Hi Y'all, :wave2: I'm a long time lurker here, also from Kathy's Nola thread. I love to cook, but not every night!

Kathy, How do fix those pork chops & rice? I looked through here to see if it was posted, but didn't see it.

Here ya go:

Bahama-Mama Pork Chops


1 8 oz can pineapple chunks, reserve juice
1 Tbsp. cornstarch
2/3 c. chile sauce
1/3 c. raisins
1 Tbsp. brown sugar
1/8 tsp. cinnamon
4 pork chops
1 Tbsp. oil

In medium bowl, blend reserved pineapple juice with cornstarch; stir in pineapple, chile sauce, raisins, sugar and cinnamon and set aside. In a large skillet brown chops in oil and drain. Pour pineapple mixture over chops. Cover & simmer 15 minutes.


The rice is a boxed mix from Zatarain's!!
 
Thanks Kathy, that sounds yummy. I'm gonna try that! It will be a nice change to one I call Polynesian Pork Chops. The only difference is I use barbecue Sauce, allspice, ginger, sliced onions, pineapple rings and bake it in the oven. I usually serve it with a homemade fried rice.

I've been sitting here for more than an hour, looking through all of the recipes & copying! Y'all sure have some great ideas! I didn't cook last night, had leftover red beans & rice from Monday.

I took out some chicken breast for tonight. I had planned on grilled Mediterranean chicken & portabello mushrooms, with a yogurt sauce inside pita bread. But now I can't make up my mind between that or the Rosemary Chicken & Lemon Spaghetti! I'll let y'all know tomorrow what I decided on.

Yesterday I made burrito bake and today I picked up McDonald's ~ nothing fancy here this week with my crazy schedule but I'm loving all the new recipes being posted...can't wait to try them!! :teeth:
 

Another easy dinner for us tonight--turkey burgers (I made them a while back so just have to pull the from the freezer and saute) with red onions, arugula, tomatoes, melted sharp cheddar, and mustard. Maybe an arugula salad with it. But, probably not. I'm feeling kind of junk foody tonight so I might make some tater tots as a side instead. Dude! Gimme some of your tots! :laughing:
 
I love the Monday beans and rice crowd! When I was a kid my Mom had her own meal schedule ans she was a master at stretching her food budget, one paycheck and 4 kids, So anyway we would come home from school and ask what was for dinner and she would simply say "It's Friday." or It's Saturday." It took me years to realize that my Mom loved a routine and that extended right to her meal plan.

Maybe that was why she was so organized and I cannot find a thing :confused3.

Glynis- thanks for the pudding tip. I was thinking white cake and pistachio pudding for the next one. I better have another piecew of this one so I can make another :laughing:
 
This was a hit and it's a little different than the normal stew I make so I figured I would post it...it is made in the oven but I am sure it would be good on the stove or in the crockpot as well.

Serves 8

2 lb beef stew meat, cut into 1 inch pcs
4 medium carrots, cut into 1 inch pcs, I used the precut baby carrots
2 medium onions, cut into eigths
4 cloves garlic, chopped
2 16 oz cans of whole tomatoes, undrained
1/3 cup quick cooking tapioca
1 tbs chopped fresh or 1 tsp dried basil
1 tbs cumin seed, I used powder
1 tbs salt
2 ears of corn, cut into fourths, or frozen cut into 8 pcs
8 small new potatoes, cut in half (1 pound)
2 small zucchini, thinly sliced
**I added about 1/2 cup of water

1. Heat oven to 325

2. Combine all ingredients except corn, potatoes and zucchini in a dutch oven breaking up the tomatoes(I used one of those sterno pans). Cover and bake 2 1/2 hours, stirring 2 - 3 times in thr first hour and a half.

3. Stir in corn and potatoes. Cover and bake for an hour and half.

4. Stir in zucchini. Cover and bake for about 15 minutes.

5. Let stand about 10 minutes and serve.

ETA: I served this with those corn holder thing ama jigs...otherwise eating the corn on the cob would be messy.

Has anyone ever done ribs in a crockpot? Any secret? What kind of sauce do you use? I bought ribs last night (did not have the energy to make them, but will tomorrow) on sale at Fry's and got Sweet Baby Ray's sauce to go on top.

Fried chicken, we are craving it. My mom normally makes it but thinks I should just know how to do it. I don't. :( Any secrets? How do you season them? How do you make extra crispy?

Fresh asparagus. How do you cook it? I got it on sale for .99 cents a pound. I saved $15 on 3.5 pounds of it! I am scared to ask how much it normally runs!

Baked or crock pot enchiladas. They sound sooo good, but I have no clue how to make them. :/

I do ribs in my crock pot all the time. I'll post a couple of my favorite recipes.

Sweet and Savory Ribs

1 lg. onion, sliced and separated into rings
2 1/2 to 3 pounds boneless country style pork ribs
1 bottle honey barbecue sauce
1/3 C. maple syrup
1/4 C. spicy brown mustard
1/2 tsp. salt
1/4 tsp. pepper

Place onion in a 5 quart slow cooker. Top with the ribs. Combine the barbecue sauce, syrup, mustard, salt and pepper; pour over ribs. Cover and cook on low for 8 to 9 hours or until the meat is tender.


Chinese Pork Ribs

1/3 C. soy sauce
13 C. orange marmalade
3 Tbs. ketchup
2 garlic cloves, minced
3 to 4 pounds bone in country style pork ribs

In a bowl, combine the soy sauce, marmalade, ketchup and garlic. Pour half into a slow cooker. Top with ribs; drizzle with remaining sauce. Cover and cook on low for 6 hours or until tender. Thicken cooking juices if desired.

whil'st i do not LOVE to cook, I need to cook, so here I am to try out something new. I go in waves with the cooking-6 months of yummy things different from our regular fare, then back to the fast, plain yooky stuff that we get tired of after a few months of. Got your thread from the NOLA board-thanks!

We're having a ham steak with brown sugar and pineapple, mashed potatoes, baby peas and a tossed salad. It's -35 here today with the wind chill factored in. :scared1:
 
Yesterday I made the microwave carrot casserole (Zandy pg.331), and the crock pot pork roast. The carrot dish turned out really well, but my pot roast was a little dry. Any suggestions would be appreciated!
 
I am making an enchilada casserole, (that I found on the budget board) with some mex rice on the side, and corn. It is as mermaid02 said beyond cold here today, Thank goodness that our blood is thick. This will make a nice cozy meal, once we are all in for the evening.
 
Good morning ladies! I am feeling much better today so I guess I have to go to work.;) Tonight I'm trying THE HAT's Hamburger gravy over rice with corn.

Tonight I'm gonna try Dsis's chicken enchilada casserole tonight. If it's yummy I'll post the recipe tomorrow!

Kathy, glad you're feeling better! Hope everyone else who was under the weather is feeling better, too!

I've got a pork roast and potatoes in the crock-pot with a seasoning packet. :)
 
Lachesis- Here's an easy & yummy way to do fresh asparagus. All I do is break off the woody tips, and place them on a jelly roll pan / cookie sheet with sides. I drizzle them with olive oil and season with salt & fresh ground black pepper. I roast them in a 400F oven for only 3-4 minutes 'til they're tender crisp. You can also do this on a pre-heated stove top grill or on the BBQ pit. Just watch them as the really thin tender ones don't take long at all.

WFD tonight? Toss up between shrimp fettucine or BBQ shrimp. Want to have leftovers for tomorrow if possible.
