Try Jetty Park Campground--Cape Canaveral (Port Canaveral)-We usually stop there for a few days before or after our DisneyWorld summer trips. Lot's to do--beach swimming, fishing (surf) or off their lighted fishing pier (open 24 hours). You can also frequently see sea turtles, dolphin (or porpoise--not sure which), manatees), watch the cruise ships sail out past the campground from port canaveral--Disney is one of the lines which Sail from here--there is a naval base and the naval ships sometimes sail out, we have seen submarines and watched a couple of space launches (shuttle and military/commercial payloads) from the beach. We've watched as the rocket fuel boosters (I think that is what they are called) are brought back in after shuttle launches. With a decent pair of binoculars, you can see the space vehicles on the launch pads. There are a couple of casino cruises which are nearby as well. One of them sends a free shuttle to the campground if that is something you would be interested in. We usually plan for 3 nights but always end up extending. There are sites with complete hook-ups, partial hook-ups and no hook-ups. You would be within an hour or so of Disney on the east coast.
