You could probably bake them. I've never tried it but I can't see why not. I don't think I would roll them in the flour if you are going to bake them though.

I'm going to try the Pina Colada Cake from this thread. Anyone ever bought "cream of coconut drink mix" in a can? If you have or know what it looks like I need to know about what size can it is. My store only sells it in 34 oz bottles, so that's what I bought. Now I need to find out how much to use.

Thanks. I wonder if they sell ground pork at Costco. Is that a uber stupid question?? I have never bought it.

Can they be baked or is frying them better?

I always bake meatballs - I think it is easier. I use a casserole dish so no grease gets in the oven.

350 degrees for approx 15 minutes
 

Also, I'm cleaning out my pantry and want to use a few things up. First up: chicken flavored Ramen Noodles. I bought them for a coleslaw type salad, but now I can't find the recipe. Anyone have a recipe using them.


COLESLAW WITH RAMEN NOODLES

1 lb. bag shredded cabbage
1 bag Oriental Flavor Ramen Noodles

Mix:

3 tbsp. vinegar
2 tbsp. sugar
Salt and pepper
1/2 c. oil
Ramen seasoning packet

Brown:

3 tbsp. sesame seeds
1 c. slivered almonds

Toss together 1/2 hour before serving with 4 chopped green onions.

My mom makes this and it is soooo good!
 
Hi, everyone! I'm back! We had a wonderful trip (not long enough, though!). The good news is the I completed the half marathon in just under 3 and a half hours!!!! Came home with the Donald Duck medal, too! It was so fun!!!!!

I got some pretty good meals at WDW, too. Went to WCC and had the meatloaf dinner. It was so tasty, and the portion was so huge, it lasted me a couple of days. DH and I split a chicken flatbread meal from Sunshine Seasons at Epcot, and it was very good too. The bread was a bit salty, but it was so very tasty! Also ate at Cantina de San Angel. We had the combination plate and a kid's meal. Too much food!!! It was very satisfying!

I even splurged and bought a pastry at the patisserie in France. So yummy!!!!!

It sounds like you all had wonderful meals while I was gone. I can't wait to try some of these recipes!

Nancy - I'm so sorry for your loss. You are in my thoughts and prayers.

Dinner at our house is easy! We are going to a friend's house for the evening, so I don't have to cook at all!

Kathy, I have never used the coconut stuff you use...but I am drinking a Whalers coconut bay breeze as we speak! :thumbsup2

I make my meatballs like Mosmom but add garlic and a TBS or so of melted butter...I usually bake them but found if I am making tomato sauce it is good to just put the raw meatballs in there and let them cook for a while (at least 15 min simmered...they come so moist.

Begalbel, For turkey burgers I use about a pound of ground meat, about a shot or two of milk, Goya adobo (the best thing ever!!!) and alot of parsley...they come out really yummy. Stuffed burgers are also good...throw a peice of cheese between 2 hunks of burger...yum!

Lachesis: Schwans meatballs are really good, but I think they are a bit pricey. When I buy mine I get them from Costco. I think they are pretty good, and they seem to take on the flavors of what they simmer in. Costco used to sell ground pork, I liked to get the big package at Christmastime because I make French meat pies for my family and my son's friends. They stopped because some of the stores were not cleaning the meat grinders between the pork and the ground beef. A shame, really because I saved a lot buying it in 10 pound packages.

Bengalbelle: I always add onion soup mix and some ketchup or steak sauce to my burgers or Salisbury steak. Again, not a recipe but a addition.

Where do you find the meatballs at Costco? In the frozen section? Not where the fresh meat is I assume?

I had never seen ground pork, but I didn't look hard. I normally just get a pork loin.

I didn't decide until the last minute - so we had big salads and grilled cheese sandwiches. Not very exciting.

Today is the biggest game in Saints history. Our whole city is so pumped up, can't wait for tonight!!!!!!! Minimal cooking today - I'm going to make the Pina Colada Cake, I took a container of seafood gumbo out of the freezer, making potato salad.

Hi! :) Sorry, I've been too busy to DIS the past few days (argh!). I have to tell you that I don't know what cream of coconut drink mix is...unless...it is what I use when I make "adult smoothies" when we are on vacation. For those, I buy Coco Lopez brand of cream of coconut. It is a very, very thick, sweetened stuff that has about 9000 calories per tablespoon. HA! It's what you use to make pina coladas. At the grocery, it is usually stocked in the soda isle near the margarita mix and angostura bitters and comes in a 10 ounce can. DH is calling me but I'll come back in a bit and post what we've been eating lately plus some of my adult smoothie recipes. It is Saturday after all!
