Spring Pantry Challenge

this evenings dinner: squash with onions, spinach, Baked chicken thighs with barbecue sauce and a few cookies
 
Thankfully I did my big shopping last Friday before the first snow storm hit, we were well stocked to be snowed in. I am just praying that we do not get the foot that is predicted on top of the two feet from the weekend.

Friday - kraut and Kielbasa
Saturday - cleaned up leftovers
Sunday - Hot Sausage and mini pizzas (for the kids)
Monday - huge batch of Chili (dinner plus two containers for the freezer)
Today - Pretzel Chicken (can't wait to try this recipe)
Wednesday - Thursday not sure yet as I need to know if DH's work trip is being cancelled due to storm #2 to hit us this week.

Friday and Saturday nights we will be at my parents.
I need to decide what to make for Sunday.... something special for Vday.
 
Yesterday was leftovers. Tonight is going to be turkey tenderloins from the freezer with mashed potaoes and corn.
 
LOVED the Pretzel Chicken, DD2 who hates to eat dinner even asked for 2nds was not in love with the cheese sauce, but will definitely make the chicken again.

I used chicken tenders and baked it in the oven and they were perfect. Turned them halfway through cooking.

I started off cleaning out the freezer. This helped because I was able to organize and see exactly what I had in there. So here is the menu for this week:

Tuesday: Spaghetti, Broccoli and French Bread
Wednesday: Leftover KFC (Superbowl), Mexican Rice, steamed green beans
Thursday: Turkey Burgers, Fries and Salad
Friday: Taquitos, leftover Mexican Rice, Refried Beans and corn
Saturday: lunch - corn dogs, chips, steamed veggies
Dinner - Chicken Enchiladas, beans and rice
Sunday: Pasta bake, broccoli and steamed broccoli

This menu will help me clear out the freezer. This weekend I will look throught the pantry and see what meals I can make from the stash I have.

I'm looking at this challenge not so much to save $ money, but to be resourceful with what I have and not be wasteful. :goodvibes
 
Well last night the turkey had not defrosted in time so we switched it up and made homemade pizza instead and this morning we cooked up the tenderloins to have friday night.

Tonight is yummy crocpot potato and double corn chowder. Which will double as lunch tomorrow as well. Then tomorrow night we will be going out for my birthday if the weather is okay.

Still have the fridge and freezer to go through. In addition to everything I have listed, I also have the stuff I keep on the counter all the time, which is a bottle of white wine for cooking, spices, rice, flour, sugar, a box of cereal, bread crumbs, oats, cornmeal, oil, and liquors.

with all the baking items you could do the disney give a day bake sale people r talking about and it wouldn't even make a dent in the wallet. Hrm I need to look in my cupboard and see what I have lol

I need to run to Aldi's tonight for some milk, eggs and veggies. Might get the lobster tails for Valentine's Day.

Tonight we are having smoked sausage, german potatoe salad and brocoli.

I need to plan the rest of the weekend and next week.

Okay, I was looking for something like this. I am going to attempt to eat through the mass amounts of food I have purchased... I thought there was a thread floating around and it might help keep me motivated to do this!!

Monday was leftovers... we had some Pizza Hut & Logan's Roadhouse leftovers in the fridge from the weekend.

Tuesday I made some chicken bake recipe I found online. It was a can of cr. of chicken soup mixed with sour cream and used to coat a bag of frozen veggies. then I added chunks of chicken and topped it with Stove Top stuffing. I also made mashed potatoes and DH had some sliced vegetable bread. All from our pantry.

Wednesday I made A1/Sour cream marinated NY Strip Steaks. Served it with lima beans, sliced tomatoes and one of those Pasta-Roni side dishes. All stuff we had on hand.

Yesterday I made beef stew. I had some cubes of beef in the freezer which I browned and tossed in the crockpot. Added a thing of V8, a bag of frozen carrots, potatoes and a bag of frozen vegetable soup mix. Also, made sour cream rolls from scratch. All stuff we had.
(the sour cream was close to expiration, which is what me realize that I have a ton of food and I still go grocery shopping!)

Tonight is chicken pesto. Parsley garlic fettuccine, mix it with chunks of chicken, cherry tomatoes and cover in a pesto sauce. I bought the tomatoes yesterday but had everything else. Will probably serve with a regular french loaf or garlic bread (sadly, I have both on hand)... also, will probably steam DH some broccoli to have with his.


