ok help me out here, I dont bake much but I can follow directions.
The Preschool teacher called me to see if I thought DS5 was going to be in on Friday bc she forgot to tell me on Mon that I have Special Snack Day on Friday

when I call him in sick.
She is trying to switch me to next week but it is with a mom that works PT as a lawyer so who knows what her schedule is like.
So she said it needs to be something DS5 and I like to make together(umm reservations

) but they get cookies all the time and cupcakes arent allowed, too crumby.
Now MINI muffins are allowed

and my mom says she has the mini tins. I guess I can follow the recipe. I dont really make baked goods bc DS10 doesnt like them, DH is always on a diet.
Any other ideas? The teacher was asking if DS liked chex mix,

got me. He doesnt really like fruit that doesnt yellow, he only like apples and bananas.
Errr why cant I buy something. I am VERY good at buying snacks
And dont anyone suggest raw cookie dough
My friend Betty Crocker has these pouches you only have to add 1 or 2 things to and makes the mini muffin possibility VERY easy
I also made this past weekend an apple cake that would work well as cupcakes/muffins too - you take 1 yellow cake mix - make as directed - add to batter 1tsp each of vanilla and cinnamon (I just poured, didn't measure) and 2 chopped/diced apples. Bake at 350 - check box for time for cupcakes. Instead of making in a cake pan you could do muffin tins.

Celery sticks filled with either peanut butter, cream cheese
and topped with raisins, apple dices, seeds, nuts, banana dices etc..
HOMEMADE FRUIT JIGGLERS - or do the Jello ones (on back of box!)
2 cups fruit juice of your choice (100% Natural Fruit Juice Only!)
3 tsp powdered gelatin
1/4 cup small cubed fruit of your choice (optional)
Place 1/4 cup of the juice in a cup; sprinkle gelatin over juice.
Stand cup in a small pan of simmering water, stir until gelatin is dissolved.
Stir gelatin mixture and fruits into remaining juice in a medium bowl or square/rectangular pan.
Refrigerate until firm.
Cut into cubes (dice size) or cut into shapes to serve
YOGURT CEREAL BARS
2 cups corn flakes - 3/4 flour - 1/4 cup firmly packed brown sugar
1/2 teaspoon cinnamon - 1/2cup butter or margarine
1 cup flavoured yogurt (banana/strawberry etc..) - 1 egg slightly beaten
2 tablespoons flour
Preheat oven to 350F
Combine cereal, 3/4 cup flour, sugar and cinnamon in a small bowl.
Cut in butter or margarine until coarse crumbs form.
Press 1/2 the mixture firmly into the bottom of a greased 8inch square pan.
Mix yogurt, egg and 2 tablespoons flour in another small bowl.
Spread over cereal mixture in pan and then sprinkle the remaining cereal mixture on top
Bake for 30 minutes or until golden brown; cut into bars when cooled.
