The brined chicken I made tonight was a hit!

I had a couple boo boos though...I didn't re-read Liamsaunt's post on how to brine and I did it by memory...Well, I dumped a whole bunch of sugar and salt on the bird...no soaking. Then I read the post (after a night of salt and sugar) and it said only salt on chicken and no soaking. Then I rinsed the bird this AM and soaked it in salt water...:confused3

I then blasted it at 425 degrees for the time I was supposed to, let it rest and then proceeded to carve it...it wasn't done. I then threw it in the broiler for about 10 minutes.

It was the best chicken I ever made...thanks Liamsaunt!!!

PS: I hate using a electric stove/oven...give me a gas range any day!!! :) :) :)

I think I am going to make chicken quite often and save the wish bones for my Xmas tree...my Mom's friend did this and put a bow on eash bone, hung them on the tree and then guests got to make a wish.

:) Glad you liked it! I actually do a sugar/salt wet brine when I make turkey.

Tonight I am making a recipe my sister sent me for a beer cheese soup. I have to think of more recipes with beer. Here is why: we have a supplementary fridge that we use exclusively for waters, sodas, juices, and beers. I got up this morning and went to get DH his water and soda to take to work and found that for some reason all of the Heneikens in the fridge had frozen! None of the other types of beers did, nor the water or soda. The weirdest part is that they were not all in the same location in the fridge, but they all froze! So, now I have all these frozen, leaky Heneikens to cook with. This incident just furthers my belief that Heneiken is a crummy beer. :mad:

I have a pork chop recipe with a beer sauce it is quite good...and easy...just sliced apples and onions, pork chops layed on top, s & P and beer sauce (1 cup of beer mixed with a roux...did I spell that right? Let me know if you would like the formal recipe...

I would Love the beer cheese soup recipe.

Tonight is Tacos...I still need to go shopping and I have to volunteer at school today...so not too much time...

We're having: Flat salmon souffle (using canned salmon, a thin white sauce, eggs, and a little mustard all mixed together and baked). It's like a souffle but because I don't separate the eggs and beat the whites, it doesn't puff up much. Still tastes good though. I will serve it with mango salsa. Also baked potatoes and veggies and dip (to use up some veggies - green and yellow peppers, cauliflower, plus some carrots too.)

I think tonight is going to be BBQ mini-meatloves and mashed potatoes, some sort of veggie as well
 
Good morning everyone - no work for me today, I'm meeting with hospice to assess Mom's condition, not sure why - nothing's changed. Rainy, dreary day here I'm thinking meatballs and spaghetti, caeser salad and garlic bread.
 
I've got pork chops & BBQ sauce in the crockpot. We'll have corn on the cob and green beans with it. Might make some gingerbread men for dessert. :)
 
Well, I got knocked out yesterday by the same stomach bug my DS had. So, the BLT soup got put on hold! I'm doing it tonight. I don't even know what everyone had for dinner last night. I was in bed by 6:30. Yuck! Luckily, it's passed by and I'm feeling better today!

OT: Why is it that if I'm not around for a few hours in the evening, my house goes to pot????? I came into the kitchen this morning and it looked like my pantry had exploded!!! I just don't get how 5 people can do so much damage in the short amount of time I'm not watching them!

I feel the same way come Monday...it's like damage control and its only 3 of us and 2 cats that tear the house apart! :)

ETA: I just bought 2 roasts...guess what we are having tomorrow night??? :)

So, DH sent me an email to tell me to make sure to make TV food tonight because he wants to watch American Idol. I thought we could escape it until later in the season, but I guess not. So...

I am going to try Lindsay's posted recipe for the smoky chicken patties (but am using turkey, because that is what I have). I will serve them on crusty rolls.

That sounds awesome. I've been sick so tonight is just a "fend" night. DH chose ramen noodles, DD is having canned ravioli, and DS had chicken nuggets. I'm probably having some ice cream (I have a horrid sore throat).

Here's the recipes..I'll post a pic when its done in a few minutes LOL.

Simple Southern-Style "Unfried" Chicken

Prep Time: 15 min
Total Time: 1 hr 30 min
Makes: 6 servings

1 broiler-fryer chicken (about 3-1/4 lb.), cut up OR you can use boneless/skinless chicken breasts (I did)
1/2 cup KRAFT Light Ranch Reduced Fat Dressing
1 pkt. SHAKE 'N BAKE Extra Crispy Seasoned Coating Mix

REMOVE skin from all chicken pieces except wings. Place chicken in resealable plastic bag. Pour dressing over chicken in bag. Seal bag, turning to coat all chicken pieces well. Refrigerate at least 30 min. to marinate.

PREHEAT oven to 400°F. Place contents of seasoning packet on plate. Remove chicken from bag, one piece at a time. Dip chicken in coating, turning to coat lightly. Arrange on baking sheet. Sprinkle any remaining coating from plate over chicken.

BAKE 40 to 45 min. or until cooked through.


Cheddar-Potato Casserole

4 large baking potatoes, peeled
1½ oz. cream cheese, softened
½ Cup sour cream
½ tsp onion salt
½ tsp garlic salt
¼ tsp pepper
½ Cup shredded cheddar cheese
2 Tbsp choppped fresh chives

Coarsely chop the potatoes. Place in a medium saucepan; add enough water to cover. Cook over medium-high heat until tender, about 15 minutes.
Drain and mash in saucepan.
Preheat over to 350°. Add cream cheese and sour cream to saucepan. Whip potatoes with a wire whisk until well mixed. Mix in onion salt, garlic salt, and pepper.

Spoon mixture into a baking dish. Sprinkle with cheddar cheese. Bake for 20 minutes. Sprinkle with chives. Bake for 5 minutes more.


PHILADELPHIA® Brownie Cheesecake

Prep Time: 15 min
Total Time: 5 hr 40 min
Makes: 16 servings, 1 piece each

1 pkg. (13x9-inch pan size) brownie mix (I made my brownie mix from scratch, but this is the easier way LOL)
4 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1 cup sugar
1 tsp. vanilla
1/2 cup Sour Cream
3 eggs
2 squares BAKER'S Semi-Sweet Baking Chocolate, melted, cooled slightly (I used caramel drizzled on top)

PREHEAT oven to 350°F. Line 13x9-inch baking pan with foil, with ends of foil extending over sides of pan. Spray with cooking spray. Prepare brownie batter as directed on package; pour into prepared pan. Bake 15 min. or until top of brownie is shiny and center is almost set.

MEANWHILE, beat cream cheese, sugar and vanilla in large bowl with electric mixer on medium speed until well blended. Add sour cream; mix well. Add eggs, 1 at a time, mixing on low speed after each addition just until blended. Pour over partially baked brownie batter in pan. (Filling will come almost to top of pan.)

BAKE 40 min. or until center is almost set. Run knife or metal spatula around rim of pan to loosen cake; cool. Refrigerate 4 hours or overnight. Let stand at room temperature 30 min. before serving. Lift cheesecake from pan, using foil handles. Drizzle with chocolate; let stand until chocolate is firm. Cut into 16 pieces to serve. Store leftover cheesecake in refrigerator.

Mine never turns out as gorgeous as the pics, but here it is anyways LOL

ETA: To the poster who was making my chicken patties: I have started using turkey as well. It makes the patties more moist.
