Good morning everyone!

Lauren, glad to know today is a better day. I don’t have any advice on the cupcake issue except do what you want. My only other advice is to hang in there and drink heavily if necessary.
Tonight’s dinner is going to be leftovers from last night’s penne a la vodka casserole. Last night was my first attempt at this dish and it was really good. I’m actually looking forward to the leftovers.

I'm going to put a roast in the crock pot with carrots and onions and make mashed potatoes and spinich with sun dried tomatoes...It's Ed's welcome home dinner,although I wonder if he will eat it.

Chicken 'n' Spinach Pasta Bake

8 ounces uncooked rigatoni
1 tbsp olive oil
1 cup finely chopped onion
1 (10 oun) package frozen chopped spinach, thawed
3 cups cubed cooked chicken breasts
1 (14.5 oun) can Italian-style diced tomatoes
1 (8 oun) container chive-and -onion cream cheese
1/2 tsp salt
1/2 tsp. pepper
1 1/2 cups shredded mozzarella cheese

Prepare rigatoni according to package directions

Meanwhile, spread oil in bottom of casserole dish; add onion in a single layer.
Bake at 375 for 15 min or just until tender. Transfer onion to a large bowl, set aside

Drain chopped spinach well. Stir rigatoni, spinach, chicken, and next 4 ingredients into onion in bowl. Spoon mixture into baking dish, and sprinkle evenly with moz. cheese. Bake covered, at 375 for 30 min.; uncover and bake 15 min more.

Last night we had Monster Chicken Cutlets, white cheddar shells, and broccoli.

I'm not sure what we're going to have tonight because I didn't go to the store and we have nothing in the house. :rolleyes1
 
Oceanannie, here you go, Emeril's recipe

Penne a La Vodka Casserole

5 tbl EVOO, divided
1 lb sweet Italian sausage, cut crosswise into 1 inch slices
1 lb hot Italian sausage, cut crosswise into 1 inch slices
4 cups thinly sliced onions
1 ¾ tsp salt
¾ tsp freshly ground black pepper
¼ cup thinly sliced fresh basil leaves (I used about 1 tsp dried)
1 tbl minced garlic
½ cup vodka
1 (16 oz) cans crushed whole tomatoes, with their juice
1 tsp Emeril’s Original Essence
½ cup heavy cream
1 lb penne pasta
15 oz ricotta
1 cup grated Parmigiano-Reggiano
1 ½ cups to 2 cups grated mozzarella

Preheat the oven to 350 degrees

Heat 2 tbl EVOO in a large skillet or saucepan over high heat. Add the sausages and cook, stirring, until browned, 4 to 5 minutes. Add the onions, ¾ tsp salt, and the pepper. Cook, stirring occasionally, until the onions are just soft, about 4 minutes. Add the basil and garlic, and cook, stirring, for 2 minutes. Add the vodka and tomatoes; reduce the heat to medium-low, and simmer, uncovered, stirring occasionally, for 40 minutes. Add the Essence and heavy cream, stir to mix, and simmer for 5 minutes. Remove from heat.

To cook the pasta, combine 4 quarts water, 1 tbl EVOO, and the remaining 1 tsp salt in a large pot over high heat. Bring to a boil, add pasta, and cook until al dente, 12 to 14 minutes. Remove from heat and drain well.

Combined ½ of the ricotta cheese and half of the Parmigiano-Reggiano with the remaining 2 tbl EVOO in a large mixing bowl. Add the pasta and toss to coat evenly. Add the sausage mixture and mix well. Add the remaining ricotta cheese and the remaining Parmigiano-Reggiano and mix well.

Transfer the mixture to a large baking dish. Sprinkle with the mozzarella. Bake until bubbly and golden, about 45 minutes.

"Zilla" - I love the bridal cupcakes - particularly if you get those cupcake stands (the tiered ones) I think it will be beautiful.

I was at work until 7 so I just heated up some deli roast beef and gravy and rice - no time to cook!

Tonight's dinner was sloppy joes and baked beans, served really late. The girls and I went for a walk this evening since it was so nice outside but ran into lots of neighbors outside and our next door neighbors ended up coming over for a while. It was nice to visit with everyone though. We're usually running kids around in the evenings so it isn't very often that I get to chat with the neighbors.

Where on earth has this month gone?? :confused3

I have no idea what we are doing for dinner tonight. I was letting the meatloaf cool before I refrigerated it and yes, I forgot to put it in the fridge. So out it goes. I may pick us up some sandwiches or something from Subway.

In our defense, I am losing bearing out of one of my wheels. It was freaking me out because I was scared my wheel was just going to fall off. Thankfully I have a 10:00 appointment this morning to get it worked on.

WFD at your house?
 
Wow Lindsay, you are right, your wheel is more important than your leftover meatloaf. I would have been freaking out too.

Tonight's dinner is a DH request, scallops in a basil alfredo over angel hair. He loves this dish.

I am pleased to say that Ed ate pretty well last night...He's asleep now.. I've been on the phone making appts with the Plastic Surgeon, the Cardio-thorasic surgeon and his primary care doctor. The doctor forgot to write prescriptions for half of his meds so I have to go out today and fill more prescriptions..
I have some chicken wings thawing in the fridge.. I think I'll make appetizers for dinner, chicken wins,spinich and artichoke dip etc.

LuLu, Thank you for your feedback on the cupcakes...we cannot get an appointment with the baker until 4/21, so I can't make a decision until then...

Still have no one to marry us...guess I am gonna have to call 1-800-officiant!!! :) Did I tell you guys that our favor is going to be a candy buffet??? :banana: I think I am going to do retro candy.

We are going out for pizza tonight...to a local place that has the best pizza aorund. They get packed so we will be there at 5:00 waiting for them to serve at 6...thank God for video games!!! Andrew (DS) loves going there...we love the great jukebox...OK, I am babbling again!

Lauren- Your wedding sounds like it is going to be so much fun! Don't worry about the JP. It is all going to work out.

Jenny- There is nothing better than a meal at home. I'm glad that Ed was able to eat your good food!

I think I am cooking salmon this evening with mashed potatoes. I just found out that there is a cake walk at DGD fair tomorrow so I am baking this afternoon. They want cakes, but I really wanted to make spring cupcakes with pastel sugar or green coconut and jelly bean.
