Tell me about Tokyo Dining on DDP

DH loves sushi so we're all about trying Tokyo Dining for our next trip. But I've read on here vague descriptions about what we can get on the DDP. I understand from what I've read that you can get a platter with sushi, but is it just a generic california roll kind of thing, or can we pick and choose?

If we're going for the sushi would it be better to pay OOP so we can get what we want or is there a way to work the DDP? Or is there a better restaurant option?

I'm curious about this myself! I think what we're going to do is pay OOP and that way I can make room for a signature meal somewhere, but I'd love to hear from someone who's used the DDP here since the menu change.
