Hummus question again...for those of you who have made your own, how long is the frig life on this stuff?

Ann, It'll keep 2-3 days. I'm making some for dinner tonight. I think I might try adding calamatas to it, too! :goodvibes
 
Well dinner tonight may not be on the grill, we are in the middle of severe TS and tornado watches and warnings. Already had a line of storms come through and several reports of tornadoes. Hopefully our electricity is not out, there are power outages all over.

I am going to try something new tomorrow night...brining. My DM brines alot of her meats, I have never done this but am going to try it with pork for dinner tomorrow night. Do any of you do this on a regular basis? DM swears it makes a huge difference. Any one have tips?

Brine recipe
1/4 cup brown sugar
1/4 cup salt
8 cups water
bay leaf

Rinse the meat before you cook it. I brine my chicken. I have heard pork chops are really good. Let us know how it turns out.

There were lots of little limbs and leaves on the ground when I left work. For some reason my mother has a big plastic bowl on the table on the deck, there is about 2 inches of water in it. :eek: It only rained for about 20 minutes earlier today.

My sister brined a turkey one year for Thanksgiving, it was sugar, salt, oranges and lemons. It was pretty good.

I had the best roasted beets for dinner. I added some Vidalia onions to the pan and they turned out so tasty.
 
Oh Bathing Suits.:scared1: I just went on to Land's End and used the virtual model to pick out & buy a suit! Even that was depressing!

I can't find the virtual model thing on Lands End. Is it in some special, secret location? Or maybe it just doesn't work with Macs.

Brining is great! It prevents the meat from drying out.

Dinner tonight was less than gourmet. Caili and I got stuck in bad traffic returning from skating, so I just made boxed Annie's mac and cheese and an apple and carrot salad.

Merle- I hope that you are safe. I saw the reports of treacherous weather and it was not pretty. That had to be frightening.
We lucked up, I think. Yesterday a farmer in town told me he was worried because he heard 2-4 inches. We just had steady rain, nothing that would cause harm.

For the most part dinner was good. Stuffed peppers, beets, green beens, leftover potatoes and salad. I also made a barley "risotto". Oh Man! It was horrific! Barley cooked in my homemade chicken stock with canned pumpkin. It got good reviews on Recipezaar so I thought the girls would like it as a side. :crazy2::scared::crazy2:. I could not even eat it, Buddy's face was :scared1: The girls threatened to come over and review it for you if I did not.

Kady would not touch anything, she had her mac and cheese.

Yes, brining is awesome. It will make the meat much more flavorful. I do wet brines on the pork I cook for John--24 hours. I use the same ingredients you have listed, as well as a good amount of red pepper flakes and sometimes juniper berries. Just make sure you get all the bay leaf off the meat before cooking it. To get the best flavor, you have to crush up the bay leaf, but the crushed leaves can have sharp points that can get stuck in your throat. For poultry I prefer a dry brine like the zuni chicken recipe I posted on the original old thread.

As planned, I made a recipe from the Mickey cooks with Disney Chefs book tonight for a sesame honey chicken. I used tofu. Well, I was about 90% done with cooking it when I realized that it was just a recipe for basic sweet and sour chicken (aka SWEET and only a little bit sour). Luckily, I had made the vegetable fried rice really spicy, so when I combined the two, the flavors were balanced (though still sweeter than I like!)

John called me a couple of hours ago and said he has had enough Chinese food to last him for about the next year. Maybe it's those chilis in the crab dish talking ;)

We're all good here. :thumbsup2 Watching the news and lots of downed trees and people without electricity. There are two counties that have closed schools for tomorrow. It was pretty intense when the first storm came through. I had pulled up the blinds in my office to watch the storm, keeping an eye out for tornadoes, then realized that might be a bad idea. Lots of trees right outside the window. :scared1:


I had the best dessert and forgot to tell you all about it. It was Cake in a Jar. The lady who had Bunco Friday night makes them. It was chocolate in a jar people :love: I haven't gotten her recipe yet but it was chocolate cake with a hot fudge center to it. It's baked in a canning jar, then when it is taken out you put the lid and ring on it and the heat seals the jar.

I looked it up online and it looks like you can make just about any cake in there. My friend has a friend who is having a baby and she wants me to make her some desserts and I think this will be a good thing to make her. I am thinking of making chocolate cake with peanut butter cups in them and some of the hot fudge ones too.
 
Tonight I am making vegetable soup. I am going to try and make it in the crockpot this time and see what happens.

DN is playing today, they need to win today to make playoffs which will take place Saturday. Not sure if we will be able to go. We are having trouble with our central air and a repairman is coming between 2-4, and the dog groomer will be here too. Poor scheduling on my part but I did this before the rain cancellation yesterday. They are predicting 90 over the weekend so it needs to get fixed.

WFD- Boneless BBQ pork ribs (brining as we speak), oven roasted sweet potatos, and corn on the cob (which I still have not used).

WFD - The plan is PF Changs for a belated bday dinner for Kyle, however, he's headed to Baton Rouge with a gang of boys to hang out at a water park today, so we'll see what time he gets home and how tired he is.:rolleyes1
