We have enough left for another dinner. But just two of us this year. We had a 2 pound turkey breast roast, dressing, sweet potatoes and rolls. Didn't do the garlic mashed potatoes this year, or the plain mashed potatoes for a friend who doesn't like garlic as she was not able to come. No cranberry sauce as my wife doesn't like it and I don't need the sugar. Only one pie, an apple, instead of two, apple and pumpkin. Didn't eat at 2 pm this year, ate at our normal dinner time of 6 pm, and did a 3 mile walk in the afternoon, so we ate more than usual.
 
Made a 19ish Lb turkey plus all the sides for 12 (our 4, their 8) and they took all the leftovers when they left. I didn’t realize it as I was putting dishes in the dishwasher. So no turkey sandwiches for us :/
That is SO rude. Sorry -- they should've asked at least.

It'd be worth it for me to buy a cheap turkey and roast it again, but if they took the sides as well, there's no need. SMDH.
 
I'm both creative and normal.

Today, brunch was creative. We took the leftover brunch shortcake biscuits and the leftover pumpkin apple topping and then warmed the turkey gravy, turkey, and pear cranberry sauce and made Thanksgiving biscuits and gravy today. It was a wow lunch with everyone trying for seconds (didn't have quite enough biscuits for everyone to do that, so cut some leftover pumpkin bread and that also worked).

My daughter, who made the baked goods and fruits, likes to keep sugar levels REALLY low, so this worked outstandingly well...

We'll have the leftovers as is for dinner...and then probably one more creative turkey meal tomorrow and then Thanksgiving soup Sunday...and then Monday is beef or Indian or fish (we're gonna do those as our next 3 dinners in some order)...
 

We have a lot of leftovers. Some will be eaten as is, and then there will be turkey sandwiches, turkey and rice, turkey and noodles, turkey stir fry, etc. I freeze any turkey that is left on Sunday so it won’t go bad before it’s eaten. The rest of the leftovers are usually eaten by then.
 
No leftovers, we did not host and I left my remaining sweet potatoes with the host (she seemed to really like them, which made me happy).

My MIL used to make turkey tetrazzini with leftover turkey, which now that I'm thinking about it, I'm getting a craving!
 
We do both, depends on our mood. We haven't done this in a few years but one year, my husband decided to roll the leftover stuffing into balls, dipped them in egg wash and bread crumbs and fried them! It was pretty good! He's usually not nearly as creative as I am when it comes to cooking, so I was pleasantly surprised! 😆 We did that w/ a real fryer that use oil, but now we have an airfryer and haven't tried making that again. Then one year, I put the leftover stuffing into our mini waffle maker, also turned out pretty good!

We had 13 family members present. My son (brought a turducken) & DIL never take leftovers & were heading to her sister's house later anyway. My daughter, grandson & I, who live here all kept enough sides for a plate later today or tomorrow & one of my grandsons & his GF took some desserts. My other daughter & 2 grands took a bit. We thought the other grandson would not be able to make it because of work & living a little farther out would not make it but he showed up while we were cleaning up & he actually took the rest of the leftovers back home for him & his two room mates. My daughter & I were so glad cause even with 2 refrigerators, there is never enough room to store all the leftovers.
 
Leaving on a cruise tomorrow, so purposefully avoided leftovers by doing T-Day at T-Rex. It's just the two of us with no nearby relatives since moving to FL, so we've been mostly going to some restaurant or another on Thanksgiving anyway.
 
We have a fair bit of leftovers here - today it was a "eat what leftovers you want & every man for himself" kinda day. Tomorrow I will make something entirely unrelated to Thanksgiving for dinner - I'm thinking perhaps a stew - for the guys since they'll be outside from sun up to sun down for opening day here in MD. Sunday we will finish up any leftovers and I'll freeze the rest of the ham.

Earlier today I cooked down the turkey carcass. Made a beautiful, beautiful stock over a few hours and then put it outside to cool off - and, well....dogs got it. My fault entirely. Every year I make soup from our thanksgiving turkey, but not this year!

I just had my microwaved plate of odds & ends and leftovers - one more evening of indulging in desserts and then I'm done!
 
I heat up [in a saucepan]:
mashed potatoes
cut-up turkey [white and dark meat]
gravy
stuffing
broccoli
corn
shredded mozzarella

...till the cheese just begins to melt. I pour it into a GF raw pie crust and add another raw pie crust to the top and bake it according to the pie crust directions - turkey pot pie!

....I always make too much [because I'd be embarrassed that I didn't have enough food for everyone.]. Last year was the first time in 39 years that I didn't host Thanksgiving because we celebrated at Olivia's [in OKW at WDW] and it was a bit strange.

This year, we made two turkeys; I cooked one 'traditionally' in the oven [18 lbs.] and my DS deep-fried one [11.5 lbs] on our back deck. My stuffed mushrooms always disappear quickly so I made TWO trays instead of one. I also made a large tray of Swedish meatballs, which went over big. Everyone took home a 'doggy bag' and we still have a lot of leftovers! This year, we also had three kinds of spuds - traditional mashed, sweet potato casserole, and potatoes au gratin.

We enjoyed different Polish sausages with our eggs this morning. We have a Polish brunch on holidays before a traditional meal!
 
We cooked most of the meal, but hosted at a friends house, splitting leftovers. We saved the bulk of the sides for tonight and made a ham. The initial leftover ham and most of the turkey were gone yesterday.

Turkey Soup from the carcass !! I’m just about done boiling that and then I’m gonna pop it in the freezer and have soup later!!

Turkey sandwiches are my favorite with a side of green bean casserole ❤️❤️😊
 
We've just about finished off our leftovers, in a variety of ways.

The carcass gets made into turkey soup, where some of the leftover dark meat gets added to the broth with carrots, celery, onions and noodles.

My boys and I usually make one or two leftover sandwiches - I prefer some slices of white meat, a spread of stuffing and cranberry sauce with some cheese toasted on both sides like a panini.

I use the leftover mashed potatoes and make gnocchi out of them. I did that last night - we had a LOT of leftover potatoes, so it was a large batch of pasta.

The remaining turkey meat gets chopped up, added to some cream of chicken soup and I fill crescent rolls with the mixture. Not the healthiest choice, but a staples of our post-thanksgiving weekend menu every year.
