Here is dinner from Friday. It is tuna and mahi mahi, with a golden curry sauce, some jasmine rice, arugula, and naan:

Becky, Can you tell me how you made this golden curry sauce? Was it better with the tuna or the mahi ?( or great with both?)

And yes, I want to see St John non-food photos too!!!!
 
Nancy, what is your recipe for spaghetti salad? My husband's family all love spaghetti salad and so I am curious how you make yours. Their recipe has lots of olives, and a white sauce.

Hi All! Happy Memorial Day...We are remembering our Dads and all of the others that have served and are currently serving in the Military with sincere thanks and gratitude.

We had a really good time at our friends BBQ yesterday...they had a ton of food and they served their chicken wings and flank steak also. I have shared the recipe here...I think Laura makes the wings.

Aimee, Hugs for you. What a sad and tragic accident that you shared. Prayers go out to the girls family too.

Beck, what can I say? Your pics are AMAZING! Love the cocktails with the seaside back drop!

We are trying to catch up today...A has a game and I think I will make the sausage peppers and onion subs and pasta salad that I never made the other day.

Andrew is going through that stage too and is trying my nerves lately. He left chocolate muchkins in the reach of Riley and yup, Riley ate them. Chocolate can be fatal to dogs but I think he will be OK. I am praying really hard today for patience. I think he cannot wait for summer break...3 more weeks!

I am ok, I loaded up my dessert. It was yummy. Speaking of which, here's the recipe:

Death by Chocolate


  • 1 (18.25 ounce) package chocolate cake mix
  • 1 cup coffee-flavored liqueur *this will seem like WAY too much, but I promise it isn't*
  • 2 (5.9 ounce) packages instant chocolate pudding mix
  • 6 (1.4 ounce) bars chocolate covered toffee bars, chopped
  • 2 (12 ounce) containers frozen whipped topping, thawed
  • 1 (1 ounce) square semisweet chocolate *you can omit this if you want*
  1. Prepare chocolate cake according to package directions, and bake in a 9x13-inch pan. Cool. Cut into squares and pour coffee-flavored liqueur over cake. Prepare chocolate pudding according to package directions.
  2. In large trifle bowl or other glass bowl, crumble half of cake. Top cake with half of chocolate pudding, half of crumbled candy bars, and one container of whipped topping. Repeat layering. Shave chocolate with a vegetable peeler for garnish. Keep refrigerated until serving.
***IMPORTANT: Make sure you make this in an actual trifle bowl. It is HUGE!!!!!!!!!!!!!*

Liam's team lost for the first time Saturday, 12-0. The opposing pitcher was incredible. Liam only got to bat once, and he struck out.

When we get back, I am having grilled cornish hen, mango salsa, eggplant sticks, cumin carrots and probably some more of Beck's fried rice. (Yes, this is the same meal Becky and my parents are having...Mom sent me home with tons of food.)

Well, I am off to my chauffeur's job...

I was surprised she actually went on it. Her Dad had told her about it:rolleyes1 , and daredevil that she is, she begged to go. Chris had her stand outside & showed her how high it went & tried to explain & talk her out of it. But she insisted she wanted to do it. She cried on the ride & after. But then said she wanted to do it again! Chris wouldn't let her. Later she decided it was too scary & she would never do it again!

tonight is going to be fish and chips.

I cut up some russets and have them soaking in water and a little viniger.

I will par fry them and pull them out

Then I'll use a beer batter on some mahi mahi

beer, flour, salt, pepper, pinch of cayne to a sticky batter, cover and fry till golden brown, remove.

Then finish the fry's... :)

Probably serve with some steamed broccoli

I just looked up I thought I heard rain but the sun is shining and sure enough it is pouring. I have a soggy cat right now. He was napping in the sun.:rotfl:

I really hate when they move the smilies around.

We are having flank steak baked potatoes and some kind of veggie.

The humidity right now must be 1000 %! My ac vents are dripping, I'm having to go around the house with a sponge mop & dry them off. We might just have salad for dinner.

