Arriving early on a Monday and will have the dining plan at POP. Moving to SSR on Thursday, also with a dining plan. Can we eat breakfast from the POP plan on Thursday, and then later meals on Thursday from the SSR plan, or is it better to use all the credits by Wednesday night? TIA

You must use all of your credits from the Pop reservation by midnight Thursday, so you can use them all day on Thursday if you have any left. I believe you have to use up all the credits from Pop before you can start using the ones from SSR.

And be careful how you plan where you eat. If you're thinking of doing a signature on your move day and use credits from BOTH reservations to pay for it, you won't be able to do that.
