Kathy- I have seen your menus and I think the "Queen of Easy" makes complicated seem easy.
 
Good morning everyone!

I don't know if any of you in the southeast could hear the bells ringing and the angels singing at 10:00 p.m. EST last night but the celebration was in honor of me completing my last tax return of the season. :banana: Now, I just have DH's 40th Bday celebration this weekend and a wedding couple's shower next weekend to take care of and I can finally begin thinking about our vacation.

Tonight's dinner is going to be simple, baked ham (I know, but we didn't eat any on Easter), Glynis's funeral potatoes and baked beans.

Some friends of mine are accountants and their DD played at the game yesterday. They said that there are still people dropping returns off for them :confused3. They were taking turns at the game so that one would be there, but both looked kind of shell shocked to me.

Hi All!

My baby is home...:banana: :banana: :banana: :banana: . I couldn't give him enough hugs. He is still sleeping now...I guess he is jet lagged. I won't get into it but there are a few things I am mad about with the ex...I guess it comes with the territory.

My kitty is OK...it is not a scratch, which we were worried about since her and her sister fight alot. It is just a cold.

I need to go back a read the threads from yesterday...I am out of the loop.

Well, I did without lasagna yesterday at Dsis house...I had salad and some meatballs, which may have defeated the purpose since they were loaded with bread...oh wel!!! I did break down and have 1 drink too!!

Tonight I am going to try a taco salad with out the tortillas...hopefully it will be OK...:)

That's very sweet of you Nancy! On weeknights I really do like to get something quick, easy and good on the table. I literally have hundreds of recipes that will get me in and out of the kitchen in about an hour.:thumbsup2

Good morning, all! I have been reading but not posting for the past couple of days, but nothing exciting has been going on in my kitchen. On Tuesday, we had Wendy's on the way to DD's chorus concert at the school. Last night was sloppy joes and potato chips, and tonight will be takeout something on the way home from soccer practice. I have seen a couple of new recipes I wanted to try in my reading, though, so when I grocery shop tomorrow night, I'll keep them in mind.

Thanks Kathy, but I don't like thousand island dressing. I also need to do something light, since my IBS has been doing better I've been eating like there is no tomorrow! :eek: i just got off the scale! Going get on the treadmill now!

Maybe I'll do Lauren's Cordon Bleu but that Chicken Francese sounds so good, but not very light!

I had minor toe surgery on Tuesday and have had to stay off my feet for a while so I haven't been cooking. I still don't like to walk a lot, but I have to get to the grocery store today. I think I might make Bourbon Chicken. Our A/C isn't working again so I definitely don't want to use the oven (it's supposed to be 86° today).
 
Dinner tonight is going to be Slow-Cooked Cherry Pork Chops. Today is such a crazy day, I decided to let my slow cooker do all the work for me!!! I'll steam some broccoli and make some rice and call it done!

No cooking for me tomorrow night! DH and I are going out of town to judge a State Drama meet, so we get to eat out, and have a little "romantic" getaway from the kids. Unfortunately, I think he's going to use this outing to try to convince me that we need another baby! Doesn't he realize that I'm 40, and just happy not to have to deal with diapers. He feels really strongly about it, though, so I'll let him talk and we'll see what happens! I'm happy with my 4 kids, but if the Lord wants us to have another one, that's ok too! Yikes!!!

Tonight is beef stir fry with rice and apple wedges with peanut butter for dessert. I've been craving peanut butter and I don't know why?!? It's never really been one of my favorite things (unless it's a Reese cup) so this really has me puzzled.

Ah well, hope everyone is ok. Lindsay definitely ask about a referral to a sports doctor. They deal with these kinds of injuries everyday so they may be able to offer up some different options from your regular MD.

These recipes are very good! I had the cordon bleu the other day for lunch too...yummy!

If you want low fat, the chicken dish that Nancy and I make with the preserves, dressing and onion soup is very good. These are listed on this thread but I cannot remember the names of them...Nancy, help! :)

Lindsay, Please take care of your shoulder...go to a specialist like the others have said. I am the same way. I have had broken toes, sprains, etc and do not go to the doctor until the last minute...

I am so sorry for the girls affected by Katrina...my church has a group down there this week helping out people still affected. :hug:

Obviously from our past discussions of food (constantly!) none of us need an excuse other than addiction!:lmao:

Lauren- It's Polynesian chicken if you use whole berry cranberry sauce, French dressing and onion soup mix, Apricot chicken if you use apricot preserves French dressing and onion soup mix. I prefer the apricot version. It is so good and .....this is for Madame.....Easy :thumbsup2.
 
Catching up on the past few days: last night we were in a hurry so I just made baguettes with emmenthaler, french butter, DH's had proscuitto. Plus a salad. Tuesday after we got home from the game (whoo-hoo!) I made us fajitas with black beans, corn, chorizo, sauteed peppers and onions, cilantro, and montery jack. Monday I made a pizza with mushrooms, basil, and mozzarella. I took a picture of that one but I was right, the photos don't look as good when it is dark outside. I guess I'll only be posting pictures of our weekend eats.

Today it is pouring rain, supposedly going to turn to snow. I am leaning towards cooking up some pierogies I have in the freezer (donation from my dsis, she posted the recipe here a while back). If I don't make those I am going to do ricotta gnochi. In any event, we'll be having a salad too.
 
It's my 49th birthday! Taking the rest of the day off from dieting to celebrate- lunch was deli tray mixture for party at work
DH just showed up with take-out fried flounder piece for me and I took a bite from his BBQ sandwich (Carolina pulled pork, tabasco, cole slaw on a bun). Yum!

Dinner is out for more seafood- broiled platter at Sanitary Fish Market in Morehead City. Casual with checkered tablecloths, over the water with sunset view (and sometimes wild ponies, otters, etc.) and the best waitresses you would ever wish to have (ask for Rochelle).:banana:
