Today is going to be unseasonably warm so I'm grilling :yay: I think I'm going to do grilled pizza. I have to take a field trip to Costco for toppings. Oh the possiblities. I know my son will have his staple .... Cheese pizza but for me maybe something more exciting. Maybe I'll make them small so I can eat more then take wild dog for a walk.
 
Hi, guys, long time reader here. I've gotten many, many good ideas from y'all and really appreciate y'all taking the time to post so many great recipes!

I have a quick question if y'all don't mind. I bought some chicken and cheese ravioli from Sam's and now don't know what to do with them. Do I just add some jarred sauce to them or does anyone have any good ideas?

I appreciate your help!!

It's going to be pretty nice here too. I am trying to not buy anything this week, but the grill is just BEGGING to be used.

I think I'll grill hamburgers with all the fixings (cheese, mushrooms, onions, bacon) and serve it with some Lays potato chips and a green salad. I can't wait for the REALLY nice weather.:banana:
 
Supper here is "grab whatever you can" tonight. I have a busy day today, dh is working late, and ds has karate. I have a feeling it will be cereal and toast, lol.....gourmet huh?!!?

~Heather- welcome as well- mmmm chicken and cheese ravioli, I would mix them up with some spag sauce a little more cheese and some fresh basil! A great yummy quick supper, almost like a chicken parm. have some nice crusty bread and a salad on the side. Let us know what you do with them!!
 

Morning all! I never got the grill fired up this weekend and it's begging to be used today. If only I can figure out how to get the grill going and chase around a toddler at the same time I'm golden! DH is out of town (again!), so he'll be no help with the kiddos!
 
Crockpot Southwest Chicken tonight here. All the outdoor sports started and practice is always around dinner time.:sad2: For the next 10 weeks ev:sad2: everyone is on a different dinner schedule.
 
not sure about tonight...DH has bowling, DD17 is working and I'm taking the little girls to bingo night at school. Probably something quick for them and leftovers for me.

Last night I made Eggplant Pasta....pretty good if you like eggplant

Eggplant Pasta

2 large eggplants, peeled and chopped into 1 in cubes
4 cloves of fresh garlic, chopped
4 T olive oil
1 T oregano
1 can whole plum or crushed tomatoes (your preference)
salt & pepper
1/2 cup chopped fresh parsley
1 lb pasta (I use whole wheat)

In a large skillet, on medium heat, add olive oil, garlic, oregano and eggplant and cook for about 20 minutes or until eggplant is cooked and soft. Add more oil if needed.

Add pasta to boiling, salted water

Add tomatoes to eggplant. If you use whole plum tomatoes, use the back of a spoon to break up the tomatoes. Cooka nd stir often for 10 minutes. Season with salt and pepper.

Add about 1 cup of the pasta water to the eggplant/tomato mixture. Add cooked pasta and cook all together for 2 minutes.

Add parsley and serve!

Tonight I am going all out and making hot dogs! I do not know what else, I was thinking maybe broccoli salad but all that may not be good on the stomach!!! :)

Nancy, DF cannot even make these (hot dogs)...he thinks you have to cook them for hours!!! He is very spoiled but he is good at making popcorn and bay breezes so I think that makes up for his cooking skills! :rotfl:

I am going back and forth between pork chops of some kind and baked chimichangas with a black bean and corn salad. I looked for something to do with the chops yesterday but I didn't feel like cooking, so today I am going to have to hit the stove!

Tonight I'm going to try Gylnis's Chicken in Basil Cream (at least I think it was Glynis's....) I'm really looking forward to that - it sounds so good. We'll just have a green salad with it.

The sap is like a lightly sweetened water. The evaporator that Dale uses can process about 70 gallons of sap per hour, so that is between 1 and 2 gallons of syrup depending on how the tree was.

Nancy, Now I understand why it costs so much!!!! My DH loves maple syrup! He wanted some yesterday in his oatmeal & all I had in the house was Aunt Jemima Lite! He started his day in a rather GRUMPY mood!

Ladies, I was telling you how hungry Buddy would be when he got home, and how spoiled he is and now he is sitting down to the meal I have slaved over for the past, oh I think about 5 minutes, tuna sandwiches and left over steak sandwiches.....which he must make himself because he can't stand to watch me fit every corner of the bread evenly :lmao::lmao:! Yep, I weaseled out and offered leftovers while I took a long hot bath. I'll try again tomorrow.

Sounds like a win, win situation to me!:goodvibes

You can add jarred sauce to them if you like. I do have a recipe for Fiesta Ravioli. I'm not sure if I posted it here already or not. I'll check and if I haven't I'll post it. It's really simple, and you can make it as spicy or mild as you like.
 
Dinner tonight is Sweet and Sour Popcorn Chicken. Something my kids like and very easy! I'll post the recipe if anyone wants it.

I checked the index, and I've never posted my Fiesta Ravioli recipe, so here it is:

Fiesta Ravioli

1 pkg. (25 oz.) frozen beef ravioli (any flavor will do, though)
1 can (10 oz.) enchilada sauce
1 jar (8 oz.) salsa
2 C. shredded Monterey Jack cheese
1 can (2 1/4 oz.) sliced ripe olives, drained

Cook ravioli according to package directions. Meanwhile, in a large skillet, combine enchilada sauce and salsa. Cook and stir over medium heat until heated through. Drain ravioli; add to sauce. Top with cheese and olives. Cover and cook over low heat for 3-4 minutes or until cheese is melted.

Enjoy!
 
cepmom, that used to be one of my favorite pastas, except I used basil instead of parsely. Thanks for the reminder! I'm going to have to make it again soon.

Tonight we are having fajitas AGAIN with guacamole, roasted poblanos, sauteed onions, black beans and queso fundudo. I don't know why we've been on a fajita kick lately, but we have been!

Last night I made Glynis's pot roast and my family loved it. Tonight they are having left over roast and I will make some gravy and fix rice and possibly the microwave carrot casserole.

Glynis, my husband loved the strawberry cake/vanilla pudding combination. I wasn't really feeling like eating anything yet, so I didn't taste it myself. I hope it reheats well as we have a lot left over.

Sheryl - I got the scallops from Sams, they were frozen but tasted very fresh!

Steph - thanks for the jasmine rice recipe, sounds yummy.

I took some frozen bolognese sauce that I made a few weeks ago out of the freezer, just have to cook some spaghetti and whip up a caeser salad and garlic bread!

HERSEY ~ Good luck with the grilled pizza. Flattening out the dough was my biggest problem. I don't know what I do wrong. I was really afraid it was going to stick to the grill (everything sticks to my grill) but with the olive oil it didn't stick at all.



I'm trying a new recipe tonight. It's Smarter Fettuccine Alfredo from Kraft Food & Family magazine. I think I'm going to saute (or grill) some chicken to add to it. And baby peas for a veggie. I'll post the recipe tomorrow if it's good.

I'm so glad the pot roast was a hit!!! Thanks for the strawberry/vanilla recommendation. I think I might try an orange cake/vanilla pudding combo this weekend! Cake mixes are on sale this week! Hope I can find orange!!!

I'm glad you're trying that recipe! I saw it, too, and wondered about it! I can't wait to hear if it's good.
