Hi!!!

WFD- Parm. pork cutlets with eggplant parm. Some other kinda veggie for my DH maybe salad.

This weather is so gloomy, I need some sunshine!

Thanks ya'll. I miss you guys too! It's just been kinda blah on the road all the time. Rick finally hit his quarterly goals last month so we get weekends home. Big whoop! It's just easier to hang out up here than battle the flights on Friday night/Monday morning. (I'm never happy:rotfl2: )

But we're putting Rick's frequent Flyer/ hotel points to good use- we're headed to Disney 7/31-8/4 for our Pleasure Island farewell trip! We're leaving from Michigan so I had to pack for Disney 2 weeks early!:lmao: HAD to.:lmao:

But tonight's dinner was what I had planned for last night. I gave in when Rick said he wasn't that hungry and instead had cheddar kettle chips with blue cheese dip.

Yea, healthy I know.:sad2:

Lori- I don;t know how you can even begin to eat normally while on the road. I cannot even walk into a restaurant without drooling over the rolls, the chicken wings and then don't even talk about the summer cocktails :lmao:
 

Morning, everyone! It's July 24th which is Pioneer Day here in Utah. We celebrate the day that the pioneers first entered the Salt Lake Valley. It's a big statewide celebration. Unfortunately, I'm not feeling up to the usual round of parades, etc., so the kids and I will do our own thing here around the house.

I usually fry some chicken and make potato salad for a picnic while we wait for fireworks, but I'm thinking that I'll simply pick some stuff up from KFC. Easier and I don't have to heat up my house. I will make some buttermilk ice cream, however. My neighbor turned me on to it, and it is delicious!!!

I have my ultrasound at 10:45 a.m. tomorrow morning. Keep up the good thoughts. I'll let y'all know how it goes once I'm home.
 
I think I mentioned recently that we now have a Seasons Harvest Market, basically a Fresh Market.

I think we have one of those opening here soon. I am curious to see how it compares with Whole Foods.

The weather today is not promising for playing ball. I hope that Liam can get the game in.

They already switched it to Sunday...thank goodness. They were planning to start the game at 8! :eek: Now, I am crossing my fingers that the coach also cancels tonight's practice...:rolleyes1

We are supposed to have burgers tonight, but I am not sure the weather is going to cooperate. I don't know what we'll have if I need to cook indoors.

I'm determined to make that easy indian butter chicken tonight, I am stopping by a whole foodsy market we have to see if they have the tandoori masala that I need.

Today's another crazy day - VBS/Day Camp begins Monday!
 
Here is a picture of last night's chowder. It was really good. I made it creamy by pureeing some of the corn and adding it back to the soup instead of using heavy cream like I normally would. But, as you can see from the bacon, it still would not qualify as healthy! On the side are little sandwiches with gouda cheese and a fruit chutney.

Tonight I am making a mixed vegetable pasta.
 
Here is a picture of last night's chowder. It was really good. I made it creamy by pureeing some of the corn and adding it back to the soup instead of using heavy cream like I normally would. But, as you can see from the bacon, it still would not qualify as healthy! On the side are little sandwiches with gouda cheese and a fruit chutney.

....we 'went German' last night.....I made Sauerbraten, red cabbage, potato dumplings, and noodles (with gravy)...
 
Liam's practice was canceled. :yay:

Grilling isn't an option though, so I picked up some flounder at the fish market. I haven't decided how to make it -- Caili wants me to fry it -- but for sides we'll have green beans, tomato salad and bread.

We have so many Holiday Inn points they normally upgrade us to a suite that has a microwave and a mini fridge. We stock up at the Kroger down the street and I cook in the room mostly. Otherwise there's no way I'd be able to travel like this. Between the microwave and the occasional grill(at the park next door) we do pretty good. It's lunch on the road that's a challenge. They really don't make much that's healthy AND easy to eat in the car. Heaven help me if I suggest we stop somewhere to eat!:scared1:

Oh, I love all that! Do you have a recipe for the dumplings? I tried to make my Mom's recipe once and they fell apart. TIA!

Alexis has been rather needy this week. The wake & funeral is tomorrow. I will be taking her, instead of having her there the whole time, especially when the family first gets there. Say some prayers that she gets through it okay.

Dinners this week, a Whole Food blue cheese hamburger. We shared one burger. Last night was Tuscan Beans with Italian Sausage. This came out really good with turkey sweet italian sausage. I didn't have any bellpeppers, so I threw in anything that wasn't loaded with calories. So I ended up cannelini, kidney & garbanzo beans with portobella mushrooms, artichokes, onions & capers. I added white wine instead of red, really yummy & filling.

Lori Good to see you post. I was afraid Rick left you on the side of the road somewhere.

I ended up leaving work early today my head couldn't take the phone calls and the chatter. It is finally feeling better. I really dislike getting older I keep telling myself just a few more years of this and no more hormone headaches. I think I would welcome a migrane I can handle those better.

Tonight we had grilled chicken breast with a thai peanut sauce, rice and salad.
