Hi Lucas, I have a couple of ones. I have one that uses a prepared red curry paste, stirred into coconut milk and served with veggies--that's for boneless skinless chicken breast. I also have one for thigh meat which makes the red curry from scratch with chiles. Does either sound like what you are looking for?


Hi, I would be interested in the recipe with the prepared paste, coconut milk and skinless chicken breast.

Thai chicken red curry is my all time favorite. We always tell them to make it spicy - yum!! We went to our local Thai restaurant yesterday and I was saying I could eat that every day! I love it!! So I got the idea that I'd like to try to make it at home. Any recipes would be appreciated. Thanks.
 
Last Nov. I overheard some Southern women discussing a recipe for beef tenderloin that involves marinating it overnight in a bag filled with a bottle or merlot and a whole bunch of other ingredients. They were all raving about it. I didn't have the nerve to intrude on their conversation and ask for the recipe! That would have made me look quite the Yankee. ;) Has anyone heard of a similar recipe? I'd love to make something like that - something about beef and red wine. . . Yum.

P.S. I haven't posted in awhile because I am so busy, we're not eating great - mostly sandwiches, salads, frozen things, or leftovers from the freezer. I'll post when I'm eating something good. :)
 
We are having leftover bucatini with meatballs, salad, and breadsticks. The bucatini was good, it was a little different. I will definitely eat it again though.

I think I'm going to marinate some chicken breasts in an Asian vinagrette and then make a 3 bean salad also!
 
Sausage peppers and onions here served over, or on the side, of whole wheat penne with olive oil, garlic and parmesan cheese.

The brisket yesterday was great! I love the sauce it makes and so easy in the crock.

I'm a crock pot kinda gal; we're having chicken & dumplings tonight (courtesy of Banquet), but here are TWO slow-cooker recipes that I wanted to share:

Sweet and Sour Chicken

INGREDIENTS:

* 4 tablespoons butter, melted
* 3/4 c. ketchup
* 1/2 c. white vinegar
* 3/4 c. brown sugar
* 3 tablespoons Worcestershire sauce
* 2 cloves garlic, minced
* salt and pepper, to taste
* dash red pepper flakes or ground cayenne pepper
* 1 1/2 c. chicken broth
* 6 boneless chicken breast halves, skin removed
* 1 can (8 ounces) pineapple chunks, drained

PREPARATION:
Wash chicken; pat dry. Place chicken in slow cooker. Combine melted butter, ketchup, vinegar, brown sugar, Worcestershire sauce, minced garlic, salt and pepper, hot pepper, chicken broth; pour over chicken.

Cover and cook on LOW for 5 to 7 hours, until chicken is tender but still moist. Add pineapple and cook for 20 minutes longer. Serves 6.

Crockpot Cream of Mushroom Soup

INGREDIENTS:

* 12 to 16 ounces sliced mushrooms, or 3 cans (4 ounces each), drained
* 1 tablespoon butter
* 3 cups chicken broth
* 2 tablespoons onion, chopped
* salt and pepper, to taste
* 2 tablespoons all-purpose flour
* 1 cup sour cream
* 1 cup half and half or whole milk

PREPARATION:
In skillet, sauté the sliced mushrooms in butter; place in slow cooker. Add chicken broth, onion, salt, and pepper; stir well. Cover and cook on LOW for 5 to 7 hours (on HIGH for 2 1/2 to 3 hours).

About 30 minutes before serving, turn to HIGH. Mix flour and sour cream; add to slow cooker with half and halfor milk. Cook until slightly thickened.

Lucas, here is the recipe you requested.

Thai Chicken Curry

1 14 ounce can unsweetened coconut milk
approx. 1 tbsp. thai red curry paste (to taste, I like spicy, you may want less...or more!)
1 red bell pepper, sliced
1 onion, sliced
1 lb boneless skinless chicken breast, sliced into strips
1 tbsp. packed light brown sugar
1 tbsp. fish sauce
1 cup chopped seeded tomatoes
1/3 cup sliced basil (thai basil if you can get it)
4 kaffir lime leaves (if you can't find them, OK to leave out)
1 tbsp. lime juice
sliced limes, crushed peanuts, and chopped basil for serving

Bring 1/4 cup cocunt milk and curry paste to boil in large skillet, whisking constantly. Add bell pepper and onion, and saute five minutes. Stir in chicken, the rest of the coconut milk, the sugar and the fish sauce. Cook over medium heat until chicken is cooked through, about 5-7 minutes. Stir in the tomatoes, basil, kaffir lime leaves, and lime juice and season with salt to taste.

Garnish with the extra basil, the peanuts, and the lime slices and serve over rice.

1 lb. dried red or white beans
1 smoked ham hock
sliced smoked or andouille sausage
1 lb. pickled pork, cubed
1 container chopped creole seasoning mix (onions, grn pepper, celery, parsley & garlic)
2 Tbsp. salt (more or less to taste)
1 tsp. black pepper
2 bay leaves
1/4 tsp. cayenne pepper
1 tsp. dried thyme
1 tsp. dried oregano
Hot sauce (to taste)

Combine dried beans, creole seasoning mix and ham hock in a dutch oven. Cover with water. Add cubed pickled pork and all seasonings. Cover and bring to a boil over high heat. Reduce heat to a low boil and cook until beans are tender (approx 3 hours). During last hour of cooking, add the sliced sausage.

Kathy, I have a couple questions...can anything be substituted for pickled pork? I am not sure if they sell that around here....also the container of creole seasoning...I am not sure if we have that as well...is this fresh or something that I would find in the produce section? Can I make it?

Tonight we're having a roast in the crock (with Lipton onion soup mix), cooking with it potatoes & green beans. For dessert I'm making a blueberry swirl cheesecake.

:lmao: :lmao: Lauren - you're too funny!! You could use any type of ham in place of the pickled pork. The creole mix is freshly chopped and found in the produce section, of course you could chop it up yourself, I'd probably use 2 onions, 1 green pepper, 3 ribs of celery and parsley and garlic. All of these can be changed or omitted, depending on what you like. Just remember, it's going to cook a long time and they will dissolve so any picky eaters won't see chunks of anything. I think I've been hanging around with you too much --- I'm babbling now..:rotfl2:

liamsaunt, thank you!! :yay: This sounds delish and I can't wait to try it. Oh yes, I like it spicy, too! I think that is what is so good about red curry - we always ask for it spicy but then it has a background hint of sweet. The perfect balance!! :thumbsup2

We had spaghetti with meat sauce, tossed salad and garlic bread. The best part is my daughter (17) did all the cooking and the cleaning up! And she did a FANTASTIC job. She "doctored" up some jar sauce and it was fabulous! I'm sensing a new job for her around here....;)
