Morning all! Tonight we are having 4-cheese pizza with pizza sauce to dip with. Also a salad.

I think I'm going to try a cajun pasta tonight--this is going to be an experiment, so if it goes well I'll post what I did tomorrow. I have leftover shrimp and andouille from making the Jambasta, so that will be in the pasta--I almost never experiment (part of my analytical mind NEEDS to use a recipe) so this is a big step for me!:thumbsup2
 
Good morning ladies!

Lindsay - when I last spoke with Nancy, she seemed to be doing about as well as can be expected. I told her that I woudn't bother her, for her to just rest and get back to me when she felt like chatting. She was very happy that her Mom got to see all of her grandchildren before she passed, what a blessing that was!

nucpharm - I know how you feel - I'm anal(ytical) like that too!:rotfl: If you would like something to maybe use as a little helper check out the creamy cajun chicken pasta recipe that I posted on this thread. It might give you an idea or two, or not.:goodvibes

Tonight I'm making the apricot pork chops, wild rice and glazed baby carrots. BUT I have been craving pizza, so this just doesn't sound good to me!!
 
Good Morning everyone! I want to thank you for the prayers and kind thoughts, they mean more than I can say. I have been peeking in here and feel like it is time to get back to my routine. It is funny how important food is, and I have been blessed by some wonderful neighbors who have sent meals in to us. We have been eating good food, but now I need to be cooking it myself in order to be able to feel as though things are going to be okay.

I am not sure what I am cooking tonite, DD and DSIL have that nasty cold that is going around, so I hate to fix a heavy meal. I am cleaning the fridge out and then hitting the grocery store, so I need to check in here for some ideas.

Once again thank you for all of your kindness.

I haven't DISed in months, but yesterday I made my version of Glynis's Pot Roast.

YUM!!! It was great. There are so many awesome new recipes to try. Can't wait. Thanks everybody. :thumbsup2

Tonight I am making baked ziti and salad...

The gulya last night was a hit...the meat was so tender...I asked DFi if there was anything that could be done differently next time...He responded "Yes, Don't break anything"! I had a mishap in the kitchen yesterday and was bending over to put something in a bottom cabinet...then my back went out, I leaned on the door and cracked the darn thing in half! :sad2: Thank God it was a pretty clean break...now I just have to get to the furniture repair place...only me! ;)

Mushroom and barley soup
spaghetti w/ meat sauce
garlic bread

I want to make oatmeal raising cookies for dessert, but I need a low fat recipe. I remember seeing one with applesauce instead of butter or shortning. Anyone have one?
 
I found a non-fat oatmeal raisin recipe on line. I will try it and see how it turns out. It has no butter or eggs at all (probably has no taste at all too).
 
Well, dinner tonight turned out pretty yummy--I'll try to recap what I did

1 lb of spaghetti, cooked al dente
6-8 ounces of andouille sausage diced
8 ounces of shrimp, tails removed
couple of teaspoons of cajun seasoning
1/2 medium onion diced
2 cloves garlic chopped
1 jar of prepared alfredo sauce
2 tbsp. of Louisana Hot Sauce
Couple of dashes of tabasco

Melt 1 tbsp of butter with 1 tbsp of olive oil--saute up the andouille until browned. Remove from pan. Saute up the onion and garlic. Toss the shrimp with the cajun seasoning and add to onion and garlic. After shrimp is finished add the andouille back to skillet and pour in the alfredo sauce. Add the Louisana Hot sauce. Simmer for a couple minutes. Add Tabasco to taste. Then add cooked spaghetti and a couple spoonfuls of pasta water and toss.

It was really yummy!
 
nucpharm, that meal sounds like one my DH would love!

I cooked a Lithuanian sausage, mashed potatoes and broccoli. It was good, but I miss the fresh homemade sausage we used to be able to get. The butcher who made it closed his store, and I have not been able to find it anywhere. Guess I am going to learn to make it.

It was nice to sit down and have a meal that I made. My DD and my DSIL are both sick, but DH, DGD and I enjoyed it. Kady ate more tonight than she has eaten in forever!

The blueberry swirl cheesecake was wonderful!! Tastes like you've been in the kitchen forever. Looks nice and it's easy.

Here's the recipe (from Keebler's website):

Blueberry Swirl Cheesecake

1 package (8 oz.) cream cheese, softened*
1/2 cup sugar
1/4 teaspoon vanilla
2 eggs
1 Ready-Crust Pie Crust Keebler® Ready Crust® Graham
1 can (21 oz.) blueberry pie filling, divided

Directions
1. In large mixing bowl beat cream cheese on medium speed of electric mixer until fluffy. Add sugar and vanilla. Beat until combined. Add eggs, one at a time, beating until just combined after each addition.

2. Place crust on baking sheet. Spread cream cheese mixture in crust. Spoon 2/3 cup pie filling in dollops on top. Use knife or narrow spatula to gently swirl pie filling into cream cheese mixture.

3. Bake on baking sheet at 325°F about 30 minutes or until center is almost set. Cool on wire rack for 1 hour. Refrigerate at least 3 hours.

4. Serve topped with remaining pie filling. Store in refrigerator.

YIELD: 8 servings

*NOTE: Soften cream cheese in microwave at high for 15 to 20 seconds.

Tonight we had baked chicken. I stuffed it with two large peeled oranges. Slathered about 1/2 a stick of butter (softened) over it and seasoned it with prepared seasonings: salt, pepper, onions, garlic, etc.. So good! The oranges really made it moist and flavorful throughout. Had mashed potatoes and beans with it. And the blueberry swirl cheesecake for dessert. :)
