Add me to the list of sickies with the stomach bug :sick: ~ today is the first day in a week that I even remotely feel like cooking. I couldn't eat for about 5 days and finally went to the doctor...he gave me Phenergan because I was on the verge of needing to go in for IV fluids and he was hoping to avoid that. That stuff definitely does the job but wow, does it make me all loopy!! :dance3: LOL!

I did pop a nice size chuck roast in the crockpot this morning with some hickory honey BBQ sauce that everyone can make sandwiches with later.

I am tempted to run out and buy the ingredients for the brownie cheesecake that remyandhollandsmommy posted...I know everyone here would go crazy for that!! :thumbsup2

Tonight I'm planning on a pork tenderloin in a creamy tomato basil sauce with rice and a broccoli cheese casserole.
 
The other night we ended up having cheese burger macaroni. I've been wanting sloppy joes for awhile. We'll probably have that with some chips. Maybe some sliced apples and caramel for dessert.
 
Well the BLT soup got mixed reviews at my house. DH, DD9 and I loved it! The twins (DD's4) and DS7 hated it. However, since I loved it, it's a keeper!

Dinner tonight will be Kielbasa Tortellini Alfredo with green beans and whole wheat rolls. I can't wait!

I'm going to post the recipe for the soup, because I liked it, and hope some of you will too!

BLT Soup

3 Tbs. butter
2 tsp. vegetable oil
3 C. cubed French bread
1 pound bacon, diced
2 C. finely diced celery
1 medium onion, finely chopped
2 Tbs. sugar
6 Tbs. flour
5 C. chicken broth
1 jar picante sauce
1 can tomato sauce
1/8 tsp. pepper
3 C. shredded lettuce

In a large saucepan, heat butter and oil. Add bread cubes; stir until crisp and golden brown. Remove and set aside. In the same pan, cook bacon until crisp. Drain, reserving 1/4 cup drippings; set bacon aside. Saute celery and onion in drippings until tender. Addd sugar; cook and stir for 1 minute. Stir in flour; cook and stir for 1 minute. Add broth, icante sauce, tomato sauce and pepper; bring to a boil. Boil and stir for 2 minutes. Just before serving, add the lettuce and heat through. Garnish with croutons and bacon.

Instead of using the bacon as a garnish, I added it back into the soup. It was really good! Next time, I'll shredd the lettuce a bit finer, as some of my lettuce was a bit chunky! I was amazed at how much this tasted like my favorite sandwich. Yummo!!! DH took all the leftover soup with him to work for lunch. I was bummed when I realized that! Oh well, at least he liked it.

I'm going to try a new recipe - a one skillet thing with ground beef and rice. Hopefully it will be good. I tried a new recipe last night for hot chicken salad, which sounded awesome on paper but wasn't very good 'in person'.

Tonight we are having big salads topped with blackened shrimp. The dressing is lite raspberry walnut - that is my favorite right now - I can't get enough of it! Also we will have toasted cheese bread on the side.
 
Yes! I got it from a Paula Deen book. It sounded so good but tasted like mayo straight out of the jar, even though I used less than the recipe called for.


Hmm, I have a recipe like that one (a family one, not Paula Deen) and it doesn't taste so bad, I actually been craving it. I am sorry you didn't like it...maybe I like mayo too much!!! :love: :rotfl:
 
Tonight I am making a (chicken) sausage, potato, tomato, green bean, and onion stew, served over fried polenta. I was trying to think of something to ward off the cold--it's going to be -30 with the wind chill here tomorrow!

Do you eat it plain, or make sandwiches out of it? Maybe if it was in bread or something the mayo would be less overwhelming. I may give it another try and use even less mayo, and mix in a little cream cheese to cut the mayo taste.

We generally serve it over rice...would you like me to post the recipe so you could compare?

Let me know if this is the same as yours....I was planning on serving this at an upcoming party but if you do not like it I won't (DFi and DS have never had this, I haven't had it in years)...

Hot Chicken Salad

4 cups cooked chicken breast, diced inton 3/4 inch cubes
1 TSP salt
1/2 TSP pepper
4 cups diced celery
1 cup slivered almonds
1/4 cup minced onion
4 TSP lemon juice
2 cups mayo
1 cup grated cheddar
2 cups crushed potato chips


Mix all ingredients, except chips and cheese. Put in a baking dish and top with chips and cheese.

Bake at 450 for 10 - 15 minutes, until cheese is bubbly...

You may add green olives if you like.

Serves 12...my family usually serves this with rice.

That's it, although my recipe made a smaller batch so the measurements are different. The proportions are the same though...mine was 2 cups chicken and 1 cup mayo. Your proportion of celery is more than what mine was, so that could make a difference.

Make it for the party! I checked the Food Network site for reviews, and most people loved it. Maybe I'm just a weirdo!! :laughing:
 
I am making baked salmon and rice today. I may marinate the salmon in teriyaki sauce first :)

Not sure about tonight. Maybe out for pizzza, maybe some chicken parmigana, maybe frozen pizza??? We'll see. I ended up making the Bruschetta Chicken bake last night, and it wasn't great. A new recipe out of the Kraft food and family magazine. It was all-right, but not outstanding! TGIF all!:cool1:
