Staying at BWV, buying DDP

Can we pay for the dining plan in advance? We are checking in Jan 13, 07??? Also we are flying in 1/13 at 10am and leaving 1/20 at 7:20pm, would you buy 7 or 8 day tickets? If we buy 7 days, what can we do on our last day until our flight leaves?

If it were I, I would definitely NOT buy 8 day tickets (or at least not plan on using 8 days). That will take some of the stress off if your flight is late getting in, you are tired on one or more of the days, or you have a bad weather day. Indeed, if I were making the decision, I would plan on spending no more than 6 days in the parks to help slow the pace just enough to catch my wind. However, given the pricing scheme Disney is now using for their tickets, I would probably try to BUY as many days as I could and buy the nonexpiration feature to use those days at a future time. The marginal cost of days past about the 5th day is so low that it pays to buy extra days up front.

Pay for dining plan on checkin only. Flight leaves at 7.20 pm even if you leave for the airport 3 hours early which is 4.20 pm you can spent almost a whole day in a park.

I'd purchase the extra day. It will literally only be an extra couple of bucks, but gives you complete freedom to take in a park that last day, or not. Your choice depending on how you feel.

If you want to get the dining plan, MS needs to be notified at least three days ahead of time. You can't just show up at the resort and add it. So, make sure you have it on your reservation. But, you will pay for it when you check in. You can't pay for it ahead of time.
