Sulfite allergy

Does anyone have any knowledge of whether or not sulfites are used on the produce in the buffets? I believe some rule has been made about that, but I had an unpleasant surprise one time when I was in Las Vegas and they used sulfites everywhere.
I did have the allergy added to my ADR's, and will ask my typical questions (nothing with wine/coconut milk/shrimp - biggest culprits), but I don't want a surprise at a salad bar! Thanks :)
 
Call the dining reservation line and ask to speak to someone about special dietary needs. They will email you a form on which to enter all of your dining reservations and allergy information - return it to them, and they will forward it to every restaurant at which you have a reservation. When you check in at a restaurant, your ticket will say ALLERGY in big red letters, and your server will know to send the chef over.

Disney takes it very seriously! I have a friend who cannot have sugar, and she's been to Disney 3 times with no issues. I had different experiences at different places (I was avoiding gluten and soy at the time, this time I have to avoid dairy as well); two chefs walked me through buffers, but one said "you can have this, you can't have that, you can have this, you can't have that", while the other explained what things were made with and offered to make it fresh for me - Boma was my favorite meal because she completely catered to me! Even in quick-serve locations, when I asked for a gluten-free roll and tried to assure them it wasn't celiac or a true allergy, they insisted on following protocol and calling the allergy consultant, who reviewed my order in excruciating detail and then made it themself in a dedicated area.