Janice, I'll do TOT, but I'm always sorry right after that 1st drop! And I always feel bad for the kids on the ride with me. Not worried about them being scared but because of the word that inevitably comes screaming out of my mouth! OHHHHH, SH******T!!!!!!!!!!:scared1:
 
Shrimp Salad

1 cup sour cream
1 cup mayonnaise
1/2 cup minced onion
1/4 cup minced celery
3 tbsps ketchup
4 tsps lemon juice
3 tsps horseradish
1 tsp salt
3/4 tsp ground black pepper
1 1/2 pounds medium shrimp, cooked, peeled, and deveined
1 (16 oz) box elbow macaroni, cooked and drained

In a large bowl, combine sour cream, mayonnaise, onion, celery, ketchup, lemon juice, horseradish, salt, and pepper. Stir in shrimp and macaroni noodles. Cover and chill for at least 4 hours before serving.
 
Anyone here make their own mustard or mayo? I just started doing it a little while ago, and I doubt I'll ever buy store bought of either again.

Glynis- Happy Anniversary! So much to celebrate....a wonderful marriage, lovely children and another blessing on the way. Too bad that your MIL managed to insinuate herself into a weekend that was not about her and ostracize herself from her son as well :sad2: My DH mother is like that. He very seldom sees her and speaks to her only when he cannot avoid it, but each time she screws it up and he moves further away. It is a shame. He is like Alan, a family man who believes that family is the heart and soul of life so he would move mountains if she would just be nice.

Aimee- my heart breaks for this poor family and he loss that they have suffered. I have offered prayers for them and for your Church family as well.

Kathy- when there are ball games plans are never going to be stable. I am sorry that you are going to miss some of Kyle's games. I would not leave your Sammie alone either. You would be worried the entire time and she would be scared.

Becky- your food looks way too pretty to eat. Seriously, any one of those dishes could be on the cover of Bon Appetit Magazine. And let's not talk about your cocktails...............

Thank you all for your thoughts about Buster. I have never had to let an animal go before and was so afraid for him. Buddy said he still remembers his dog's eyes when had to take her. I know that they trust you and I hope that I did not make him wait too long. I would never forgive myself if he suffered.

Nancy did such a good job that I'll ditto her post and add that I'm so sorry to hear about Buster.

I made the turkey burger featured on Oprah and it was very good. I also made the vegetable pasta salad that someone (sorry, I didn't write it down) posted for me as a suggestion for the baseball picnic. It was very good. I'm taking the pasta in to work tomorrow to see what everyone there thinks about it.

Thanks again to my new friends for motivating me to try new things. The recipes were fairly healthy and very good.

Love fish and chips! We don't get great mahi mahi here, though, so I make it with cod or haddock. I also made a shark and bake with swordfish that was yummy.

My DH was in the Navy & on a day like today I become even more proud of him.

Anyway dinner tonight was spaghetti pie which I served warm and steak tips that I marinated all day & then we just popped them on the grill.

Dessert tonight was melon & rasberries, simple but yummy on a hot night.
 
Yes, I have made homemade mustard. I usually only make a very easy one at the holidays to serve with the homemade pretzels I make. However, I would love to try a new recipe, if you have one to suggest.

this is the basic recipe I have been using, just changing the type of vinger I have been using in it.

3 tablespoons yellow mustard seeds
2 1/2 tablespoons brown mustard seeds
1/3 cup drinking-quality white wine
1/3 cup white wine vinegar
1 shallot, minced (about 2 tablespoons)
Pinch ground allspice
3/4 teaspoon salt
1/4 teaspoon white pepper

In a non-reactive bowl, combine all ingredients and refrigerate overnight, covered.
Transfer the mustard mixture to a blender and process until mustard has obtained the desired texture and thickness; it is equally delicious whether you leave it chunky or smooth. Store in an airtight, non-reactive container in the refrigerator for up to 2 weeks.


The more brown seeds you use the hotter it will be.
 
I am making Glynis roast, carrots, and mashed potatoes for dinner tonight. It'll be a great day except............

Awhile back, 2 of the tiles in my shower popped up. We procrastinated and finally got someone to come look at it. He is a friend from church who has a remodeling business. LONG story short, he had to rip out the entire shower because of the water damage. Trust me, it was bad.

Anyway, he'll be here bright and early and will have to smell the Glynis roast cooking all day. LOL!! If he didn't have a wife and kids to go home to which probably includes his own dinner, I would ask him to stay and have some :) He'd probably cut some money off of the final total, it's so scrump-taculous!

Good Morning! Quick check in...Riley has a vet appt this morning that I have to get ready for.

Andrew's team lost but we are clinched for 3rd place...we have one more game on Saturday and then playoffs start on Sunday.

We are having cheeseburgers, tossed salad and fruit. I need to get back on track from the weekend...no bread/roll for me!
