I saw (I think) Sandra Lee do on Semi-homemade. I think I remember enough to pull it off.
It is super easy and sounds yummy too!

Beer Beef Fajitas Cooked in the crock pot
A green pepper and onion cut up
A steak sliced into thin strips (whatever cut is on sale as it will get tender in the crock pot)
a packet of fajita seasoning or taco seasoning
and half of a beer
put the onions/peppers on the bottom then the steak strips on top with the seasonings
cook on low 8 hours

I will put this all together and start it around 10am as we won't eat until after 6pm tonight.
I will serve it with the usually fixings and a cucumber salad on the side.
I love crock pot recipes on Karate nights!!
Now what do I do with the leftover half of corona? I hate to waste things, but I don't think I should be drinking beer at 10am............It must be five o'clock somewhere right?!!?j/k
 
I think I'm gonna do the buffalo chicken tenders and bleu cheese mashers I was going to make a couple of days ago. Last night ended up being take out pizza. And we didn't end up eating until 8:30--good think I fed the kiddos around 4:45

Gretchen--your neice will have a magical vacation! This past trip was the 1st trip where DD finally "got it" and it was so cool to see the wonder through the eyes of a 3 year old! Makes me all teary eyed thinking about it! She actually cried when I told her she would have to say goodbye to Cinderella's castle on our last day. But she felt a little better when we told her that she would get to come back after Christmas
 
Thanks everyone for the kind words and good wishes. We are really looking forward to this trip and to taking our niece for the first time. She is such a sweet child and we just know she is going to love it. Nancy and Stephanie, I agree with you, seeing the magic through their eyes is the absolute best part of every trip.

DS wasn't interested in going on this trip :confused3 and our DD8 has missed too many days of school, so they are staying with their mother. So unless DSIL goes with us, it will just be me, DH, DD9 and DN.

Because DD9 is non-verbal, it is hard to share the excitement of an upcoming trip with her. However, my routine is about a month before a trip, I set out one of the old planning books I have with Mickey on the cover. She will normally pick it up, bring it to me and tap Mickey's picture. I tell her we are going in XX days. We repeat this countdown every time she brings me the book. On Sunday, she came home from her boating/jetski adventure and saw the suitcases in the living room. She tapped the suitcases and looked at me and smiled. I think she knows the trip is close.

Sorry for the rambling - tonight we are having leftover cheesy crockpot chicken, not sure about the sides. I may just shred the leftover chicken and use it for enchiladas.

I don't know what either of you are talking about! :lmao: I'm a good girl, wouldn't have a clue about chocolate body paint (go for the milk, not the dark- and take mini-marshmallows, all that chocolate is kinda rich!)

Anybody know anything about the "Magic Shell" ice cream sauce? Do you have to put it on ice cream for it to get solid or does it get hard just spreading it out?:laughing:

Now I bet you're wondering about that question. Huh?!?:rotfl2:

PS. Thanks for the idea Lauren but 1) I'd need a paint roller to cover my amplitude in chocolate (and prolly put Rick into a diabetic coma in the meantime!) and 2) don't think Epcot would be real receptive to me a la choco bunny mode trotting back to Italy for the Rosa!:rolleyes1

Last night's Italian Casserole was a hit...Tom brought the rest to work for lunch if that tells ya something. Really easy too!

Tonight is another new low carb recipe. Its called Chicken Renee. It is chicken breast stuffed with cream cheese and chives, rolled then wrapped with bacon. I have no idea about sides.

Good morning, everyone! My back is feeling much better today! I'm only having a little bit of tingling and burning down my arm. At least my back is better.

Dinner tonight will be taco pizza. DH has meetings after work tonight, so I need something quick and easy and that the kids won't hassle me on! Dessert will be ice cream sandwiches.
 
For those of you who wanted to know what is going into the basket or what the "Magic Shell" is for- this is what I have planned so far. (& it's not as dirty as ones would have you believe!:rotfl2: )

I know he's out of cologne so I was going to get him something. And I have all kinds of skincare freebies from Clinique- so I figured a mini-facial, just something to relax him a little. And a recurrence from the trip we decided to get married- a hammock at the Poly during Wishes with some Rosa Regale and fruit. Anyone know anything about the "Magic Shell" ice cream topping? If I put it on fruit will it get hard? Thinking I could do that and it'd be ok in my pack from Pop to the Poly.

He's been a trooper about going back to work after Katrina and being gone all the time. AND he's not said anything about the lack of business here on my part. Seems he's happy if I'm taking care of him and Wanna B and the house. I just want to give him a little appreciation for everything he's done.:love:
 
Gretchen- It seems to me that she knows and wants you to know that she knows.....know what I mean? Perhaps having just the two girls on this trip will make it extra special for both of them. My sister was so disappointed one year when her oldest son and DD could not join us on a trip to Plymouth, and only my oldest DS, who usually chooses not to join us, was the only one in my family to come. It was one of our favorite trips. We got to enjoy a side of the kids, okay Donny was an adult, that we generally did not get to see. I wish this for you.


Lori- If your DH is like mine, he loves having you home. My DH is happier now than he has ever been when I worked outside of the home. Have a wonderful time pampering him on your vacation!

Dinner last night was not great. I know that I tinkered with the recipe, but not enough for it to be so blah! It was a sloppy joe, which was good, but the topping was a biscuit like concoction that had no taste at all.

I have chicken tonight, not sure how I am cooking it so I am heading for the first page.
