I didn't forget the recipe I promised you...here it is. Very Easy, I make it the night before and then heat up the next day.
It says it serves 4 -6.
12 x-large eggs
1/2 cup milk
1 lb deli ham, dice (I get a chunk at the deli and dice it myself, I also use the low sodium ham)
1/2 shredded mozzarella cheese
2 scallions, thinley sliced (I can't always find scallions so I will finely chop an onion)
1 small red (or green which ever you prefer) bell pepper, finely chopped
Preheat oven to 450 degrees.
Coat an 8inch square baking dish with non-stick coomking spray.
In bowl whisk the eggs and milk until well combined.
Add the remaining ingredients; mix well.
Pour into baking dish and bake for 45 - 55 minutes, or until firm in the center.
*If cooking and serving the same day allow to sit for 5 minutes, then cut and serve.
*If cooking the night before, cut slices and microwave until desired temp (usually 1 minute to 1 minute 15 seconds depending on the size of your microwave!)

This is something I make with it...
Holiday Sausage Roll Ups (these really can't be baked ahead, but the filling can be mixed an refrigerated overnight)
1 package (16 ounces) spicy pork sausage (Like Jimmy Dean, etc)
1/2 medium red bell bepper diced
4 scallions, thinly sliced (If I can't find scallions I skipp this part)
2 packages (8 oz) crescent rolls
Preheat oven 400 degrees
In bowl combine sausage (minced), red pepper, amd scallions.
Unroll one package of crescent rolls and press the seams together to form one large rectangle. Repeat with the 2nd package of crescent rolls.
Spread 1/2 the sausage mixture evenly over each rectangle. Starting from the narrow end roll-up jelly roll style. Cut wach roll into 8 equalslices and place on their sides on a baking sheet (I cover the baking sheet with aluminum foil) to a christmas tree.

Bake for 25 -2 30 minutes, or until the sausage is no longer pink and the crust is golden. Serve Warm!
