Strawberry Pie
2 9" deep dish pie crusts
2 c. water
2 c. sugar
6 T corn starch, dissolved in small amount of water
1 lg. package instant strawberry jello
2 quarts fresh strawberries
1 tub Cool Whip
Prebake pie crusts according to package directions. Let cool. Wash, dry and cut larger strawberries in half if necessary. Arrange in cooled pie crusts. In a medium saucepan, bring water and sugar to a rolling boil and add corn starch a little at a time. Stir constantly to avoid lumps. Cook the mixture until it has a very thick consistency and then remove from heat. Add in the strawberry jello powder and let cool. Tip: if you're in a hurry, you can stick the saucepan in the freezer for about ten minutes to help it cool down quicker. Pour the strawberry mixture over the strawberries. Place pies into the refrigerator and let them sit overnight. Top with Cool Whip before serving.
