Sheryl - the scallops were great. I just seared them over high heat on each side, then did a mango salsa on top - yummy! OK, I've seen jasmine rice in A&P, the coconut milk you use - is it sweetened or unsweetened? The rice would be awesome with the Thai Chicken Curry recipe on this thread. That chicken curry recipe is probably my favorite one so far (thanks liamsaunt!!!!!!).:thumbsup2
 
Hi everyone, I haven't posted since Friday because I got food poisoning from our breakfast out on Saturday morning. Our youngest got a good interim report so we decided to take the kids out for breakfast Saturday morning. We let DD8 pick the place, so it was, big surprise, McDonalds. I got sick around noon Saturday and spent the entire weekend in the bed. I have just started to feel human again.

Glynis, so glad to hear about Katie. I know she is so excited.

Tonight's dinner is Glynis's pot roast, cooking now in my crock pot with Glynis's warm pudding cake for dessert. Because my husband doesn't really like citrus, he requested strawberry cake with vanilla pudding. I'll let you know how it turns out.

I made the warm pudding cake last night! I did chocolate with chocolate pudding. It was like heaven in a bowl! I can't wait to hear how the strawberry/vanilla is.
 
OKW Mom- so sorry that you were sick. My DGD loves McD's especially with the Pet Shop toys but now I want to stay away.......


Shovan- My DH will tell you that he will anything but liver and asparagus......and he believes it :rotfl2::rotfl2::rotfl2:. When I was working, and before we were married he would eat anything I cooked because he can only cook hot dogs. Now he is so spoiled. How soon they forget..............

Lauren- now your home is complete again. Count us in with those who are not dealing well with the time change.
 
Last night we had steak , DD had turkey medallions wrapped with bacon. The gas grill was empty, and we discovered it too late to fill it anywhere on a Sunday, so I broiled the meat, it was just not the same. We also had baked sweet and bake white potatoes, French green beans, corn, and garlic bread. I also had a green salad with maple Dijon dressing.

Buddy took me to the sap house today for a tour and a little lesson on maple sugaring. Our friends use the maple sap to cook a corned beef dinner in and say that it is amazing, so I may send some empty water jugs down so I can try it. Buddy went back to help set the sap barrels so I better think of something for dinner. Apparently they lost a barrel down a cliff yesterday and he went down to muscle it up. Now I know why he is starving when he gets home.

So sorry to hear you were sick. I had food poisining once before and it is NASTY! Glad you're doing better. I can't wait to hear about the strawberry/vanilla cake too! I keep jotting down all the possibilities this recipe has!

I have a question for all of you. Have you cooked pizza on your grill? How thin or thick do you make the crust? I want to do this but I just I'm just chicken., I'll experment in the kitchen but not on the grill :confused3
Here is my post from two weeks ago. It was my first attemp at grilled pizza.
I was freaking out about the pizza dough last night because it was a huge PITA to flatten out. I split the dough into 3 balls so I could make individual pizzas for each of us and because I knew it would work better on the grill than one big crust. They were the strangest looking, most misshapen (sp?) pizzas I've ever seen, but they were so good. I loved the grilled crust! DS11 liked it too, but DH was luke warm about it. Majority wins, especially when I'm in the majority, so I will be making them again.
I would make the dough pretty thin because it puffs up a lot. Make sure the grill is nice and hot before you start. I had my gas grill on high to start and then I lowered it to med., but I think I'll keep it on high or med-high next time. Brush one side of the dough with olive oil before you put it down on the grill, then brush the other side. It cooks really fast so don't leave the grill. When it starts to bubble, check to see if it's ready to flip over. When the dough was done I took it off the grill, put the toppings on and finished it in the oven. I haven't been brave enough to do the whole thing on the grill yet.

Geez, did I use the work "grill" enough times? :rolleyes:
 
Whew, all the wedding stuff is over. My brother is finally a married man, at the age of 38! :groom: :bride:

I haven't cooked dinner since last Thursday. It's hard to get back into it again, so tonight I'm just making hot dogs, baked beans, and corn. Tomorrow I'll try something a little more adventurous.
 
Tonight we are having 4 cheese ravioli with tomato sauce and toasted french bread for dipping.

Oh, and last night we had the cajun fried shrimp special they have been advertising at Popeyes. Honestly, it was sooooo good. For $4.99 you get 8 shrimp, a side and a biscuit. The shrimp were nicely battered and spicy! And my New Orleans friends know how fantastic the Popeyes mashed potatoes with gravy and their biscuits are!!

Kathy the scallops sound great! Did you buy them fresh or frozen? and where did you buy them? I use the unsweetened coconut milk. I've tried with the sweetened & the sugar causes the rice to burn before it's cooked. I always fix the rice when I make a Thai Green Chicken Curry! I would love to figure out how to get the rice sweeter. Anyone have any ideas?

Nancy, they do forget very quickly don't they! I'm lucky that I have more time to cook now & my DH is okay even if I don't. So it's usually when I'm in the mood (for cooking that is!) then I try to do a really nice meal!

That sounds so neat! Fresh maple sap is something we'll never get to try down here!

Just been lurking today, as I"m not whipping up any masterpiece over here this evening. Just some pasta and jarred sauce--I'm attending a running clinic, so as long as there's something to eat when I'm gone DH and the kids are happy.

Kathy--Here is a recipe for Coconut Jasmine Rice from RAchel ray--it's yummo!
1 cup chicken stock or broth
1/4 cup coconut milk (the kind in the asian food section-I like Thai Kitchen)
1 cup jasmine rice

IN a sauce pot combine the chicken stock, coconut milk and the jasmine rice. Bring to a simmer, cover,a nd cook for 15-18 minutes.

Really great with any Thai Curry

Nancy and Kathy that is exactly how it is in our house too. Shortly after we were married, my husband and I were going to dinner with my parents. On the ride, the guys were discussing where they normally ate their lunch. My husband told my dad that he had been eating at Burger King but the quality of their fish sandwiches had gone way down. My father had to explain to him that the quality of the food at BK had remained the same, it was DH's standards that had risen. We still tease him about that.

Ladies, I was telling you how hungry Buddy would be when he got home, and how spoiled he is and now he is sitting down to the meal I have slaved over for the past, oh I think about 5 minutes, tuna sandwiches and left over steak sandwiches.....which he must make himself because he can't stand to watch me fit every corner of the bread evenly :lmao::lmao:! Yep, I weaseled out and offered leftovers while I took a long hot bath. I'll try again tomorrow.

Shovan- my DH is the same. I tease him all of the time but he really doesn't care. I like to fix what he likes, but he is always happy if there is food in the house. I'm the one who likes to spend my day in the kitchen.

The sap is like a lightly sweetened water. The evaporator that Dale uses can process about 70 gallons of sap per hour, so that is between 1 and 2 gallons of syrup depending on how the tree was.

Anyways for my little dinner I am going to make a nice Vegan salad :cloud9: I have going to use some organice green leafs, organic carrots, organic celery, cucumber, onions, garlic, some hot pepper, some orange bell pepper, onion alfalfa sprouts, organic tomatoes, Pumpkin seed Kernels, tarragon herbs, and Drew's all natural Lemon Goddess dressing :cloud9:

Also my mom is going to make me some Vegan Spaghetti :cloud9: She is going to use this Soy and Semolina Spaghetti that is organic. Some tomato and Basil pasta sauce. Some Publix Green Wise Soy Veggie Burger Crumbles. Some Garlic and hot peppers and orange bell peppers and onions :goodvibes
