Oh, you ladies are forcing me to come beck to Earth and start cooking again! Nothing like a Disney trip to make you want to stay on vacation, is there?

Tonight is a spiral ham with a brown sugar/clove glaze, Maui potatoes from 'Ohana, and a green veggie. I might try to make the honey lime dressing that we had with the salad if there is time later.
 
Sure, it was really easy and DH and I loved it. Of course the kids didn't, but I anticipated that!

Chicken in Lime Butter Sauce

6 boneless skinless chicken breast halves (I used chicken tenders)
1/3 C. vegetable oil (I used WAY less than this)
Salt and pepper to taste
1/2 C. butter
Juice of 2 or 3 limes
1/2 tsp. minced dill weed
1/2 tsp. minced chives

Sprinkle both sides of the chicken with salt and pepper. Cook in large skillet with vegetable oil that has been heated to medium. Saute chicken about 4 minutes until lightly browned. Turn chicken. Reduce heat to low and cook 10 minutes more until chicken is tender. Remove from pan and keep warm. Remove oil from pan. Add the juice of 1 lime and 2 tablespoons butter to the skillet. Continue to alternate lime juice and butter until sauce becomes opaque. Stir in minced dill and chives. Pour sauce over chicken.


I figured the kids wouldn't like the sauce, so I gave them their chicken plain. Hey, more sauce for DH and me! We enjoyed this.

Ok, our dinner tonight might seem weird to you but it was good! FYI - we are not huge red meat or chicken eaters.

Tonight we had leftover (homemade) macaroni and cheese. Also, I chopped up some fresh tomatoes, drizzled a tiny bit of olive oil, added salt and pepper and popped them in the oven for only about 3 minutes. Together those 2 are a great combo. For a kind of dessert, we had strawberries dipped in balsamic vinegar. :cutie:

I know what you mean. :rotfl:

But recently there was a thread http://www.disboards.com/showthread.php?t=1256030&referrerid=&highlight=balsamic all about balsamic vinegar and how people just love it and crave it. I originally posted that I wasn't a fan but since so many people were raving about it, I gave it another try and I started loving it, too! :confused3 Someone mentioned dipping strawberries in it so I tried it - and it is really is good. :yay:
 
It's snowing here!! Woo hoo!! It's just a couple of inches but it's still a lot for us.

Tonight we are having leftover soup :)
 
Chicken stir fry with rice today...they're saying messy snow for us tonight and tomorrow...only about 1 - 2 inches.
 
Whole wheat ravioli with garlic sauteed vegetables. Only, I couldn't find the whole wheat ravioli ANYWHERE! So, we're going to have whole wheat pasta, with garlic sauteed vegetables and shrimp instead. ;)

Last nights Spaghetti was good! I threw it all together without a recipe and it was yummy! Never got bread sticks though, DH had to work late and there aren't any stores between there and here. So, I just sliced up a couple of slices of my good whole wheat bread(from freshly milled flour, a friend gave it to me.) and the boys had regular sliced bread, cuz, Mama don't share her bread. ;) Threw together a quick salad with wilting lettuce. Not the good dinners earlier in the week, but, good none the less. :lmao:
 
Good Morning all! Reporting snow and ice here as well! Tonight will either be smoked sausage and beans (crockpot) or DH's fav Jambasta (thanks Lindsay). But I'm guessing DHwill choose the jambasta b/c it's like a foodgasm for him!:rotfl2:
 
leftover pulled pork in sandwiches on garlic and herb bread (homemade and it's a WW recipe so it's risky) and probably a salad.
 
I'm making General Tso's Chicken over fried rice today. The sauce is from a bottle but it tastes just like the sauce from the local Chinese place so I'm fine with it ;) . I think I'll do some pea pods on the side.

I'm trying a new recipe that I saw Paula Deen do a few weeks ago. Not in the mood for healthy food - this should work - "Bacon Cheeseburger Meatloaf", with baked potatoes and a salad.

Tonight is kind of odd. I'm hosting book club here so I'm focusing more on those recipes than my families dinner. Horrible, I know. The family is having chicken nugget casserole, french fries and a salad. Then they are banished to the family room in the basement while book club is here. I'll get them some cookies and chocolate milk to have while watching a movie down there. Thanks to my DH, it should be just fine!

Now, my book club ladies are getting the good stuff. Our book this month was Rebecca by Daphne du Marier, so I'm doing a kind of English tea. We are having:

Afternoon Tea Scones with spiced honey butter
Dried Cherry Scones with cherry preserves
Rasberry/Almond tarts
Angel Food cake with Rasperry Sauce
Tea
Cider
Cocoa

What do you think? Any other suggestions?
