I like Guerrero White Corn Tortillas

Those are my favorite corn tortillas.

When I'm desperate for a taco and don't have alot of time, I make "fake tacos" just like the video. Still yummy.

I generally go for beef, but traditional Mexican is almost always pork. When I was living in AZ we had an actual Mexican food truck that came up from the border every day to serve the hungry soldiers at Fort Huachuca. The tacos were pork with shredded cabbage instead of lettuce. Also used a white Mexican cheese and just a little bit.

Beef or chicken is my first choice. But I'm leery of odd bits in either (gristle, bone, or other chopped up things that don't belong there).
