No idea what is for dinner Sunday night. Saturday we went out though. I have Steak, baked potatoe and greens. DH had Ribs, chicken an shrimp.

Tonight I am making spaghetti and meatballs. I am frustrated because I always put a little pancetta in my sauce and I couldn't find any yesterday. I am trying a different store today. Also, I stumbled upon some buccatini (sp?) pasta a few weeks ago. I never thought I'd be able to find it in this area, so woo hoo!! We will have salad and breadsticks to go with it.

Not sure about dinner because we're heading to my parents for brunch after church today. We're finally going to have "Christmas" with my parents, so the brunch could be a huge spread! Can't have too much of that holiday food. Thanks for all the anniversary wishes, it was a great day!:goodvibes

Lindsay, if you can't find it, try salt pork maybe. I always use this and spare ribs in my gravy as the Italians here say! :) Is buccatini the pasta like spaghetti with the hole in the middle?

I am making JennyMiomRI's brisket today...I have been craving this and its easy since my back is still hurting...prob some mashed potatos and carrots on the side.

Today I'm doing a pork roast (Glynis' recipe for pot roast), honey roasted sweet potatoes and family's fave broccoli and cheese casserole. YUM!

DH, DS, and DB limited out on Speckled Trout yesterday, so that's dinner tonight! Thin-sliced fried fish, fried shrimp, big green salad, and hushpuppies. I might make some Fudgy Ice Cream Balls for dessert, if I have time.
 
It's balmy in New Hampshire & we're grilling out today!
Steaks, burgers (for the freezer), sausages & veggies--sweet potaotes, potatoes & whatever else is around.
Okay, I'll admit it: we grill even with 3 feet of snow on the ground & 4' icicles!:thumbsup2

We have some lemons to use up, so I think I'm going to try an Ina Garten recipe for yogurt lemon cake.

I'm thinking I'm going to try the Bourbon Chicken recipe from here today. DH loves bourbon chicken and I've been wanting to try it. I will probably toss an asian salad to go with it.

On Friday, I made pot roast in the slow cooker. I still have half of that left, so for supper tonight I am going to slice what's left and reheat it in gravy. I am running the breadmaker right now to make Anadama bread (bread with cornmeal) so I will serve the roast beef and gravy on slices of the bread at supper, and I will have steamed broccoli and carrots to go with it. We made lemon shortbread cookies last night so that can be dessert.

I have sauce in the slow cooker right now. We are having Ziti with meat sauce, a salad, and Italian bread.
 
So, here is the menu I did for the Pats game--junk food reigns supreme at Chez Liamsaunt today!! All being eaten in front of the big TV as I type (the computer is behind the sofa in the TV room)

Devilled eggs
Seven layer dip
Buffalo chicken dip
Spinach-artichoke dip
Fake Queso fundudo
Lucky guacamole
There are two kinds of tortilla chips and celery sticks for dipping
Deep fried cheese stuffed jalepeno peppers
Three kinds of chicken wings: bourbon molasses glazed, smoky BBQ, and mustard-maple
Cheese plate--cheddar, gouda, and...umm...forgot the third one! All from this great cheese shop somewhat near me (Wasiks in Wellesley). This was my food, heh heh!

Here are two of the recipes I made--both take less than 10 minutes to prep!

Buffalo chicken dip

2 lbs. boneless skinless chicken breast, poached and shredded
1 bottle Franks Hot sauce (or whatever kind you like)
1 bottle ranch or blue cheese dressing
2 blocks cream cheese
8 oz. shredded montery jack cheese

Combine the chicken with the hot sauce and spread in a 13x9 pan. Heat the cream cheese and dressing over med-low heat until melted and smooth. Pour over chicken. Bake on 350 oven 20 minutes. Remove from oven and top with cheese. Bake 10-15 minutes more. Serve with celery sticks and tortilla chips for scooping.

Fake Queso Fundudo

Hot peppers to taste--I used four jalepenos, you can use whatever you like, roasted until blackened in spots, chopped, seeds discarded if you like less spicy.
1 lb. american cheese
1 onion, minced fine
1 cup half and half
2 tsp ground cumin, or more to taste
salt and pepper to taste

Combine everything and heat over low heat until cheese is melted and smooth. Keep warm in fondue pot, and serve with tortilla chips for dipping.

YES! I am two for two on the footbal front! The only problem is that now everyone os coming back next week and I have no idea what to make!

So, for the Eagles game, there was a gourmet BELT (gouda instead of american, plus on foccacia, ha!). Most importantly, I made my first ever at home frites! They came out great. I did have two appliances that made things easier--a mandoline to cut the potatoes into shoestrings, and a deep fat fryer. Anyway, I cut the potatoes, soaked them, dried them, and then did a double fry on them, then tossed with salt, garlic, rosemary, and cayenne. Yum, yum. Plus, they stayed nice and crispy for about 30 minutes.

Hi Lucas, I have a couple of ones. I have one that uses a prepared red curry paste, stirred into coconut milk and served with veggies--that's for boneless skinless chicken breast. I also have one for thigh meat which makes the red curry from scratch with chiles. Does either sound like what you are looking for?
 
Here's an easy recipe for some really good biscuits to go with these all these yummy-sounding recipes:

Sunday School Biscuits

2 sticks of margerine (at room temperature)
1 cup sour cream (at room temperature)
2 cups self-rising flour

Mix margerine and sour cream until combined, then sift in flour. Put about 1/4 cup of batter into each cup of a muffin tin. Bake at 350 degrees for about 15-20 minutes.

This recipe makes about a dozen, so just half the ingredients if you don't need that many. Oh, and don't forget to wave your magic wand over them to remove all fat and calories, because they do have alot.

It is my goal in life to make biscuits from scratch. I have tried many recipes but they never come out. I don't know what I do wrong. :confused3
