Teppan Edo & Tokyo Dining-DDP question

Can someone explain to me how the DDP works with these two restaurants? When I look at the menus, I'm confused as to exactly what is included, as neither are a traditional menu broken down into apps/entrees/desserts.
 
We ate at Teppan Edo last time we were there in 2014 and used the DDP. We enjoyed our experience. I can't remember what the appetizers were or how many choices we had. We may have each gotten soup and salad before the main Hibachi dinner(?) For dessert, I know there were a few choices and most of us had the green tea ice cream. I remember this distinctly because I really enjoyed it :-)
 
The way I read their menus (we are going in 8 days and plan to use DDP for Teppan Edo) is that you get your choice of entree (steak & shrimp, etc) and you get the soup/salad only because that is part of the 'entree meal' for their location. Otherwise, you wouldn't get it as part of the DDP.

Then for dessert you could choose to get the ice cream or other dessert they offer (which is limited at their location).

Unlike many Hibachi restaurants in the "real world" soup & salad are not included as part of the meal at Teppan Edo. If you order one, or another appetizer it is extra OOP. I don't know about Tokoyo Dining
 

All the adult entrees include the following:

garden salad, vegetables with udon noodles and sukiyaki beef rice.

I must have ordered miso soup separately last year when we were there. You are right that a Benihana does include soup, salad and the entree as the 'meal'.
 
Thank you! In all the many times we've been to WDW, we've never eaten at either of these two restaurants, & I don't know why, lol.
