Some ideas please

This May my husband and I are doing an adults only trip. It will be our first time in Disney. Does anyone have any suggestions for some "adult" things we can do during a free day?

We have already book:

Dinner at Victoria and Alberts Chefs Table
Wild Africa Trek
A private fireworks cruise
Day of trills tour

Anyone have any suggestions?

Note: "adult" doesn't have to be 18 and older only. The next time we will be in Disney we will have two five year olds with us. We are taking this trip in part to do some of the things the girls will be to young to do.
 
Keys To the Kingdom Tour, Jellyrolls at Boardwalk, Undiscovered Future World Tour, Walt Disney Marceline to Magic Kingdom Tour
 
I REALLY hope you're planning to eat / drink your way around Epcot!! Ice cream in a grilled brioche in France / Orange Gran Marnier slush there / grapefruit beer and a pretzel in Germany... Schoolbread in Norway... and tons of others. It was me and 6yo son so I got done as much as I could :)
 
We are also doing an adults only trip in May! My suggestion would be just to enjoy a day off. You have quite a few extra fun things planned already. Make sure to just take time to enjoy each other and the parks at a non-kid pace.

As for us, we are planning to eat and drink our way around the Flower & Garden Festival food booths, Jellyrolls one night, no character meals but instead dinners at "big kid restaurants" (we love character meals with the kids and have done them all at least twice!) Trader Sam's at Poly, maybe Yeehaw Bob at Port Orleans and a carriage ride.
 

Spa treatment

These are attractions that DH & I like, but bore DS to tears. YMMV.
One Man's Dream (if anything is left)
Hall of Presidents
Living with the Land
Movies in World Showcase at Epcot
Sum of All Thrills (Your kids may be too short for a while. DS loves it though.)
 
Take a Tour.
Eat at one of the finer restaurants on property, or perhaps at World Showcase.
Visit one of the spas.

Monorail crawl or Boardwalk crawl :)

Take the monorail & stop at each resort at the lounge. Grab a drink to go & tour the lobby & grounds or enjoy it at the bar & relax. You can include WL & FW as well if you either begin with them by taking a boat there or end with them. If I'm not mistaken, there is a small boat that will take you from CR to WL.

At the Boardwalk, start out at Belle Vue Lounge & stop in at the bars inside the restaurants along the boardwalk.

Of course, there is always the beverage/food tour of World Showcase if you want to be inside a park instead.

Take the Wild Africa Tour at Animal Kingdom (and report back with your review since I've wanted to do this one for a while now!).

If you're into gardening or plants, take the Behind the Seeds Tour that takes you on a guided tour behind the scenes of The Land attraction. It's one of the least expensive tours you can do & it's pretty short at something like an hour I believe.
 
does it have to be on Disney property?

We were hopping to stay in the "Disney bubble" during this trip. My husband doesn't want to do any driving but if there is something special outside of Disney we may be able to use a car service.
