Yesterday we had bbq chicken and ribs for lunch at the VIP tent at the air show. By the time we left it was dinnertime so DS and I stopped at McD's on the way home.

Tonight I'm going to grill some chicken breasts, not sure what else yet.
 
We had Kung Pao chicken from Dream Dinners. My DD loves to make dream dinners stuff and it was really good.
 
Glynis - have you tried the ranch potato salad baked and served as a side? It rocks!! I had some friends over and they went crazy over it!! :thumbsup2
 
Hi, all!

I am back from WDW! All too short! I had some great meals - my favorites were Narcoossee's and Boma.

For dinner tonight I made Green Bean Chicken Casserole.

1 bag frozen french cut green beans
1 box sliced fresh mushrooms
1 small onion
2T butter
4 cups prepared mashed potatoes (frozen, refrigerated, instant or homemade)
1 family size can mushroom soup
1 cup milk
2 tsp. soy sauce
1 tsp. fresh thyme (you could use parsley, or chives, or dried thyme, or just skip it if you don't have any around)
4 chicken breast halves (boneless, skinless) cubed
1 can (large) French's onions
Put the butter in a skillet and melt. Add onion and mushroom and saute until wilted and softened. Add chicken and cook until chicken is no longer pink.

Microwave the green beans for 2 minutes of until ice crystals melt. Drain and add to chicken and mushrooms. Add soup,milk, soy sauce and thyme. Add half the can of onions. Add black pepper to taste if you like (I didn't). Pour into a large casserole and spread mashed potatoes over the top. Sprinkle with remaining onions and bake 20-30 minutes at 350 ot until potatoes and onions are lightly browned and soup is bubbling at the edges.

I haven't tried that!!! I'm so thrilled that it's good that way! I love hot potato salad. I'm definitely going to try that!!! Thanks for the great tip!

Did you have a great time!!??? We missed you around here! I've gotten used to seeing your typeface first thing when I start up the computer. I can't wait to read all about your adventures!

Tonight we are having leftover veggie soup and cornbread. Easy day for me :)

ETA: Thanks for the welcome everyone :) My trip was awesome and we had so pretty amazing food while there. I will come back later today and update the recipe page. Sorry I haven't done that yet, but I promise I will. :)
 
I think tonight will be chicken and rice with a veggie. I really need to hit the grocery store, but that will be tomorrow at the earliest. Oh, and we had this crockpot Italian Chicken (not Lindsay's) and it was really good. It was actually a seasoning packet from McCormicks and then you add stewed tomatoes, tomato paste and mushrooms. It was really yummy!

I'm thinking that tonight will be poor man's stroganoff. I have everything on hand and wouldn't have to run to the store. Since it's snowing like crazy out there, I really don't want to bundle up the kids and drive in it! Ick!!!!! We've got some ice cream in the freezer for those that want dessert. I'll have to come up with a veggie. Most likely corn or green beans as everyone likes those.

I'm off to the first page to plan my menus for the upcoming week. I also have to decide which 6 pies I'm going to make for our families Pie Night next week. I know I'll do my killer pecan pie, but I'm still up in the air for the other 5. Have to do some thinking. All suggestions and recipes are welcome!

Tonight is our last dinner before DH comes home from NY. We're having Emeril's Alphabet soup w/ Mickey shaped pasta instead of ABC's and turkey club sandwiches.

Here is the recipe. You've got to try it - so good and so easy. We are getting ready to sit down to dinner and eat it right now!

QUICK POTATO CHOWDER

3 stalks celery thinly sliced
3 Tbsp butter
2 Tbsp all purpose flour
2 14 oz cans chicken broth
1 (1 lb 4 oz) pkg refrigerated diced potatoes with onions
1½ cups milk
1 cup half & half
4 slices bacon, crisp cooked and crumbled
salt and pepper to taste

In a deep saucepan cook celery in butter over medium heat about 5 minutes. Stir in flour until combined. Stir in broth, bring to a boil, stirring constantly. Add potatoes, return to boiling. Reduce heat, simmer uncovered 15 minutes or until tender. Slightly mash potatoes. Stir in milk, half & half and bacon. Heat through. Season with salt and pepper.
 
Welcome back Lindsay! I'm looking forward to your reviews and pictures also. It was funny, as we finished our last meal of the trip, DH said to me; "Hey, why didn't you take pictures of all the food for that disboard you post on?" I thought he would think it too weird. Next trip for sure!

DH and I are both sick. I thought I escaped from Florida unscathed this year, but NO....we both have sinus infections and it sounds like DH is coming down with laryngitis. Urgh. So, we are having Indian food! Nothing like a blastingly hot curry to clear out congestion. We indulged and got all of our favorites: chicken pakora, lamb samosa (for DH), onion kulcha, naan, mutter paneer, and chicken makhanwalla, plus lots of onion relish. There will definitely be leftovers!
