Is this your first ever Trip Report? Oooh, it does take some getting used to. Having written many here's my advice. Now admittedly I don't get a ton of readers - except my ABD BSM one had a LOT - so you can take this as you will.
I don't take notes during the trip generally. What I do is I take lots and lots of pictures. The weirdest thing is getting used to taking pictures of things you wouldn't normally do. The outsides of rides, your food. Things you buy.
Then, in the evening, and not usually every evening, I just note down the order of what we did - just sort of in list form. Between the pictures and the list, it's usually enough to allow me to remember what we did as I'm writing the report, which can often take 6 months or longer to complete (a lot of people I notice never finish theirs.)
As far as back issue - I feel your pain. My back is pretty good at the moment, which is rare. I also have heel spur issues which flare up at their worst at WDW, usually leaving me limping badly by the end of the day. I would recommend heavy doses of Vitamin I (Ibuprofen) but that's a no-no mixed with heavy doses of alcohol.
I'm impressed you went through the list of foods to decide which ones you want to try. I am a super OCD planner (as you can probably tell if you read my TR) but I can't be bothered with selecting menu items. Our plan for F&W is to go up to each booth and say "what do we want to try", with our only goal of trying something at each booth before the three days of the trip are up.