I hope you guys don't mind me joining in. Like I said, I think this will help me stay on track with eating through what we have. :)
 
Last night we used up the last of the chicken breast patties on the last of hamburger buns. I also threw together a salad using the last 1/2 of a bagged salad I got on sale for .99! Doing good!!

Tonight I have to eat out for a business meeting. It's just dh and youngest dd. They are going to use up the last of some whole wheat tortillas and the last of a jar of pizza sauce to make homemade tortilla pizza's. We have various toppings around so they can do whatever they are in the mood for. There is enough baby carrots left for a side.

Popcorn and candy tonight while we watch the Olympics!! Yay!
 
Yesterday was fun we went to a british pub for my birthday and it was so good.

So back on track today we had bagels for breakfast. Lunch was leftover soup with grilled cheese sammies. Dinner tonight will be the turkey tenderloin with mashed potates and a side of corn.
 
Tonight is planned to be Pigs in a Blanket. I have tons and tons of little cocktail dogs that need to be gone! What was I thinking? Not sure what else - maybe a box a jalapeno poppers and we will just do appetizers while watching the Olympic Opening Ceremonies.

Tomorrow, I have some sweet and sour sauce to use up. So, I might try to do sweet and sour chicken, rice and mini egg rools.

Sunday I am taking some frozen mini eclairs to my nephew's birthday party. So, those will be out of the freezer freeing up some space!

I have got to get a plan for next week!

Dinner tonight was very good. We had a small get toghether with the family for my birthday and had Cincinnati Chili over spaghetti with salad and cornbread.

The rest of the week looks like this

Over the weekend I made some progress - sweet and sour sauce - gone; cream cheese poppers - gone; mini egg rolls - gone;;and made a dent in the cocktail dogs.

Tongith is Valentine's dinner since we were stuffed from nephews birthday party. So, lobster tails, asparagus, and some bread.

Tomoorw will be bbq chicken, squash, and roasted potatoes.

I gotta see how much turkey is left and if I need to make something with it...bummer. I think I will unthaw something though for Friday. I would like to do some more baking this weekend too. I have another can of the pumpkin to use up, the last ones went over well. Think I'll try the Disney pumpkin muffin recipe this time though since I have to use up some chocolate chips too ;-)

I did go to the grocery store today, but I only bought things I needed for lunch (fruit, cheese, bread) or things to complete other meals. I did get a bag of Popcorn chicken on sale for $3.99 and I had a $1 coupon. But I also got FREE potatoe Salad from a rain check. Not too bad for me.:woohoo:
 
Yesterday we had the french dip sandwiches made from a roast you do in the crockpot and it was yummy. We had homemade garlic, parmesean oven fries with it. It is a recipe to keep around.

Tonight I am going to make some crocpot chicken and dumplings. I have been fighting a sinus/cold thingy for a few days and just want some food comfort food and we have everything already in the house.
 
We are staying on track especially well due to the snow storms and not wanting to go out.

Yesterday we went to Applebee's for lunch and finished leftovers from Sunday for dinner
Today I threw beef cubes and cream of chicken soup in the crockpot for beef stroganoff, it is a new recipe so I am not sure how it will turn out.


I still have 13 meals on our montly list and we are right on track to make it to our next big shopping trip the first weekend in March and the pantry looks great, we have very little excess of things we don't use much of.
 
Saturday we went out to eat Mexican.
Sunday we ordered a pizza.
Monday we had Wendy's for lunch and were too stuffed for dinner.
Tonight, I'm going to scramble eggs and mix with the leftover stuff from the Mexican restaurant. Going to make homemade tortilla chips.
 
I am slightly behind the 8ball this week. We went away on Sunday and Monday for DD to visit a college and DS to swim at the hotel. I did not have a grocery bill but did spend $98.00 on food eating out for the 2 days. The kids are home this week so we are definetely eating out of the cupboards/freezer.

My guilt confession: I spent 8.00 on banana's and fastnachts today. The bananas for DH's lunches and the fastnachts were for my bday cake. I don't feel too guilty since I cooked dinner on my birthday and cooked from the cupboard...

Tuesday: Stuffed Chicken w/scalloped potatoes (freezer and boxed potatoes)
Wednesday: Soup and or Frozen meals. DS has a 5pm soccer game...
Thursday: Meatloaf, mashed potatoes, veggie, and applesauce
Friday: Chicken, cottage cheese w/pears, and rice

Saturday: as always whatever the children's day dictates.

Hope everyone is doing well. I am awaiting my tax money and then I will be doing a major, major stockup. I still have a lot here, but I would like to have a 4 month cushion on food. Just in case, you never know.
