Some Questions for Animal Kingdom and Epcot

I'm going to WDW on the week after Thanksgiving. My Fastpass booking window will open next week so I'm trying to make some plans to tour the parks.

Animal Kingdom
If I want to see Finding Nemo 1pm show and Lion King 5pm show, what time should I be at each theater?
Will Single Rider line at Expedition Everest save me a lot of time? My plan is to ride around 10am. By the way, where is the entrance to Single Rider line? I read that it's not located with standby or FP entrances.

Epcot
I have 2 Epcot days, and I'm going to book Soarin' FP+ for Epcot day 1 and FEA FP+ for Epcot day 2.
My questions are for day 2. Is it possible to RD Soarin', then ride Test Track Single Rider by 10am?
Does the Test Track Single Rider line open all day?

Animal Kingdom:
The single rider line for EE is located to the right of the standby/FP entrance and just to the left of the gift shop when facing the attraction. I rarely have a wait doing single rider, maybe 1-2 trains.

Epcot:
As far as I know, the TT single rider line is open for most regular hours. The line for single rider can be longish, 10-20 minutes at times, but usually this is 1/2 the time of the standby line. It should not be a problem to do single rider at any time of the day.
 
why not on your first day at EPCOT do TT right at rope drop then if the you would be sure to be able to do it.
 
Animal Kingdom: If you're not going to use FP+ for the shows, which you really don't need to, I would suggest showing up about 20-30 minutes early. Sometimes you can get into the shows last minute, but you may not have great seats (though I don't know there are truly "bad" seats in either theater). If you're going to ride EE by 10am, single rider will save a little time but not as much as it would later in the day. At 10am, the line is relatively short compared to 11am-4pm.

Epcot: Yes, you could rope drop Soarin' then single ride TT by 10am.
 

keep in mind they do not open single rider line until the line gets long not sure how long but I do know the line was at 20 minutes and they had it closed

I read mixed review for Rock 'n Rollercoaster Single Rider so I'm interested to know how the Single Rider lines in other attractions are like. Saving 20 minutes on TT Single Rider line sounds good to me.

I plan to Meet Joy and Sadness for RD Epcot day 1.
Initially I didn't plan to do Soarin' on day 2. But Sum of All Thrills is closed and I've decided to skip Mission: Space Orange Team, so I thought I can do Soarin' again on day 2 if I move things around a little bit.

I have some free times before both shows so it'll be easy for me to be at the theaters 30 minutes before they start.
That's what I thought too about EE Single rider at 10am. I'm going solo so I'll have to ride with strangers anyway, but if single rider line can save me some time, that's definitely a bonus.

I don't mind waiting for 20 minutes in standby line, but it's good to know that Single Rider line is not always open.
