Good morning all,
Just my second post here on this wonderful thread, thanks for the warm welcomes!!
Tonight I am making salisbury ground beef over mashed taters, (and rice for ds he hates white potato), with frozen corn as a veggie. Dh likes to mix it together for a shepards pie flaver. Dessert will be chocolate cookies with pb chips I made yesterday, for dh and ds or as I call them my boys.

To those who are under the weather I hope you are all feeling better soon!! Ds has been sick with a wicked cold since last friday, and today finally woke up without a fever. At least he is on school vacation so he hasn't missed any school, except for the half day when he came home last friday sick.
 
Kathy--congrats to your DS

The lemon spaghetti was yummy last night. I served it with herbed Tilpia--really easy and yummy

2-4 fillets of Tilapia
1 tsp salt
1 tsp dried thyme
1 tsp dried rosemary
1 tsp dried basil leaves
Fresh ground pepper
1/4 tsp ground red pepper
2 cloves garlic minced
Lemon slices

combine all the spices, etc garlic. rub on both sides of fish. Place fish on lightly greased broiler pan. Evenly spread garlic on the tops of the fish--place lemon slices on fish. Broil for 10-12 minutes until fish is flaky.

I think tonight I'm going to fire up the grill and make some burgers. The weather has been beautiful here--gotta get outside!

We are grilling tonight as well...DS has been asking for cheeseburgers. I will also be making home fries and probably some corn on the cob.

I hope all fo you are doing OK...I haven't been my chipper self lately so I haven't been spending alot of time here...I guess some of you may like that since I babble all the time. :) I am feeling better so I'll be back!!!
 
I thought I'd share the new recipe I made last night. My husband loved it. I'm not a big beef eater but I enjoyed it, too. The kids - not so much. It's a Cooking Light recipe. I served it with mashed potatoes & steamed broccoli.

Filet Mignon with Sherry-Mushroom Sauce

4 (4 oz.) beef tenderloin steaks, trimmed (1 inch thick)
1/2 tsp. salt
1/4 tsp. pepper
2 tsps. butter, divided
1 1/2 C. sliced mushrooms
2 T. chopped shallots
1 tsp. minced garlic
1/2 C. fat-free, less-sodium beef broth
1/4 C. dry sherry
2 tsps. cornstarch
2 tsps. water


Sprinkle beef with salt and pepper. Melt 1 tsp. butter in a large nonstick skillet over medium-high heat. Add beef to pan; cook 3 1/2 minutes on each side or until desired degree of doneness. Remove beef from pan; keep warm. Melt remaining 1 tsp. butter in pan. Add mushrooms, shallots, and garlic; saute 3 minutes. Stir in broth and sherry. Combine cornstarch and 2 tsps. water in a bowl, stirring until smooth. Add cornstarch mixture to pan; bring to a boil. Cook 1 minute, stirring constantly. Serve sauce over beef.
 

As you can see I am new here, but I have been lurking for quite a while and enjoying many of the recipes from this thread. Nothing too exciting for dinner tonight, just hamburgers and chips, but my dinners are not always so dull. I look forward to joining in-you all seem like a friendly bunch!

Do you have a recipe for this? It sounds yummy and I'm always looking for new pasta ideas :)

This was so easy I'm almost embarrassed to post it. My son is so picky, but I've found that if he helps cook the meal, he'll eat it. So, this is one he can help with.

Ravioli with Sausage

1 pkg. frozen cheese ravioli
1 pound smoked sausage
1 jar spaghetti sauce
1 green pepper, chopped into chunks

Cook ravioli according to package directions. Meanwhile, in a large skillet, saute sausage and peppers for about 5 minutes. Add spaghetti sauce and let heat through. Drain ravioli and add to sausage mixture. Mix well, and top with Parmesan cheese.

Like I said, there's not much to it, but it is filling, and my picky son will eat it!
 
