Sheryl - the scallops were great. I just seared them over high heat on each side, then did a mango salsa on top - yummy! OK, I've seen jasmine rice in A&P, the coconut milk you use - is it sweetened or unsweetened? The rice would be awesome with the Thai Chicken Curry recipe on this thread. That chicken curry recipe is probably my favorite one so far (thanks liamsaunt!!!!!!).
