Teppen Edo - Deluxe dining plan

We are going to Teppen Edo in Sept on free dining, we have upgraded to the deluxe dining. My question, I know you get an appetizer, entree and dessert on deluxe plan - how do they do that at Teppen edo? It looks like the menu (from allears.net) has more selections than just app/entree/dessert..... do you pick soup or salad as appetizer? if I get sushi do I pay OOP? Any help understanding would be appreciated. Thanks!

You can choose any one item off the appetizers list. Sushi is out of pocket. You do get the stir fried veggies, noodles and rice with the entree.
