I'm a former CM, and I can assure you that strollers and ALL hard surfaces (handrails, ride vehicles, etc) are thoroughly cleaned with industrial-strength cleansers every morning before opening and every night after closing. Handrails and such are also spot-cleaned throughout the day as time allows.
That being said, there are of course thousands of hands touching railings and ride vehicles between cleanings, so it only makes sense to be cautious. No worries on the strollers, though, as of the time that you rent one. Like others have mentioned, there is always the possibility of squirrels, birds or other people touching the stroller while it's parked.
Do what makes sense for you family, but try to not obsess too much. A lot of studies have shown that over-sanitizing your kids' environment makes them more susceptible to illness, because they aren't exposed to the normal germs of childhood. Just my thought!
