Cupcake Recipe




Original Recipe Yield 2 dozen cupcakes
Ingredients
1 1/2 cups all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon sea salt
1/2 cup butter, softened
1/4 cup white sugar
1/2 cup brown sugar
1 egg
2 teaspoons vanilla extract
1 cup miniature semisweet chocolate chips

1 (18.25 ounce) box yellow cake mix
1 1/3 cups water
1/3 cup canola oil
3 eggs
Directions
1.Whisk together the flour, baking soda, and sea salt; set aside. Beat the butter, white sugar, and brown sugar with an electric mixer in a large bowl until smooth. Add 1 egg and the vanilla extract and beat until smooth. Mix in the flour mixture until just incorporated. Fold in the chocolate chips; mixing just enough to evenly combine. Form the dough into tablespoon-sized balls; place onto a baking sheet, and freeze until solid, about 2 hours.
2.Preheat an oven to 350 degrees F (175 degrees C). Line 24 muffin cups with paper liners.
3.Beat 3 eggs in a large bowl with an electric mixer to break up. Add the cake mix, water, and canola oil; continue beating for 2 minutes on medium speed. Spoon into the prepared cupcake liners, filling each 2/3 full. Place a frozen cookie dough ball on the top center of each cupcake.
4.Bake in the preheated oven until a toothpick inserted into the cake portion of the cupcake (not the cookie dough ball) comes clean, about 20 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

Frosting

Ingredients
4 (2.05 ounce) bars milk chocolate covered caramel and nougat candy bars (e.g. Milky Way®)
1/4 cup butter
1 tablespoon milk
2 teaspoons vanilla extract
1 1/4 cups confectioners' sugar
Directions
1.Place candy bars, butter, milk and vanilla in a microwave safe bowl and microwave on High for 30 seconds; stir. Heat for an additional 10 seconds, remove the bowl from the mircrowave and stir again. Add confectioners' sugar and stir until smooth and creamy.

I'm becoming too lax as a boss.

It's 8:15 and only 3 of my staff have arrived yet. And one of them doesn't count. The accounting manager did show up but he forgot his keys at home (to his desk and file cabinets) so he has to leave anyway.

I bet if I had brought donuts, they would have all shown up on time.

Good morning, Ev-No's! Well, I guess it is officially afternoon now! I hope you all had nice weekends. :goodvibes Mine was uneventful. We stayed home, watched LSU on TV Saturday night, but that's about it.

Pakey - Sorry your little guy found the only carpet in the house to get sick on. :eek: I hate when that happens with my cat. When we moved to our house 3 years ago, I decided that he was not allowed in any of the BR's for that very reason. It's a pretty easy rule to follow with just me and my DH living here, and now we are just in the habit of closing our BR door every rime we go in or out. I know I sound like a mean pet parent, but my cat would never be allowed to sleep with us anyway (DH doesn't like cats), so it's not too bad. Of course, he has found my LR and DR rug to get sick on a couple of times. ;)

lara - Good to see you back! There hasn't been a whole lot of posting going on, so I hope you can catch up quickly!

diva - I bet it was very moving hearing from someone who was actually in the Pentagon during 9/11. :sad1: I can't believe it has been 9 years already. Thank you for the cupcake recipe! When I first read that you made them, I was thinking that I would have to have that recipe! So thanks to all the sweets-lovers who beat me to the punch! I can't wait to try them. :hyper:

rodeo - OF COURSE you have to do a trial run with the cupcakes! :rotfl2: That's what I'm planning to do, at least. ;) I have Pokeno at my house next month and I think that will be my dessert. But I will make them beforehand, possibly this weekend!

autumn - I am gradually getting into the online shopping thing. The only bad thing is if you have to send stuff back. I like it when I can return to a local store. But you can't do that with most online shopping. Do you order from QVC at all? My DGF is a QVC nut! Well, have a great day at school! :goodvibes

I showered and washed my hair this morning, went to workout, sweated like crazy, and now I have to do it all over again because I have a dr.'s appt. this afternoon. I'm going to a foot dr. for the first time in my life. That's when you know you're getting old - when you have feet problems. :rotfl2: I really think I just needed to buy some new tennis shoes earlier. :sad2:

I haven't had a chance to go back and read all the posts. I just wanted to pop in and say hi before this whole week is gone! I have been subbing everyday this week and will through the rest of the week. So between that and soccer and track and homework and everything else this week has been crazy to say the least. :faint: No time to even think about Disney. :scared1:

I'll be glad when Friday afternoon gets here!!

Teri: I've never ordered from QVC, we don't have it here in Canada but we do have TSN or The Shopping Channel which I used to loooove to watch when I was young and I wanted to be a program host. See my tag.:rotfl: I don't watch it much anymore, for some reason I am not quite as interested in pots and pans and faux diamond jewelry as I was when I was 7! Go figure!:rotfl2:

I can just see some of you thinking, "Emily Who?" Has TBird lost her feathers? :laughing: For those of you under a certain age, Emily Litella was a character on Saturday Night Live from the 70's played by Gilda Radner. She would go on a rant about something, then realize she was totally confused, and say "Never mind!" in her little old lady voice.

Well, I was having a blonde moment about the posts disappearing. I was mixing the Ev-No thread up with Shelly's PTR. Sorrrrry!! :blush:
