Hi Everyone:
We are growing spaghetti squash for the first time and we have picked several. However, my question is if they are still a light green do we need to let them sit and ripen up to a yellow color or can we cook them right away. They are definitely full size. Thanks everyone.
 
The more yellow the riper they are. I've found when they are still a bit green they are bitter. I love spaghetti squash steamed and served with stewed zucchini.

Thanks. That's what I thought, but being the first time we've grown them, I just wasn't sure. I'll let them ripen some more.
 
I always let them ripen on the vine. I don't know how long they'll take to ripen in your counter. :confused3 The years we grew them happened to be "wet" years at the end of the season, so I never had to pick them before frost...they'd rot instead.

We were unadventurous. LOL I just steamed them & served them instead of pasta...as spaghetti. We stopped buying them when the kids came along as they couldn't be foold - even when mixing them half & half with the "real" stuff. :rotfl2: I'll admit it didn't break my heart as I never loved them anyway. LOL
