Staying at two hotels

My husband and I are going to DL in mid-May for our 30th anniversary. This is a once-in-a-lifetime trip for us. We want to stay in the DL and PP hotels during this trip. Will they transfer your luggage between hotels if requested? This is done at WDW and has always worked well for us.

What are the crowds like during mid-May? We are planning to be there the week of May 11.
