I think Beth has it exactly!
I did the Cognac and the Whiskey tasting. Both were in the evening (like 10PM) in Meridian, and both were sparsely attended 4-6 people. They definitely didn't close the bar to other customers, we just went over to a section of tables and did the class. Also, for these, they did let non-participants observe. For the larger classes (like Mixology) or the smaller bars (like Oh La La), it makes sense that they do it differently.
This has also been my experience. I've done a couple smaller tastings in Meridian in the evening and DW was welcome to "observe".
