I'm making Blue Cheese Stuffed Baked Potatoes with Buffalo Chicken Tenders...These are from Rachel Ray

4 baking potatoes
3 tablespoons extra-virgin olive oil (EVOO), plus some for drizzling
Salt and freshly ground pepper
1/4 to 1/2 cup milk
1/2 cup blue cheese crumbles
5 scallions, white and green parts, chopped
Salt and freshly ground black pepper
2 pounds chicken tenders, cut into bite-size pieces
3 large cloves garlic, chopped
1/4 to 1/2 cup hot sauce
4 tablespoons butter
Carrot and celery sticks
Sour cream to garnish, optional
preparationPreheat oven 400°F.

Place potatoes on a baking sheet and drizzle with some EVOO.

Prick them with fork, sprinkle with some salt and bake in oven for 40 minutes or until the potatoes are cooked through and tender.

Remove tender potatoes from oven, cut in half lengthwise and carefully scoop out the flesh from each half, preserving the integrity of the skin halves.

Place the potato flesh in a bowl and mash with the milk, adding just a little at a time. Add in the blue cheese and scallions and season with salt and pepper. With a potato masher, mash them to combine everything but avoid mashing up the cheese too much. Divide the potato/cheese mixture evenly among the potato skins and return them to the oven to melt the cheese and crisp up the top, about 5 minutes.

While the potatoes are back in the oven, preheat a large nonstick skillet over medium-high heat with three turns around the pan of EVOO, about 3 tablespoons. Add the chicken, salt, pepper and garlic, and cook, stirring every now and then for 5-6 minutes or until cooked through.

Remove from the heat and add the hot sauce and butter the skillet. Toss to coat the chicken and melt the butter.

To serve, place 2 potatoes on each serving plate and top with some of the Buffalo chicken mixture. Serve a dollop of sour cream if desired, and carrots and celery alongside.

And now you NOLA ladies....it is not an addiction......You are simply using food so that it will not go bad. I use up desserts all winter long...you know....because we might lose power.........

My lamb chops were delicious last night. Marinated them in olive oil, Lebanese chicken seasoning, garlic & limoncello liquor. Grilled them just a bit more than medium rare, yummy!

Dont't think I'll be cooking tonight. I've got to manage to beg for an appt. to get my roots colored today. We have a wedding to go to tom. night & :eek: how did that happen again so quickly!

No cooking tonight - my favorite food is being brought home by DH - fried green tomatoes topped with shrimp remoulade.:cloud9:

Okay, this is confusing!!!! I was welcoming ilovejack02, who is also Jenny!:lmao: I posted a recipe earlier in the week for a Seafood Florentine Casserole, that Jenny aka ilovejack02 had given me on the metro NOLA board! So, JennyMominRI, I guess you are now JennyI are would you prefer Jenny the 1st!:goodvibes

So, you're a mom of multiples??? Twins? Triplets? I'm a twin mom, myself!!! I tell DH that's another reason not to try for another one... every time I've been pregnant, I've doubled the number of kids in our family, and I do NOT want to go from 4 to 8!!!!!

yep, my oldest are twin boys.......all I can say is I'm glad they were my first so I didn't know any better! After them, the three girls seemed so easy!!!

All of the other young men who are in the debut are coming to our house to get dressed so I'll be taking lots of pictures. The limo is coming to pick them up before the dance. It's their first time in tuxedos. I can't wait to see them all dressed up.

Where is the Tag Fairy??? I'm thinking there really does need to be a tag about Buddy under someone's name!

BTW - does anyone know of a good website where I can buy travel sized products??? We're flying to OK for a wedding in a couple of weeks and we haven't flown since all of the new liquids on the plane rules.

You guys are so chatty lately it's hard to keep up with this thread.:chat: ;)

I didn't make it to the store yesterday so we had pancakes and bacon for dinner.:rolleyes: I tried to get DH and DS to eat a banana:banana: too, but that didn't work.

I did finally do some grocery shopping today so we'll be having bacon wrapped shrimp (yes, bacon again) , rice and salad. I wanted to have Velvet Shrimp again, but I think DH and DS are getting a little tired of it. I could eat it once a week.

I don't know about price comparisons to Walmart, etc but www.minimus.biz is neat. They have loads of interesting things. And free shipping (over $20) and free baggies. I've gotten loads from over on the freebie thread but that prolly won't help for a trip in a couple weeks.
 
It's not exactly what's for dinner tonight but I'm trying to incorparate more fish in our diets for health reasons. My problem is I can't cook it. Does anyone have any great fish recipes? This is new territory for DH and I so any help will be appreciated. Thanks.

I just grilled flounder in a foil packet. All I added was lemon, butter and parsley...and a little salt and pepper. It cooked quick too...maybe 10 minutes at the most. I am not really great at cooking fish but I am sure the girls here will help you.

LOL nope not much, gotta cut down the calories for summer so my Weekend night wine is over for the most part. BUT playgroup is coming over this afternoon and I just opened a bottle of wine for us mommies to share and pulled out a 6 pack of Abita Strawberry Ale. Too bad it wont go far with 8 of us here lol, but cant drink with the kids too much, we might would lose a kid ;)

:lmao: Been there, done that...justbe careful of DUIing...DISing under the influence!!! I cannot go without drinking...we are trying to stick to this South Beach thing so we are drinkiing vodka and diet pepsi...I am 2 beer Betty lately so one or two and I am done for the night. I guess I am getting old...:scared:

LOL im not dising under the influence to much, just under the influence of CHOCOLATE !!!! I just ate a Russell Stover Chocolate Marshmallow Rabbitt, and had an Abita Strawberry Beer YUM YUM!!!
