For dessert last night I made the Espresso Brownies from Lindsay on page 141. They were so, so good! :cheer2: I'll definitely be making those again.

I doubt I'll cook tonight, I really don't feel like it. :)
 
I cooked a good meal yesterday so tonight it's frozen fish sticks and french fries...I feel so guilty feeding my kids this stuff all the time.. I'm thinking my new goal is going to be to try and cook a HM healthy dinner every second day.

You have had your hands very full these past few weeks so I am sure cooking is the least of your worries...Prayers for you, Ed and your family...:grouphug:
 
Jenny - you have nothing to feel guilty about. You're kids are great and they, more than anyone, understand what you have been dealing with. Just take care of yourself, things will get better. Continued prayers for you, Ed and the kids!!:grouphug:

With baseball season in full swing now our weekends will be lots of take-out and ballpark cuisine.:crazy2: I'll post if I do manage to get a home-cooked meal in!

I don't think you should feel guilty at all. You've got a lot on your plate right now! Besides, my kids love frozen fish sticks and french fries. It's one of their favorite meals!

Well, I didn't get to make the chicken with paprika cream last night. I didn't have enough cream. I'll post the recipe anyway a bit later today. It does sound good, and I promise I'm going to try it. So, for dinner last night, I cooked the chicken breasts in Italian salad dressing, we had the garlic green beans and some brown rice on the side. At least my kids ate the chicken. Something about the salad dressing really made it yummy for them.

Tonight we are having mini tuna loaves. Kind of a cross between meatloaf and fish cakes. We like them. I'll make some tartar sauce to go with it. A green salad and some kind of noodle dish will round out tonight's menu.

Tomorrow I don't have to cook at all! DH is taking the whole family to see "Joseph and the Amazing Technicolor Dreamcoat", and we'll go to dinner beforehand. It will probably be McD's or something similar. Something we can grab and go in the car! We have to drive about an hour to get to the theater.

Jenny, I agree. You have to be meeting yourself coming and going as it is. And like Glynis's kids, mine would much prefer the fish stick/chicken nugget/pizza meals to the homecooked meals. Terrible on the ego as it is to admit it.

Glynis, so glad to hear about the new baby. I hope he is doing well enough today to go home. God bless all of you, including the wonderful woman who gave them such a precious gift.

Nothing cooking tonight. We have having leftover stuffed shells although I will make a fresh loaf of garlic bread.
 
Speaking of fish sticks....

I have a recipe that everyone loves in my house....

It's a fish sandwich made with either frozen fish sticks or fish fillets....

You cook the fish sticks, then put them on a ciabetta roll, with a big spoonful of cole slaw topped off with Baked Lays Potatoe chips...put the top of the roll on and delicious!!! I saw this recipe in a magazine years ago and although it sounded kind of weird; my kids love fish sticks so I tried it...really good!!!

By the way, does anyone have a recipe for shephards pie (any healthier versions out there???)

So glad you liked them!! FYI, if you want to add a touch of a caramel taste to the brownies, stir in a few handfuls of toffee pieces :)

There is a recipe for shepherd's pie on the thread in my signature...I have not tried it yet...from a poster in England I believe.

To make them lower fat, just drain off the fat from the meat and make the mashed potatoes with chicken broth in stead of all the butter...HTH!!! :)
 
There's a GREAT Shepherd's pie recipe on page 225 of this thread. I tried it once, and my family gave it mega thumbs up! Even my picky eater!!! We've made it about 4 more times, and each time they love it. It's very easy to make, and way yummy!
 
Thanks Lauren and Glynis...I'll have to check those recipes out! Running out of time though...my vacation is over after this weekend and then back to frozen dinners, mac and cheese, etc!!! :)

Jenny- you don't need to feel guilty about anything right now. Your kids are eating and that is all that matters. Take care of Ed and the rest will follow.

I did not cook last night. I had planned on salmon but my sister asked me to go to the Flower and Garden show, so I popped the fish in the freezer, told DH there was tuna in the fridge, and off I went! We ate out at a small Italien restaurant near my home. We both had eggplant parmesan and ziti. It was so good!

Tonight I am making a casserole from Allrecipes.com. After reading the reviews and tweaking it according to the suggestions it was way different, but so good!

2 lbs groung turkey
1 tsp sugar
12 oz sour cream
8 oz cream cheese
1/2 cup milk
3 cps spaghetti sauce
1 can tomatoes
1 onion
2 or 3 cloves garlic
3 cps mexican shredded cheese
1 box farfalle or egg noodles

brown turkey and drain
saute onion and garlic
add spaghetti sauce, tomatoes sugar and seasonings to taste
add cooked pasta to tomato sauce
combine sour cream, cream cheese and milk set aside
Italian seasoning to taste
layer the noodle mixture and the sour cream mixture like a lasagna type casserole
top with shredded cheese
350 for about 30 minutes


It does not look too good but it is really delicious/ It is not a diet recipe so we don't have it often.
 
Going to try liamsaunt's Red Thai Chicken Curry! Sounds yummy! The kids will have pizza at church, so we can make it spicy!!

Glynis..I just finished preparing the Shepherd's pie recipe on page 225 for tonight's dinner and something doesn't seem right. I browned the beef with the onion and pepper, and then added 2 cans of vegetable soup (umm...I added 2 cans of vegetable broth...was that wrong???), well, it looks way too liquidy...something seems wrong. Then I put the mixture in a casserole dish and added the scoops of mashed potatoes...it just seems different...but we'll see tonight when we eat it!!! I let you know! Is it very liquidy???? Thanks!

Yup, you added the wrong soup. You want something like vegetable beef soup. Something that's condensed and has chunks of veggies in it.

Sure. The beans are pretty much a staple in my house. My family loves them.

Garlic Butter Green Beans

1 pound fresh green beans
1 garlic clove, minced
1 Tbs. butter
2 tsp. lemon juice
1/2 tsp. sugar
1/8 tsp. pepper

Place beans in a steamer basket; place in a large saucepan over 1 inch of water. Bring to a boil; cover and steam for 7-9 minutes or until crisp-tender. Meanwhile, in a small saucepan, cook garlic in butter until tender. Remove from the heat; stir in the lemon juice, sugar and pepper. Transfer the beans to a serving bowl; add garlic butter and stir to coat.

Sometimes I double the garlic butter, as my family likes it coated really well. It really depends on how large your beans are.

Dinner tonight at our house will be Mozzarella Marinara and a salad.

The Mozzarella is a great low-carb recipe - you just cut a block of good quality mozzarella into slices, then dip them in an egg wash and grated parmesan, freeze them for a few minutes, then put them under the broiler for about 3 minutes on each side. You serve it with some pizza sauce on top. Really yummy, but you have to really like cheese to eat it straight like this. :rotfl:
