we're going to my niece's birthday party today, so dinner will be there ~ pasta I think.

Last night I made a really good turkey chili with a recipe I got at Trader Joe's....

1 package ground turkey
2 jars Trader Joe's chunky salsa
1 can Trader Joe's marianted bean salad

brown turkey
add whole can of beans(do not drain)
add salsa
simmer for 10 minutes

it was really good! If you don't have a Trader Joe's nearby, I'm sure you could use any salsa and marinated beans

Good morning everyone!

I'm still reeling from a long afternoon/evening at the ballgame. DS is on a winning streak, 3-0 pitching. Yesterdays game was like a marathon - between the two teams there were 30 hits. He won't be playing today, so I may just go to one game and be a relaxed spectator, when he pitches I am a nervous wreck!!!

Now that I've babbled enough about baseball, on to what's important! I'm planning on making seared scallops with a meuniere sauce, pasta salad and for dessert -- frosted chocolate coconut squares.

When I stopped at the house to pick up the violin and music books, there was a message on the machine. The organizers of the competition had called to let me know that Katie had been chosen to be the representative from the upper grades from our school! You guys sure sent along a ton of pixie dust. I thank you from the very bottom of my heart (and Katie's too!)! Now, she goes on the district wide competition. Then, hopefully, on to the storytelling festival!!!!!


You must be so proud of her! It is wonderful when their effort is rewarded in this manner. Now, Katie did all the work we are just her cheering :cheer2::cheer2::cheer2:section!

I couldn't get on the DIS last night, it kept knocking me off & giving me an error message. DH (computer geek) fulled with it & couldn't figure it out! So glad it's okay today. I would be freaking out without the DIS!

Kathy, congratulations to your DS on the game! Now you can relax, watching the next game! I've never fixed scallops before, any tips?

Last night I fixed Wasabi Pea crusted tuna, salad with Japanese Ginger dressing, & jasmine rice. It was good!

I really am proud of her, but I can't even begin to tell you how much her self-esteem has grown with each entry here! Your cheering means so much to her!!! I am so thankful for all of you!!!

Well, dinner turned out really good last night. So good, in fact, that most of the people at our small group thought that I has just bought rotisserie chickens and reheated them. They were shocked to find out I actually did it all myself. But of course, there wasn't nearly the size group that had been expected. So we've got tons of leftovers. WE'll be eating roast chicken and mashed taters all weekend!

shovan - this is my first time doing the scallops, the only thing I've been reading about as far as success in cooking them is to make sure they are completely dry, use high heat and caramelize on both sides. We'll see....... could you share your wasabi tuna recipe?Also, what kind of jasmine rice do you use, I've never bought it or cooked it before.

Glynis - this recipe is very old and I haven't made them in a long time. I don't really like how they turned out but the family does. I find the graham cracker taste a bit overpowering:

Frosted Chocolate Coconut Squares

3/4 c. margarine
2 oz. semisweet chocolate
1 3/4 c. graham cracker crumbs
3/4 c. shredded coconut (I would add more)
3/4 c. chopped nuts
2 tsp. vanilla
1 3/4 c. confectioners sugar
2 Tbsp. milk

Melt 1/2 c. of the margarine and 1 oz. of the chocolate. Remove from heat and stir in the graham cracker crumbs, coconut, nuts and 1 tsp. of the vanilla. Press into a 9 inch square baking pan; chill. Meanwhile beat remaining margarine, sugar, milk and 1 tsp vanilla until smooth and creamy. Spread over chilled crumb mixture. Melt remaining chocolate and drizzle over top.Chill until frosting is firm. Cut into squares.
 
Hello, everyone. Haven't been posting the last few days, nothing exciting going on in the kitchen. Last night we went out to eat at Red Lobster, and tonight will be leftovers from that dinner. DD's soccer season started today, so it looks like all of our Saturdays we'll be eating out for a couple of months. I'll try to do better tommorrow!
 
I got out of cooking last night (took it upon myself to order chinese) so I made those tacos tonight. Now I need to plan the rest of the week!!

Shovan- I wish my family would eat the meal you cooked! It sounds amazing.

Kathy- the squares sound so good. I think I will try them as part of our Easter treats.

Steph- your dinner must have bee wonderful. And there is a lot to be said about leftover chicken- I tend to cook more that we can eat at one meal because I like to have food ready to heat up...you know...just in case.


Dinner tonight was really good. Very simple, but very nice. I made the maple glazed chicken along with oven roasted potatoes and onions and a big green salad. Buddy was up in the hills helping a friend run lines and plugs for his sugaring, so the maple syrup was especially nice tonight.

Haven't posted in a day or so as things have been busy, nothing really grand just time gone in the day b4 you know it, lol. You all know what I mean!
Kathy- glad the hambug gravy brought bake some "comforting" memories and that your ds is doing great sports wise!

Hope this finds everyone feeling better as well, I am almost there still the ends of a cold hanging around.

Nothing exciting to post in the cooking area as we ate out at a new place last night (BBQ Joint) and tonight was leftovers from there. Well for dh and ds, I have had a major migraine that is making me a bit woozy so I had oyster crackers,lol.

I see some new easy recipes have come up and I am looking forward to trying those. That type is great for karate nights around here!
 
Today I am making black bean chili and cornbread, per my husband' request :)

I'm hoping to grill some burgers tonight. The weather here has been awesome the past couple of days--and now with the springing forward--we'll have lots of extra daylight tonight (crossing my fingers it doesn't rain!)

I've got a pork roast in the crockpot "ala Glynis" pot roast, I used white wine in place of the water. Macaroni & cheese and yellow squash casserole will be the sides.

steph - our weather has been beautiful also, wish I'd have planned on grilling!
 
I have a question for all of you. Have you cooked pizza on your grill? How thin or thick do you make the crust? I want to do this but I just I'm just chicken., I'll experment in the kitchen but not on the grill :confused3
 
Tonight is barbecued ham slices with peaches. If DH remembered to get gas, we'll do them in packets on the grill. If not, I'll do it in the oven. I'm going to try a recipe for berry filled donuts that uses refrigerator biscuits instead of making the dough. Wish me luck! If you hear major sirens coming from the west, you'll know I've burned our house down!!!