Lindsay, I was lurking on that tagfest thread the other day when tags were being given out like crazy. Was that what you're referring to? If so, I must have missed the naughty part.:confused3

No cooking for me tonight. DS is being inducted into the Nat'l Honor Society, so we'll be celebrating by having dinner out!:goodvibes

Tonight's dinner is Chicken with Paprika Cream. We'll be having garlic green beans on the side, and possibly some rice or a noodle dish (haven't decided, yet). For dessert, I'm making some chocolate chip cookies with a new kind of chip I found: dark chocolate swirled with raspberry. Sounds good!
 
Tonight we are having:

Pot Roast (cooked in the crock pot), seasoned potates, and greeen beans. I am making homemade brownies for dessert.

Tonight I am making stuffed shells and garlic bread. I made the sauce last night so I could throw everything together quickly tonight.

Thank you, Glynis! I would love the recipe for the chicken dish you are making tonight...It sounds like something my picky guys would like. They do not like over the top stuff...DF says things always taste better when I throw them together and not focus on recipes...

I don't think I told you guys...a couple weeks ago I finally made a new recipe from the Paula Deen cookbook...Chicken and Wild Rice Casserole. Well, I loved it...no one else did. It called for curry and I guess my guys don't like this spice...I even cut it down. I guess I have to stick with my very basic cooking! :)

When you guys bake and make desserts, do you use boxed stuff or from scratch? I am just wondering since I got my new mixer and all I usually do is make the boxed stuff...I did make a cake already and we ate the whole darn thing in like a day and a half....I love my new Kitchenaid!

Let me try the recipe and see if it's any good. It's a new one, but it sounds good.

My family is the same way with curry. They HATE it! I love it, though, so I keep cooking with it, in very small doses. I guess I'm hoping that they will get used to it.

I mostly make stuff from scratch. When I'm pressed for time, I'll use a boxed mix, but I like baking from scratch.

I love my KitchenAid, too! Couldn't live without it!

Glynis, this dinner sounds great! I know you said you wanted to try the chicken recipe to see if it's good before you post it, but would you mind telling how you do your garlic green beans?
 
That lemon spaghetti sounds really yummy. I'll have to try it next week. I'm shortcutting dinner tonight. I had planned on making enchiladas but a lady in the office was selling homemade tamales this morning so I bought a couple dozen and I'll just make the chili sauce to put on top after work. Some spanish rice on the side and some tortillas and we'll be set. Not very lowfat but the family will be happy!

Last night I made hot sandwiches that went over really well. It's a takeoff on a sandwich that I used to eat at one of my favorite places in college and it's called a Benjamin. Not sure if it's the correct name but that's what we're calling them now. Anyway, take a onion roll, spread marinara sauce on it, add roast beef, mozzarella cheese and pepperoni and toast the whole thing in the oven. YUMMMMMMM
 
Hi everyone! Just catching up, we also had the GI thing in our home, and my DGD was so sick. She's much better, so I am getting back to normal.

Welcome to all the new posters! :welcome: I'm looking forward to seeing more recipes here. I tend to be a boring cook, so I like new ideas.

Kathy- Congrats to your son! The NHS is a wonderful accomplishment, and I know how proud you must be.

Lauren- I feel your pain! Every time I try something new, my DH whines that I am messing around with his food. You would think that adding a few capers to a lemon and garlic sauce was like forcing him to eat spiders! Let's not even talk about mesclun mix added to his iceberg salad- and the fresh pineapple chunks added to a chopped vegetable salad I made for the girls actually had him gagging :lmao:. Then there was the mexican lasagna and the chicken and cheese quiche with phyllo crust.....:rotfl2:

I can post the recipes, they were amazing!

I bake with a box or from scratch, it depends what I want. Carrot cakes, etc scratch. A chocolate cake for dessert during the week comes from a box. Cookies are always from scratch. It really doesn't matter. I think that if you are taking time to make something for your family, and they enjoy it....it's all good.
