Hi Everyone:
We are growing spaghetti squash for the first time and we have picked several. However, my question is if they are still a light green do we need to let them sit and ripen up to a yellow color or can we cook them right away. They are definitely full size. Thanks everyone.

The years we grew them happened to be "wet" years at the end of the season, so I never had to pick them before frost...they'd rot instead.
I'll admit it didn't break my heart as I never loved them anyway. LOL
