The recipe sounds yummy and all, but seriously gang, what is corned beef??? I don't even know if they have that at our grocery store---never seen it before.

My Trip to Ireland.

I grew up in a tourist town in the Lakes Region of NH. One of the companies that had a lot of business on the lake used to hire college kids from the Univeristy of County Cork in Ireland to work for them for the summer. They all stayed in a rooming house across the street from the boardwalk. One summer (I think it was the summer before jr. year of college) my friend Tim worked for this company for the summer. I ended up dating an American that was staying in that house (we broke up before the end of the summer) so I was at the house all the time when the Irish kids started moving in. And I pretty much was there every day. I used to take them grocery shopping and day trips to see NH. We all became really good friends. Fast forward to late that fall. Tim calls and says he's going to Ireland for winter break, do I want to come? The ex BF and another guy that was dating one of the Irish girls were going too, but on their own. So that's how I ended up in Cork Ireland for a month. Tim and I would stay 2-3 days with each Irish friend in either their college apt or at their parent's home. Plus all of us rented a house in the country for New Year's eve weekend. And Tim and I went to London for 3 days. It was truely a wonderful experience, in part because we didn't get treated like tourists. I have a really funny story about a guy trying to hit on me at a pub and where the music died down enough for him to hear my American accent he about died. He thought I was Irish!

Unfortunately the internet was just beginning back then so we have lost touch with all these wonderful Irish friends. I'm hoping that once my house is not a war zone I can find something with some of their last names on it so maybe I can find them on the internet now.
 
What a great story; that sounds like an awesome trip.

Are you of Irish descent, just out of curiousity?

Hi Lapuettes! I just wanted to check in with everyone while I had a down moment. I'm glad to hear that everyone is doing well.

I finally got off my lazy butt last week and joined the local gym. I'd been wanting to do it for ages, but kept putting it off. So far I've only gone for some aerobic exercises, as I have my complimentary consultation tomorrow night after work when they will make a work out for me. I took a Zumba class Saturday which was a blast. I can't wait for the next one. I much prefer taking dance-like classes instead of sitting on a machine for my aerobic work-outs. Sunday I manged to get myself flung off the treadmill twice. I felt fine at the time, other than a skinned leg, but Monday I woke up and felt like I had been beaten up. Today is the first day I'm really feeling better. Managed to get some lovely bruises on my knee, hip and collarbone all about the size of a desert plate. I think I'm going to try a bike tonight. :laughing:

Thanks. My mom thinks I'm crazy that I even posted on Facebook about my fall, but truthfully I think it's a bit funny. Especially as I didn't really get hurt more than a few bruises and some sore muscles. I felt like a big fool though.

I do silly stuff like that all the time. I'm famous for tripping and falling over anything. Recently, Ruby has been on a mission to trip me and I know she will succeed one of these days.
 
Hey everyone! Here's one of the recipes I really loved.

Meatball Soup

Here's a copy right here, but I wanted to link to the original post as well, because it's from a great thread with some excellent suggestions.

Meatball Soup
2 Cans Beef Broth, you may add a 1/2 can water if needed
1 large jar chunky salsa, we use medium heat
1/2 bag frozen meatballs (save the other half for spagetti or beef stroganoff)
2 cans (drained) or one frozen bag whole kernel corn
2 tbl garlic
Pepper to taste (didn't need any salt)

Mix all in crockpot and set on low for 6 hours. Can also prepare on stovetop and bring to a boil, then simmer for 2 hours.

We served with crushed corn chips, sour cream and cheddar cheese on top. Super easy!

Another WONDERFUL site is this. This woman used her crockpot every day for a whole year. I've tried some of the recipes and some have worked great and others not so much. When I have more time (as in when I'm not scrambling to post on the DIS before work) I'll let you know which ones I did try.

Glad you all like it! I have to say, that year of crockpotting has some GREAT recipes, and then some that haven't turned out so good for me, but that could be due to different crockpots, etc. I'll check out more when I get home. :goodvibes

Happy Saturday gang!!! Today is a big day in our household---the annual Father/Daughter dance!!! Megan is SO excited---she even asked me to paint her fingernails last night!!! I will surely post pics of them later when they are all dressed up!

Since June hours are officially out---I KNOW what all our little "Junebugs" are doing today---Planning, PLANNING, PLANNING!!!! Have fun!!!

Hey---has anyone heard from Lara lately??? She hasn't even really started her TR yet---I hope all is well in Sarilas land!!!

Hi, Jen! How sweet! A father / daughter dance. I'd love to see pictures when you have time to post them.

I haven't heard from Lara, I know that she got sick after they came back, and this cold virus can really do a number on you. Mine turned into a sinus infection, and I just finished my antibiotics yesterday.

This year's theme is "A Night Out on the Town," so all the girls were told to wear fancy dresses, and Dads to wear their finest too!! I hope the pictures come out okay for you guys---they look awfully dark on my computer, but I am hoping that it is just my monitor. They really did look adorable!! She was so excited and kept blushing and smiling sweetly as they were leaving. She even told him that he would have to hold her hand since they were on a "date!" My...where DO they pick up on all this stuff!!! I can't wait to fill you all in on the details!

I wonder if these dances are a southern thing....this is the third one I have heard of this month south of the mason/dixison line!
