Summer meal ideas... Please list yours.

Also from Western Mass. Where most of us have no air-conditioning and it sometimes gets super hot and humid (like all of last summer and fall...). Summer cooking is all 'cheat' cooking for me, plus trying to use up all the farm share veggies-
-buy a rotisserie, shred it and in taco seasonings - good for nachos, tacos and burritos as well as taco salad
-buy precooked pasta (...I know) microwave and toss in veggies and pesto (TJs kale and cashew pesto!)
-buy pre-cooked chicken breasts chop onto a big salad ( or hard boiled eggs)

We’ve had several really hot weekends up in Wisconsin already this summer!

Some of our summer favorites: chef’s salad. (Ps, this one is never budget friendly, because the of getting 4 different kinds of 1/4 pound of deli meats, as well as the produce needed that we will use up, plus the little extras from the salad bar that we do not like to buy in bulk. But on a hot summer day, this is a great meal.

We also like a tuna-macaroni salad.

There are many recipes on Pinterest for a cold chicken salad that has apples, walnuts and grapes.

And, while this involves cooking using a wok, we like to make chicken stir-fries throughout the summer, especially when the farmers market starts to get a good selection of veggies in!
