Spinning off from the ground beef recipe thread.

What do you make with chicken breast? Our dinner menu has gotten into a rut lately looking for new ideas or things I may have forgotten about.
 
Yes, because the underwire could stab said chicken breast.

I grill some chicken breast on the grill for fajitas.
OR thrown them in the crockpot with enchilada sauce for chicken enchiladas, they melt in your mouth when they are put together.
You can also make chicken pot pie with chicken breast too.
 

Just this week alone I am using boneless skinless chicken breasts to make Tomato Basil Chicken and Pasta, BBQ Chicken Chopped Salad, and Chicken Nachos. There are SO many things you can do with them.
 
Some things I make with chicken:
Soft tacos
Pot pie
Fettucini Alfredo
Grilled marinated or seasoned chicken
Shake 'n Bake
Shredded BBQ sandwiches
Chicken and dumplings
 
With bone-in breasts I make Sunshine Chicken. Slice up half a vidalia onion and saute it for a bit in some olive oil. Sprinkle some garlic powder on the chicken skin and put the breasts skin side down in the pan to brown a bit. Flip them right side up, add about 1/2 to 3/4 cup of orange juice, put the lid on the pan and simmer on medium until the breasts are done... maybe 15 mins, depending on the size of the breasts (check them by making a little cut into the flesh). Don't let the pan go dry; add more juice or some chicken broth during the simmering process. Once the breasts are done, take them out of the pan and cover to keep warm; boil down the juices in the pan until they thicken slightly. Yum! (I never use salt in cooking but you might want to add some along the way). This can become Chinese Chicken by mixing some hoisin sauce into the OJ, and adding a dash of soy sauce (instead of salt!).

With boneless skinless breasts, we make Chicken PPP. Grill or saute the breasts, then cut into bite sized pieces. Cook some pasta (I use butterflies or oriochette..sp, I know, it's late), drain and add a touch of olive oil, freshly-ground pepper, and freshly-ground salt (if you use salt). While pasta is boiling, boil some frozen petite peas. Mix chicken, pasta, and peas. Add shredded parmesan. Voila- Chicken Pasta, Peas, Parmesan... chicken PPP!

Cook boneless ckn till done.
Mix a block of cream cheese with 2 tblsp dried onion and a little garlic powder. Melt 2 ot 3 tblsp of butter and add to cream cheese. Add a splash of milk if needed to cream the mixture. Mix in diced ckn. Make rectangles out of refrigerated in the can crescent rolls. Put 2 or 3 tblsp of ckn / cream cheese mixture in center of crescents. Pull the corners together. Brush with melted butter. Roll in crushed croutons. Bake at 350 for 20 /25 minutes till golden brown.

Serve with wild rice and broccoli or salad.

I make just about everything, but I did come across something new the other night. I cut the chicken up into chunks and browned them for a bit. Then, I added a whole jar of Pace Thick and Chunky Salsa and let them finish cooking. Before I served it, I melted Velveeta on top and served it over rice. It was yummy and super easy.
 
My favorite is to make a green salad with chicken breast, berries, grated asiago cheese, slivered almonds and a lite raspberry vinaigrette.

I've got a new recipe I'm trying this week for another salad that has arugula and cous cous with shredded chicken.

I also like chicken piccata over angel hair pasta.

I only eat red meat once a month so I eat a lot of chicken !!
 
I'm not a big fan of chicken, but will have it once in awhile. Most recently, I made the most delicious chicken enchiladas ever. My entire fam enjoyed it- even the kids. I need to do that again sometime. I was showing my husband a photo of the casserole yesterday and he claims he doesn't remember me making it. The kids probably polished it off before he got hm from wk.
 
Found a recipe last week for Mexican chicken salad and I made it for DW for her lunch. She really liked it.

2 lbs. boneless, skinless chicken breast
2 Avocados
1/2 c. minced onion
Lime juice, to taste
1/4 cup chopped cilantro

Poach the chicken breast and then shred. Combine with remaining ingredients.

My favorite grilled chicken breast is Buttermilk Marinaded Buffalo Chicken Breasts

2 lbs. boneless, skinless chicken breast, pounded thin
2 cups buttermilk
Salt & pepper to taste
Frank's Wing Sauce

Place the chicken breasts and buttermilk in a ziplock baggie. Press out the air and allow to sit overnight.

Remove the breasts, salt/pepper, then grill until done (about 2-3 minutes/side over medium heat). Transfer to a bowl, add the wing sauce and stir until breasts are coated. Serve with a side of ranch or blue cheese dressing.

Chicken Caesar Salad.
Chicken Pot Pie.
Plain old breaded chicken breast.
Mexican Lasagna.

Kelly's Overnight Chicken
 
I make chicken croissants---Cook boneless, skinless chicken breasts(around 1 lb or so) and then chop up chicken into small pieces. Then add a block of softened cream cheese and mix together, salt to taste. Then use croissants to make squares(combine two triangles). Press them out some and seal the creases. Then put a big spoonful of the mixture in each croissant square and fold the corners in to seal up the "pocket". Bake at 350 degrees until they are browned. They are YUMMY!
